GINGER LEMONADE FIZZ

Yield 4 drinks, plus additional ginger-lemon syrup

Number Of Ingredients 4

1 cup sugar
1-inch piece fresh ginger, peeled and cut into coins
6 lemons, juiced, plus 4 lemon slices, for serving
2 cups club soda

Steps:

  • Heat the sugar and 1 cup water in a small pot until the sugar has dissolved and the liquid just comes to a boil. Turn off the heat and add the ginger. Let cool, then strain the syrup into a large mason jar and discard the ginger. Add the lemon juice to the syrup and refrigerate until ready to use.
  • Fill 4 large glasses with ice, pour 1/4 cup of the syrup into each glass and top up with some club soda. Add a slice of lemon to each glass and serve.

2 cups water
1 cup honey
2 tablespoons minced fresh gingerroot
2 cups club soda, chilled
1 cup lemon juice
Lemon slices and fresh mint, optional

Steps:

  • In a saucepan, bring the water, honey and ginger to a boil. Remove from heat; cover and steep for 10 minutes. Strain, discarding ginger. Cool., Transfer to a pitcher; stir in soda and lemon juice. Serve over ice. Garnish with lemon slices and fresh mint, if desired.

I was looking for a little treat one evening and fresh out of ideas. On a lark, I wandered over to the Weight Watchers UK website and found this zippy beverage idea. Have tried it a few times and this is my revised version of the original. Though the recipe shown here serves two, you can very easily scale this up to serve as many as you like.

1 lemon
2 inches piece gingerroot
1/2 cup water
1/4 ounce Splenda sugar substitute (4 packages)
2 1/4 cups seltzer water or 2 1/4 cups water
1 cup ice

Steps:

  • Peel ginger and cut across the grain into thin slivers.
  • Finely peel lemon zest from lemon, taking care to leave the bitter pith behind.
  • Bring half cup of water to boil in a small saucepan. Add lemon peel and ginger to water and shut off heat. Let the brew seep for 10 or 15 minutes.
  • Remove ginger and peel from the now tepid water and pour water into pitcher. Add juice from the lemon, Splenda and ice. Depending whether you want your beverage fizzy or flat add either seltzer or water.
  • Adjust sweetness to taste.
  • Serve.

2 teaspoons lemon juice
3/4 teaspoon salt
2 tablespoons powdered sugar
8 -10 mint leaves
1 teaspoon lemon rind
1 cup crushed ice (or more)
3 (12 ounce) cans Sprite (or 7-Up)
4 -5 slices thin rounds fresh ginger
water

Steps:

  • Mix together the lemon juice, ginger juice, salt, sugar, mint leaves, and lemon rind.
  • Put about 1/4 cup of the crushed ice into a tall glass, add 1/4 of the lemon-ginger mixture, pour the Sprite over it and serve immediately. Enjoy!
  • Ginger Juice:.
  • Slice 4 or 5 thin rounds of ginger and simmer in 1/4 cup of water in a small pan for about 5-7 minutes to get a nice gingery flavored juice.

Sparkling Ginger-Lemon Soda image

2 ounces fresh ginger, peeled and sliced paper thin
2 medium lemons, preferably organic, well washed
1/3 cup honey, more to taste
Ice cubes and mint sprigs, for serving

Steps:

  • Combine ginger and 2 quarts cold water in a large pot. Cut lemons in half and squeeze into pot, straining out pits. Drop lemon halves into pot and bring to a boil. Turn off heat, cover and let steep 30 minutes. Stir in honey, then taste for sweetness, adding more to taste. Strain mixture into a container and discard solids. Let cool to room temperature, then chill until very cold.
  • Working in small batches, pour cold mixture into the bottle of a carbonator, filling it not more than 1/3 full (this will give the mixture room to foam). Charge with CO2 until very fizzy, waiting between charges for foam to subside completely. (This can take up to 2 minutes, so be patient.)
  • Very slowly, as if opening a bottle of soda, release the bottle from the carbonator. Serve immediately, or cover tightly and chill. (Extra soda mixture can be refrigerated for up to a week, and can be served carbonated or flat.) To serve, pour over ice and top with a mint sprig. If desired, add a slug of rum to each glass.
