GINGER BREW FLOAT
Ginger beer, cardamom, crystallized ginger, and vanilla ice cream-YUM! Cooking time is freezing time. I adapted this from the ginger people.

Steps:
- Add crystallized ginger, cardamom and cinnamon to the softened ice cream.
- Stir quickly to mix ingredients together.
- Place bowl in freezer until ice cream is firm enough to scoop, at least 1 1/2 hours. If storing longer( up to 1 week, cover with airtight lid).
- Scoop the ice cream equally into 4 glasses. Slowly fill glasses (16 oz. each) with cold ginger brew. It will take approximately 2 bottles. Enjoy!

better than ginger ale, this is wonderful for stomach cramps, indigestion, nausea and is also an energy stimulant. syrup keeps refrigerated for 6 months

- for syrup combine water and ginger in saucepan, simmer for 30 minutes.
- cool slightly and strain.
- add maple syrup, stir to mix.
- stir 2 tbsp of syrup into carbonated water, add lemon juice and peel.

- Pulse 8 ounces ginger, peeled and chopped, in a food processor to a coarse paste. Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30-40 minutes. Strain into a large jar and mix in 1/2 cup lemon juice and 1/3 cup agave syrup or pure maple syrup; add more lemon juice or agave, if desired. Let cool; cover and chill.
- Do ahead: Brew can be made 2 weeks ahead. Keep chilled.

- -funnel sugar and yeast into the bottle.
- -grate 2 tbsp of ginger.
- -extract juice from lemon.
- -mix juice and ginger in a small bowl. funnel this into the bottle w/dry ingredients.
- -add water. fill 90% and shake until the sugar dissolves. top off the bottle, leaving 3 fingers empty.
- -cap tightly and keep in a warm place. wait 36-40 hours for the yeast to activate. (the bottle will most likely inflate under the pressure, so rest it on it's side).
- -refridgerate overnight.
- WARNING: open very slowly and carefully. i was careless with the first one and nearly blew my thumb off. the bottle is under a lot of pressure.

RED WITCH'S BREW WITH GINGER AND BLUEBERRY EYEBALLS
Steps:
- Combine the sugar and 6 cups water together in a medium pot. Bring to a boil and add the tea bags, ginger, lemon peels and lemon juice. Simmer for 15 minutes. Turn off the heat, then cover and steep for an additional 15 minutes or up to 1 hour.
- Strain the tea syrup into a clean container. Skewer two blueberries on each of 6 to 8 skewers or cocktail picks. Serve the brew over ice topped with sparkling lemon water and the googly eye skewers.
