Refreshing ginger limeade syrup that is sweet and spicy, and perfect for summer weather!

1.5 cups fresh lime juice (I use about 10 -12 limes, but this may vary)
3 oz fresh ginger (roughly chopped)
3 tbsp water ( (for the ginger))
1 cup of sugar
1 cup of water
Pinch of salt
3 cups of ice cold soda water or water to dilute

Steps:

  • Place the 1 cup of sugar and 1 cup of water in a saucepan and heat over medium heat to dissolve the sugar. Bring to a simmer. Once all the sugar has dissolved and the syrup starts to boil, set it aside to cool.
  • Place the 3 oz fresh ginger and 1 tbsp water (upto 3 tbsp) in a mini processor, and pulse until well blended and pureed. Strain the ginger juice through a sieve, pressing down on the pulp to get the most out of the ginger. Set aside ΒΌ cup of this ginger juice.
  • Alternatively, if you have a juicer, juice enough ginger to get 3 tbsp of pure ginger juice.
  • Mix the ginger and salt with the 1.5 cups of lime juice. Add up to 1 - 1.5 cups of sugar syrup to sweeten the ginger lime juice (change the amount of sugar you add according to your tastes).
  • Pour into a clean bottle/jar with a closeable cap and leave in the fridge to chill until needed.

Learn how to make your own lime cordial. This sweetened substitute for lime juice is used in homemade sodas and many popular cocktails, like the gimlet.

3/4 teaspoon citric acid
Optional: 1/2 teaspoon tartaric acid
3/4 cup granulated sugar
1 1/2 cups water
2/3 cup lime juice (fresh-squeezed; about 3 large limes)
Peel of 3 limes (cut into pieces or grated)

Steps:

  • Gather the ingredients.
  • In a small bowl, stir the citric acid (and tartaric acid, if using) into the sugar.
  • In a medium saucepan, bring the water to a boil and add the sugar.
  • Stir constantly until the sugar is fully dissolved.
  • Remove the pan from the heat, add the lime juice and peel, and stir well. Place it back on the stove, reduce the temperature, and allow to simmer for 2 minutes.
  • Remove from heat, cover, and let rest until the cordial cools completely (about 1 hour).
  • Pour the mix into a well-sealed container and refrigerate overnight.
  • Strain out the lime rinds using a fine-mesh strainer.
  • Pour the cordial into a clean bottle with a tight-fitting lid and refrigerate for another day before using it. Use it in your favorite drinks and enjoy!

If you like ginger, you will like this cordial. Note: this cordial should last for several weeks in the fridge. However, if it bubbles or looks odd, throw it out. Prep and cooking time does not include sterilisation of glass bottle.

2 cups sugar
2 cups water
1 piece lime rind or 1 piece fresh lemon rind (no white)
1 large gingerroot, chopped
2 teaspoons cream of tartar
1 cup lemons or 1 cup lime juice

Steps:

  • Boil the water, sugar, ginger, rind and cream of tartar for 5 minutes.
  • Add the lemon or lime juice.
  • Bring to the boil again.
  • Take off the heat, strain and pour into a sterilised bottle which will hold approximately 6 cups of liquid.
  • Use like ordinary cordial, either with iced water for a cooling drink, or hot water for a warming drink on a winter's night.

RAW LIME CORDIAL

Cordials can be a bit cowlick-y, sticking out here and there: kind of tart, kind of sweet, a bit bitter, and all a touch in disarray. But giving them 24 hours to mellow or cure in the refrigerator somehow brings them into harmony. This uncooked cordial requires a lot of time but none of it at the stove, and results in mind-boggling flavor: a dense, sweet syrup with a magnified fresh lime aroma and the perfect tart zip.

18 limes, room temperature, very ripe, well puffed and heavy
2 1/2 cups sugar
1 lb fresh ginger (optional)

Steps:

  • Wash limes in a sinkful of warm water, scrubbing with your hands or a vegetable brush, and let them dry them on a dish towel. Peel them with a vegetable peeler, removing as little of the underlying white pith as possible. To begin each, it's helpful to cut the polar ends off, where the stem attaches and opposite. This should produce about 140 grams of peels.
  • Cut limes in half and juice them. This should produce about 2 1/2 cups of juice.
  • In a non-reactive, coverable container, add sugar to juice and stir until fully dissolved, 3 to 5 minutes. Crush peels up in handfuls to release the oils as you add them into the juice mix. Stir a bit to initiate extraction of the oils. (If you're making a ginger version, wash the ginger, then shred it in a blender or food processor (no need to peel it), employing some of the lime juice to allow it to liquefy, and add it into the lime mixture, stirring well.) Cover and refrigerate for 12 to 24 hours. When ready, strain the cordial off from the peels in a fine mesh strainer or chinoise. Funnel cordial into covered container or cappable bottle and return to refrigerator for another day, to cure, before using. Makes roughly 1 liter.

3/4 cup packed light brown sugar
3/4 cup roughly chopped unpeeled fresh ginger (about 3 ounces)
1 tablespoon packed lime zest (from about 2 limes)
1/4 cup lime juice (from 2 to 3 limes)

Steps:

  • In a small pot, bring 7 ounces water, sugar, and ginger to a boil. Stir to dissolve sugar. Remove from heat, add zest, and steep for 30 minutes. Strain, add lime juice, and let cool.
