APPLE GINGER MARTINI



Apple Ginger Martini image

The snap of apple and the tang of ginger elevate this martini into a super-sippable creation.

1/4 cup chopped unpeeled apple
1 tablespoon chopped gingerroot
1/4 cup vodka (2 oz)
2 tablespoons orange-flavored liqueur (1 oz)
2 tablespoons white cranberry juice cocktail (1 oz)
1 tablespoon lime juice
Ice cubes or crushed ice
Apple slice or lime wedge

Steps:

  • In bottom of cocktail shaker, muddle chopped apple and gingerroot with muddler or end of wooden spoon. Add vodka, liqueur, cranberry juice cocktail and lime juice.
  • Fill cocktail shaker with ice; shake until blended. Pour into chilled martini glass, straining out apple, gingerroot and ice. Garnish with apple slice.

1 1/3 cups Ginger Simple Syrup, recipe follows
1 1/2 cups 100% apple juice, chilled
1 cup dark rum, chilled
1/2 cup club soda or sparkling water, chilled
Ice
1 green or red apple, unpeeled, cored and thinly sliced
1 cup sugar
1 cup water
1 (2-inch) piece of fresh ginger, peeled and chopped

Steps:

  • In a pitcher, combine the simple syrup, apple juice, rum, and sparkling water. To serve, fill a martini shaker with ice and add about 1 cup of the rum mixture. Shake well and pour into martini glasses. Garnish with apple slices and serve.
  • In a small saucepan, combine the sugar, water, and ginger over medium heat. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.

SPICED VIRGIN APPLE MARTINIS



Spiced Virgin Apple Martinis image

1/2 cup plus 1 tablespoon sugar
2 tablespoons fresh lemon juice (from 1/2 a large lemon)
4 cinnamon sticks, halved
One 1/4-inch-thick piece candied ginger
6 gingersnaps cookies (about 1 1/2 ounces), broken coarsely
1/3 cup frozen apple juice concentrate, thawed
One 25.4-ounce bottle sparkling apple cider, chilled
1 small Granny Smith apple, halved, cored and cut into 6 wedges

Steps:

  • In a small saucepan, combine the 1/2 cup of the sugar, 1/2 cup water, lemon juice, cinnamon sticks and candied ginger. Stir over medium heat until the sugar dissolves and the syrup comes to a boil. Reduce the heat and simmer for 5 minutes. Cool to room temperature. Strain and transfer to a small bowl. (Can be made 2 days in advance). Pour 1/4 cup of the cinnamon syrup into a large pitcher. Place the remaining syrup into a shallow bowl.
  • Grind the gingersnaps and the remaining 1 tablespoon sugar in a mini processor to fine crumbs. (Alternatively, the cookies can be placed in a resealable plastic bag and crushed with a rolling pin or the bottom of a small saucepan.) Pour the crumbs into a second shallow bowl.
  • Dip the rim of each martini glass into the cinnamon syrup. Dip the moistened rims into the cookie crumbs several times to coat.
  • Stir the apple juice concentrate and sparkling apple cider into the pitcher. Pour into the prepared glasses and garnish with apple slices.
