Steps:

  • Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 5 minutes. Drain.
  • In a large skillet over low heat, melt butter with honey. Stir in ground ginger and lemon juice. Stir in carrots and simmer until heated through.

1 (3 1/2-4-lb.) chicken
Kosher salt
1 head of garlic, halved crosswise, plus 4 cloves, thinly sliced
1 1/2 lb. carrots, scrubbed, cut in half
8 small shallots, peeled
1 (2") piece ginger, unpeeled, thinly sliced
2 Tbsp. unsalted butter
1 Tbsp. honey
2 Tbsp. extra-virgin olive oil
1 tsp. crushed red pepper flakes
1/4 cup fresh lime juice

Steps:

  • Preheat oven to 250°F. Season chicken generously with salt inside and out. Place head of garlic inside cavity; tie legs together if desired. Let sit at least 5 minutes or chill, uncovered, up to 2 days.
  • Combine carrots, shallots, ginger, butter, and honey in a large Dutch oven or other heavy pot; season lightly with salt. Place chicken on top, nestling into vegetables so lid will sit tight. Cover; bake until an instant-read thermometer inserted into the thickest part of breast registers 155°F, about 2 hours. Uncover and let rest 30 minutes.
  • Meanwhile, cook oil and sliced garlic in a small saucepan over medium until garlic is lightly browned, 6-8 minutes. Add red pepper flakes and let cool. Stir in lime juice; season dressing with salt.
  • Increase oven temperature to 450°F. Place chicken on a rimmed baking sheet and roast until skin is browned and crisp, 10-14 minutes.
  • Meanwhile, place pot over medium-high heat; bring juices to a simmer. Cook, reducing heat as needed, until vegetables are glazed, 10-12 minutes. Keep warm over low heat until chicken is done.
  • Serve chicken on top of vegetables with dressing drizzled over.

6 bunches (about 2 pounds) baby carrots
Salt
2 tablespoons unsalted butter
2 two-inch pieces fresh ginger, peeled and julienned
3 tablespoons honey

Steps:

  • Trim stems of carrots to 1/2 inch. Peel carrots, and wash stem area.
  • Bring a medium pot of water to a boil. Salt water, add carrots, and reduce heat. Simmer until carrots are almost tender, 3 to 4 minutes. Remove carrots from heat, and drain. (Carrots can be prepared earlier in the day to this point.)
  • Melt butter in a large skillet over medium-high heat. Add ginger, and saute, stirring, until transparent, about 2 minutes. Add carrots and honey, and cook for 4 to 5 minutes, or until carrots are glazed. Serve immediately.

500 g carrots, peeled and sliced
2 tablespoons butter
1/2 teaspoon ginger, minced (can substitute with bottled ginger or garlic if you prefer)
3 tablespoons honey
1 tablespoon sesame seeds, toasted -see directions
1 pinch salt
1 pinch pepper

Steps:

  • Peel and slice carrots. Boil approx 10 minutes until cooked (or cook to your preference). Strain and set aside. Keep the carrots warm.
  • Meanwhile -- add the sesame seeds to a hot non-stick frypan. There is no need to add any oil. Toss sesame seeds until toasted. Remove from the heat and set aside.
  • Melt the butter in the hot frypan. Add ginger and cook for one minute. Remove from heat.
  • Add the honey, sesame seeds and a pinch of salt and pepper. Stir to soften.
  • Pour the glaze over the cooked carrots.

1 1/2 lbs fresh baby carrots
4 tablespoons butter
4 tablespoons liquid honey
2 teaspoons grated fresh gingerroot
1/4 cup frozen concentrated orange juice
1 teaspoon lemon juice, freshly squeezed
1 1/2 teaspoons tapioca starch or 1 1/2 teaspoons cornstarch
1/4 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Wash and trim carrots.
  • In a medium size saucepan, add carrots, salt and cover with water and bring to boil.
  • Reduce heat, cover and cook until carrots are almost tender; about 10 minutes.
  • To a large frying pan, add butter, honey and grated ginger and cook for 1 minute, stirring a few times.
  • Add cooked carrots and stir well to coat.
  • Cover and cook carrots on medium-high heat until carrots are glazed and glossy, about 3 to 4 minutes, stirring occasionally.
  • In a small mixing bowl, mix together orange juice, lemon juice and tapioca starch.
  • Add to frying pan along with salt and pepper.
  • Continue to cook stirring constantly until sauce thickens slightly; about 3 minutes.

My son could could eat this whole dish himself if he could LOL! This recipe should be enough to serve about 5-6 people, but can be doubled, and you might want to consider doing that, as this dish is so delicious!. The carrots are still great even without topping them with almonds, but I most always top with almonds if serving this to compnay. Don't make the mistake of adding in too much ginger, I have done this before, and it just overpowers all of the other ingredients, 1/2 teaspoon is really all tht you need. You will love this!

2 1/2 lbs carrots, sliced diagonally into about 1/2-inch slices (or smaller)
water, for boiling
1/3 cup butter, melted (no subs please!)
1/2 cup honey (or to taste)
2 tablespoons fresh lemon juice
1/4-1/2 teaspoon ginger powder
1 1/2 cups golden raisins (or to taste)
1 cup slivered almonds (preferably toasted)
salt and pepper

Steps:

  • Place the sliced carrots in a saucepan, and cover with water just to cover the carrots. Bring to a boil, and cook until JUST crisp-tender (about 7-8 minutes, do not over cook the carrots as they will cook more in the oven) drain VERY well (I soak up any excess water with a paper towel).
  • In a large mixing bowl, whisk the butter, honey, lemon juice, ginger and pepper (add in salt if desired) together very well.
  • Add in carrots, mix and coat well with the honey mixture.
  • Transfer the mixture into a buttered 2-quart casserole dish.
  • Sprinkle with raisins; mix slightly.
  • Cover and bake in a 350 dedgree oven for about 30-35 minutes, or until carrots are tender.
  • Sprinkle with slivered almonds just before serving.
  • Absolutey delicious!

6 cups water
3 lbs young fresh baby carrots, with tops trimmed to 2 inches (peeled or scrubbed, or 3 pounds packaged baby carrots)
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons honey
4 teaspoons fresh ginger, minced
1/4 teaspoon salt

Steps:

  • Line a baking sheet with paper towels.
  • In a 12- or 14-inch heavy skillet bring water to boiling, add carrots.
  • Return to boiling; reduce heat.
  • Cover and simmer about 10 to 12 minutes or until carrots are just tender and drain.
  • (I prefer to use my Cuisinart Turbo Convection Steamer ).
  • Carefully turn out onto prepared baking sheet.
  • (When green tops are left on carrots during cooking, they become very fragile. As the carrots cook, some of the tops may come off.).
  • Pat dry with additional paper towels.
  • To glaze carrots, in the same heavy skillet combine margarine, honey, ginger, and salt.
  • Stir constantly over medium heat until margarine is melted.
  • Carefully add carrots.
  • Toss gently for 2 to 3 minutes or until carrots are thoroughly coated with glaze and heated through completely.
  • To serve, arrange carrots in a shallow bowl or on a platter; drizzle with remaining glaze from pan.

2 1-pound pork tenderloins
Salt and pepper
1 tablespoon olive oil
½ cup apple juice
3 tablespoons honey
2 teaspoons fresh ginger root, grated
3 carrots, cut into 1/4-inch slices
1 large or 2 small apples, cored and cut into 1/4-inch slices

Steps:

  • Season pork with salt and pepper. Warm oil in large skillet with lid over medium-high heat; add tenderloins and cook until browned on all sides, 8-10 minutes. Remove pork to a plate and set aside.
  • Return skillet to medium heat and add apple juice, honey and ginger, scraping up any browned bits on the bottom of the skillet. Stir in carrots. Return pork to skillet, nestling it into carrots. Reduce to simmer, cover and cook 5 minutes.
  • Add the apples, cover, and continue to cook until the internal temperature of the pork reaches between 145°F (medium rare) and 160°F (medium) and the carrots and apple are tender, about 5 minutes. 1/2 tsp kosher salt, plus more to taste
1 tbs unsalted butter
1 1/2 lbs carrots, sliced diagonally into 1-inch chunks
1 clove garlic, thinly sliced
1 2-inch piece fresh ginger, peeled and grated
freshly ground black pepper

Steps:

  • 1. IN a small bowl, whisk 1 1/4 cups wter with honey, rice vinegar, and salt until well combined. Set aside. 2. Add butter to a medium sauce-pan and heat over medium-high. Add carrots and saute for 5 minutes of until just slightly tender. Add garlic and ginger and cook for 30 seconds more. Add honey mixture to saucepan and bring to a boil. Then cover, reduce heat to medium-low, and simmer for 5 minutes or until carrots are very tender. Remove lid, increase heat to medium-high, and bring to a boil. Cook for 10-12 minutes more, stirring occasionally, until liquid is nearly gone. Remove form heat, then season to taste with salt and pepper. Serve immediately.
