LEMON & RASPBERRY MOUSSE WITH PISTACHIO & GINGER SHORTBREAD



Lemon & raspberry mousse with pistachio & ginger shortbread image

Impress dinner guests with this lemon and raspberry mousse. Served with pistachio and ginger shortbread, it's a great dessert for a dinner party

200ml double cream
1 lemon, zested
200g lemon curd
100ml thick Greek-style yogurt
200g frozen raspberries, defrosted
½ tbsp icing sugar
100g softened butter, plus extra for the tin
50g caster sugar, plus ½ tbsp
1 tsp ground ginger
25g crystalised ginger, finely chopped
25g pistachios, roughly chopped
175g plain flour

Steps:

  • Heat the oven to 160C/140C fan/gas 4. For the shortbread, butter a 20cm shallow cake or tart tin. Whisk the butter and sugar together until pale and well-combined, then fold in both gingers, the pistachios and a pinch of salt. Sift in the flour and knead to a soft dough in the bowl. Tip into the tin and press the mixture into the base in an even layer.
  • Bake for 25-30 mins until pale golden and dry-looking. Cut the shortbread into slices or wedges while hot, then leave to cool in the tin - it will firm up as it cools. Sprinkle with the ½ tbsp caster sugar.
  • To make the mousse, whip the double cream, lemon zest, lemon curd and yogurt in a bowl with an electric whisk until soft peaks form. Spoon into small serving glasses or ramekins and chill.
  • Mash half the raspberries with the icing sugar using a fork, or purée in a small blender along with any defrosting juices to make a coulis. Cover and chill until ready to serve.
  • To serve, spoon the coulis over the mousses, garnish with the remaining raspberries and serve with the shortbread wedges alongside.

Always elegant, chocolate mousse is not at all difficult to make, and it can be prepared up to two days in advance. A classic chocolate mousse gets its foamy consistency from stiffly beaten egg whites. Though many recipes call for also folding in whipped cream, this one does not, the better to savor the intense chocolate experience. It has a hint of orange liqueur, a splash of espresso and a garnish of crystallized ginger.

6 ounces/170 grams 70 percent dark chocolate (not unsweetened baking chocolate), in small chunks (about 1 cup)
1/2 cup/115 grams unsalted butter (1 stick)
2 tablespoons orange liqueur, such as Grand Marnier
1/4 cup/60 milliliters espresso
1/4 cup/50 grams granulated sugar
4 large eggs, whites and yolks separated, at room temperature
1/2 cup/120 milliliters whipping cream, for garnish
1 tablespoon granulated sugar (optional)
Drop of vanilla extract (optional)
1 1/2 ounces/40 grams crystallized ginger, chopped or slivered, for garnish (about 1/4 cup)

Steps:

  • Set a medium bowl over a saucepan of boiling water. (Don't let water touch the bottom of the bowl.) Reduce heat to a simmer. Add the chocolate, butter, orange liqueur and espresso. When chocolate is completely melted, about 10 minutes, remove from heat.
  • Add sugar and beat with a wire whisk until the sugar is dissolved and the mixture is slightly thickened and glossy, 1 to 2 minutes. Let the mixture cool slightly, then quickly whisk in the egg yolks to incorporate.
  • In a clean, dry medium bowl, beat egg whites to stiff peaks. With a rubber spatula, stir 1/3 of the beaten egg whites into chocolate mixture to lighten it.
  • Gently fold in the remaining whites to incorporate, taking care not to deflate. (It's OK if mixture looks a little streaky.)
  • Pour mixture into 4-ounce ramekins or other vessels, like teacups or wine glasses. For a large version, pour into an attractive bowl. Cover with plastic wrap and refrigerate for at least 2 hours or up to 2 days in advance.
  • To serve, whip the cream to soft peaks. (Add a tablespoon of sugar and a drop of vanilla extract, if you wish.) Top each serving with a dollop of whipped cream and some crystallized ginger.

2/3 cup sugar
2/3 cup fresh lemon juice (2 to 3 lemons)
1 teaspoon finely grated fresh ginger

Steps:

  • Whisk eggs, sugar, lemon juice, and ginger in a medium, heavy saucepan. Cook over medium-low heat, stirring, until smooth, about 4 minutes. Raise heat to medium; cook, stirring constantly, until mixture is thick enough to coat the back of a spoon, 7 to 9 minutes. Pour through a fine sieve into a bowl. Place plastic wrap directly on surface, and refrigerate until cold, about 30 minutes.

2 tablespoons finely minced ginger
10 tablespoons sugar
6 ounces dark semisweet chocolate, preferably imported
3 tablespoons butter
1/4 cup rum
6 egg whites
4 egg yolks
1/2 teaspoon vanilla
1 cup heavy cream

Steps:

  • Mix the ginger with one tablespoon of the sugar and set aside. Let stand for 30 minutes or longer.
  • Melt the chocolate in a saucepan with the butter and rum over very low heat. Blend thoroughly. Add the ginger mixture and stir.
  • Put the egg whites in a mixing bowl and reserve until ready to use. Place the yolks in another bowl and place over simmering water. Add six tablespoons of sugar and beat vigorously with a whisk until pale yellow. Add the vanilla and continue to whisk until well blended. Add this to the chocolate mixture and blend well.
  • Beat the egg whites with the remaining three tablespoons of sugar until stiff. Fold this mixture into the chocolate mixture. Beat the cream until stiff and fold this in. Scrape the mixture into a serving bowl and refrigerate. Chill.

Steps:

  • Make mousse:
  • Sprinkle gelatin over broth in a small saucepan and let stand 1 minute to soften, then cook over moderate heat, stirring, until dissolved, 1 to 2 minutes.
  • Force uni through a fine-mesh sieve into a bowl, scraping bottom of sieve occasionally.
  • Whisk in yolk, salt, lemon juice, and cayenne, then add broth mixture, whisking. Return to saucepan and cook over moderately low heat, stirring constantly, until it registers 170°F on thermometer, 2 to 3 minutes. (Do not let simmer or egg will curdle.) Transfer mixture to a bowl set in a larger bowl of ice and cold water. Let stand, stirring occasionally, until mixture is cold and the consistency of raw egg whites, about 10 minutes.

3-inch knob fresh ginger, peeled and chopped
1/2 teaspoon ground ginger
3/4 cup granulated sugar
3 large egg whites
8 tablespoons unsalted butter, melted and cooled to room temperature
1/2 cup all-purpose flour
1 teaspoon ground ginger
Nonstick cooking spray
Lemon Curd, recipe follows
1/2 cup chopped candied ginger, for garnish
1 cup lemon juice
4 tablespoons (1/2 stick) unsalted butter
4 eggs
2 egg yolks
1 cup sugar
1/4 teaspoon vanilla extract
1/8 teaspoon kosher salt

Steps:

  • For the mousse: Place the heavy cream, fresh ginger and ground ginger in a medium saucepan and bring to just under a boil. Turn off the heat and let the cream sit for about an hour. Remove from the heat and store in an airtight container in the refrigerator overnight or up to 4 days.
  • For the fortune cookie: In a medium bowl, whisk together the sugar and egg whites until combined. Whisk in the melted butter, then the flour and then the ginger (or extract or spice of your choice). Place the batter in an airtight container and refrigerate for at least 4 hours or overnight. (The batter will keep in the refrigerator for up to a week in an airtight container.)
  • Preheat the oven to 325 degrees F. Line a very flat, level baking sheet with a silicone baking mat or parchment paper, and liberally spray with nonstick cooking spray.
  • Spoon about a tablespoon of batter onto the baking sheet and, using the back of the spoon or an offset spatula, carefully spread the batter into a circle 6 to 7 inches in diameter. Your first few times you should probably stick to making these one at a time but once you get the hang of it, try making 2 to 3 at a time. Bake until the tuile is completely golden brown all over, 12 to 14 minutes.
  • As soon as the tuile is done, remove it from the oven and immediately start to slide a spatula underneath the tuile to loosen it from the sheet. The tuile will go through several stages before it gets to its final cooled and crispy state. Directly out of the oven it is too hot and delicate to handle. After about 10 seconds it firms up enough to hold its shape so you can handle it and shape it. It stays pliable for 10 to 15 more seconds; this is your window of opportunity to work with the cookie. Once you've worked the spatula under the whole cookie, pick it up and shape into a fortune cookie. If you wait too long the cookie starts to harden and cool and then your attempt to shape it will result in a shattered mess. You can place the cookie back into the oven for a few seconds to re-warm it into a pliable state. However, with each reheating, the cookie cools down even faster so I recommend only 2 re-heatings. Use a new cool baking sheet for each batch or cool your baking sheet under cool water before reusing. If you try to spoon the batter onto a hot sheet it will immediately start to melt and become un-spreadable. Continue with all of the batter until you have 8 to 10 cookies. Let cool for 30 minutes. Cookies hold for about a day in an airtight container.
  • To assemble: When you are ready to serve the mousse, strain the ginger-flavored heavy cream into a large mixing bowl. Whip the cream until it holds a peak. Fold in the Lemon Curd. Divide into serving bowls and top with candied ginger and a fortune cookie.
  • In a medium, nonreactive saucepan, combine the lemon juice and butter, place over medium-high heat and heat to just under a boil. In a medium, heatproof bowl, whisk the eggs and egg yolks until blended, then slowly whisk in the sugar until combined. Remove the lemon juice mixture from the heat and gradually whisk a little of it into the sugar/egg mixture. Continue whisking the hot liquid into the sugar/egg mixture, a little at a time, until all of it has been incorporated. When all of the hot liquid has been incorporated, return the contents of the bowl to the saucepan and return the saucepan to medium heat. Cook, stirring continuously with a wooden spoon and making sure to scrape the bottom of the pan frequently to prevent the eggs from scrambling, for 5 to 8 minutes, or until the mixture thickens and coats the spoon thickly. To test, draw your finger along the back of the spoon; the curd should hold the trail for a second or two before it fills. Remove the curd from the heat and strain it through a fine-mesh sieve into a bowl. Whisk in the vanilla and salt. You should have about 3 cups. Cover tightly and refrigerate for 1 to 2 hours, or until cold. (The curd can be made up to 5 days in advance and stored in an airtight container in the refrigerator.)

1 cup half-and-half
2 eggs, separated

2 tablespoons granulated sugar

Steps:

  • For the mousse: Place a medium bowl in the freezer for 10 minutes. Meanwhile, melt the chocolate in a medium microwave-safe bowl on low power for 3 minutes. Let cool slightly. Pour the cream into the chilled bowl and whip until it holds stiff peaks. Fold one-third of the cream into the chocolate. Fold half of the remaining cream into the chocolate and then fold in the rest of the cream. Refrigerate until ready to use.
  • For the cones: Preheat a pizzelle iron.
  • Whisk together the flour, sugar, butter, milk, ginger, baking powder, cinnamon, cloves, salt, eggs and vanilla extract until smooth. Coat the pizzelle iron with the cooking spray, then close to continue heating.

GINGER-PUMPKIN MOUSSE

1/2 cup orange juice
15-ounce can solid-pack pumpkin
2 teaspoons pumpkin pie spice

Steps:

  • Put about 1-inch of water in a saucepan and bring to a simmer over medium heat. Beat the egg yolks, sugar, rum, and orange juice in a heatproof bowl that can rest in the saucepan without touching the water (we like stainless steel ones) until foamy and light, about 30 seconds. Set the bowl over the water and whip with an electric mixer or whisk, moving in a circular motion around the bowl, until the eggs thicken, about 2 minutes.
  • Remove the bowl from the heat and, with the mixers, beat in the pumpkin, spice, and salt. Continue beating until the mixture is cooled. Stir in about 1/2 the ginger.
  • In another bowl, whip the cream until it forms stiff peaks. Fold the whipped cream into the pumpkin mixture. Divide the mousse among 8 bowls or wine glasses, scatter the remaining ginger over the top of each, and cover tightly with plastic wrap. Chill mousses for at least 2 hours and up to 24 hours.

A refreshing Indian dessert! Candied ginger is fresh ginger that's cooked in sugar syrup and crystallized. If you want to make your own Recipe #102933 but it is easily available at most grocery stores.

1/2 teaspoon gelatin
1 pinch saffron thread
1 cup mango puree (fresh or canned nectar)
1/2 teaspoon candied ginger, finely chopped
1/2 cup heavy whipping cream
mint leaf
fresh edible flower

Steps:

  • Soak the gelatin and saffron in 2-3 tablespoon of warm water for 10 minutes.
  • Mix the egg yolks, sugar, gelatin and saffron with 2 tablespoon of water in a bowl and place it over a double boiler and whisk continuously to make a thick custard.
  • When the mixture coats the back of a spoon it is ready remove from stove.
  • Cool slightly and fold in the mango puree and the candied ginger.
  • Beat the egg whites in a clean dry bowl till soft peaks form and set aside.

1 refrigerated pie crust, softened as directed on package
1 teaspoon sugar
1 can (15 ounces) pumpkin (not pumpkin pie mix)
1 jar (7 ounces) marshmallow creme
1/2 teaspoon pumpkin pie spice
1/4 cup finely chopped crystallized ginger
1 container (8 ounces) Cool Whip frozen whipped topping, thawed
8 purchased gingerbread men cookies

Steps:

  • Heat oven to 450°. Roll pie crust into 12-inch circle on lightly floured surface. Sprinkle with sugar; lightly roll sugar into crust. Place in 10 1/2-inch tart pan with removable bottom. Gently press in bottom and up side of pan; trim excess crust. Prick bottom and side with fork. Bake 7 to 9 minutes or until lightly browned. Cool completely, about 20 minutes.
  • Beat pumpkin, marshmallow creme and pumpkin pie spice in large bowl with spoon until smooth. Fold in ginger and 2 cups of the whipped topping. Spoon into crust. Refrigerate about 2 hours or until firm. Remove side of pan. Garnish tart with remaining whipped topping and cookies.

1 quart heavy cream
1 cup minced fresh ginger (6 ounces)
3/4 teaspoon ground ginger
1 1/2 cups fresh lemon juice (from about 10 lemons)
6 tablespoons unsalted butter, softened
6 large eggs
3 large egg yolks
1 1/2 cups sugar
3/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
3 tablespoons minced candied ginger

Steps:

  • In a medium saucepan, combine 3 3/4 cups of the heavy cream with the fresh and ground ginger and bring to a simmer. Cover and let cool, then refrigerate overnight. 2. Set a fine mesh sieve in a large bowl; set the bowl in a larger bowl of ice water. In a large saucepan, combine the lemon juice, butter and the remaining 1/4 cup of heavy cream; bring just to a simmer. In a medium bowl, whisk the whole eggs with the egg yolks and sugar until smooth. Gradually whisk in half of the hot lemon mixture; whisk the mixture into the saucepan. Cook the curd over moderate heat, stirring constantly with a wooden spoon, until thickened and an instant-read thermometer inserted in it registers 175°, about 5 minutes. Whisk in the salt and vanilla. Strain the lemon curd into the prepared bowl and let cool completely. Rinse and dry the strainer 3. Strain the ginger cream into another large bowl. Using an electric mixer, beat the ginger cream at high speed until firm. Fold the whipped ginger cream into the lemon curd. Spoon into glasses. 2 large egg whites, room temperature
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract
2 teaspoons cornstarch
1/2 cup sugar
1/4 cup chopped natural pistachios
Ginger-yogurt mousse:
1/3 cup sugar
1 2" piece peeled ginger, cut into 1/4" slices
1 vanilla bean, split lengthwise
1 cup low-fat plain yogurt
1 cup heavy cream
1 tablespoon chopped natural pistachios

Steps:

  • For pistachio meringue:
  • Position a rack in center of oven; preheat to 250°F. Line a baking sheet with parchment paper. Using an electric mixer, beat egg whites and cream of tartar in a large bowl until soft peaks form. Beat in vanilla. Gradually beat in cornstarch, then sugar, 1 tablespoon at a time; continue to beat until stiff peaks form. Fold in pistachios. Spread meringue on parchment paper in a 1/3" layer (meringue will not completely cover parchment). Bake meringue until crisp, about 55 minutes. Let cool, then break into small pieces. DO AHEAD: Can be made 1 day ahead. Store airtight.
  • For ginger-yogurt mousse:
  • Combine sugar, ginger, and 1/4 cup water in a small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a boil over medium heat, stirring until sugar dissolves. Remove saucepan from heat and let infuse for 30 minutes. Discard bean. Cover and chill ginger syrup.
  • In a small bowl, whisk together yogurt, cream, and ginger syrup just to blend. Place mixture in a whipped-cream canister. DO AHEAD: Can be made 4 hours ahead. Chill. Dispense into bowls according to manufacturer's instructions. (Alternatively, double ingredients and whip chilled cream until stiff peaks form, then whip in yogurt and syrup. Spoon the mixture into bowls.) Top with crumbled pistachio meringue. Garnish with pistachios.

PLUM AND GINGER MOUSSE



Plum and Ginger Mousse image

Stolen from Dan Lepard's Guardian cookery piece. It looks yummy, I haven't tried it though. Prep time looks long because it includes around 4 hours chill time before serving.

450 g ripe plums
50 ml water
250 ml milk
150 g caster sugar
2 eggs, separated
2 tablespoons cornflour
1 teaspoon vanilla extract
75 g preserved gingerroot, finely sliced and chopped
250 ml double cream

Steps:

  • Stone and roughly chop plums.
  • In a pan, place the chopped plums and water then slowly bring up to a simmer and cook for around 10 minutes. Let the mixture reduce by a third to a half.
  • Remove from the heat and set aside.
  • Whisk milk with 50 of the sugar, egg yolks, cornflour and vanilla. Tip into a fresh pan and bring to the boil - whisk continually.
  • Remove from the heat then stir in the cooled plum. Set aside until cold - can put in fridge.
  • Stir together egg whites and remaining sugar, then heat in a bowl over hot water until piping hot. Alternatively, heat in 3 short burst in the microwave on high setting, stirring every 10 seconds.
  • Beat the egg mixture with a whisk (electric or man power) until it becomes a thick glossy meringue.
  • Beat cream until thick.
  • Fold the plum mixture and chopped ginger through the meringue, then gently fold through the cream.
  • Divide between 6 containers (recipes suggests whiskey tumblers - you can use this as a size guide for choosing whichever pot you prefer) and chill for 4 hours before serving.
