GINGER MANGO LASSI

2 mangos
1-inch piece of ginger
2 (8-ounce) containers vanilla yogurt
1 handful of ice cubes
2 tablespoons honey

Steps:

  • To remove the flesh of the mango, cut the flesh away from the pit in 2 large pieces. Use a paring knife to cut through the flesh (but not through the peel) in a crisscross grid pattern. Use your thumbs to press against the skin side and pop the mango cubes up. Cut across the bottom, along the peel and add the cubes to the blender.
  • Peel ginger. Grate ginger finely into bowl. Use fingers to squeeze juice out of gratings. Discard juiced gratings.
  • Put ginger and remaining ingredients in the blender and blend until thick and smooth.
  • If you don't have a blender you can still make the drink: Just whisk everything but the ice together in a mixing bowl. Fill glasses with ice and pour the mixture on top.

1 mango
1/2 inch piece fresh ginger
1 (8 ounce) container vanilla yogurt
1 small handful ice cube (3-5)
1 tablespoon honey (or agave syrup or maple syrup)
1/4 cup mango nectar (or other tropical fruit nectar)

Steps:

  • Add the flesh of the mango to a blender. Peel ginger using the back of a spoon. Grate the ginger finely into a bowl. Use your fingers to squeeze juice out of the gratings(I just throw it all into the blender, but if you don't like the texture, go ahead and squeeze the juice out).
  • Put all ingredients into the blender and blend until completely smooth.
  • Enjoy!

1/2 cup plain yogurt
1 teaspoon fresh ginger, peeled and finely grated
1/4 teaspoon salt
1/4 teaspoon ground cumin, roasted
8 -10 ice cubes

Steps:

  • Put yogurt in a bowl. Beat lightly with a whisk until light and creamy.
  • Hold the ginger over the yogurt and squeeze out all of its liquid.
  • Discard the ginger pulp in your hands.
  • Add the salt and cumin seeds to the yogurt and mix well.
  • Slowly pour in about 1/2 cup of water, mixing as you go.
  • Add ice and mix again.
  • Taste for balance of flavor.
  • Pour into serving glass.

  • Add all ingredients to your blender in the order listed and blend until very smooth. Serve immediately in a tall glass. The pistachios are optional, and can either be blended in or chopped and sprinkled on top.

This is different than a traditional Lassi in that it doesn't include yogurt. It is something like a thin milkshake with a bit of spice. Recipe is from Vegetarian Planet. There is also a variation to make it a warm drink.

2 1/2 cups whole milk or 2 1/2 cups low-fat milk
1/4 cup honey
1 tablespoon finely grated fresh ginger (heaping)
2 pinches freshly grated nutmeg
8 medium ice cubes or 4 large ice cubes
ice, for the glasses

Steps:

  • Combine all of the ingredients except the ice in a blender. Blend for 30 seconds to froth the milk.
  • Add the ice cubes, and blend until the ice is pulverized. Pour the lassi into large glasses filled with ice, and serve.
  • Variation: The same ingredients can make a soothing warm drink. Increase the milk to 3 cups, and heat it almost to a boil. Add the honey, ginger, and nutmeg, and stir well. Omit the ice. Serve in mugs.
