This is one of many recipes I have gotten out of a Grill Masters cook book. Some of them I have tried and some are still on my list to try. But all of them sound very yummy.

WEST TENNESSEE THICK AND STICKY BBQ SAUCE

Steps:
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and cook and stir for about 5 minutes, until soft and golden.
- Add the garlic and cook and stir for 1 minute more.
- Pour in the ketchup; then rinse the bottle with water to capture the remaining ketchup and add it to the pan, stirring to mix.
- Add the vinegar, Worcestershire sauce, brown sugar, mustard, red pepper flakes, salt, and black pepper; stir to mix.
- Squeeze the lemon juice into the sauce, add the squeezed halves, and stir.
- Bring the sauce to a low boil, decrease the heat to a simmer, and cook for about 45 minutes, stirring occasionally, until the sauce thickens and reduces slightly.
- Remove from the heat, let cool slightly, and remove and discard the lemon halves.
- Refrigerate in an airtight container until ready to use, or for up to 3 weeks.

GINA'S BUTTERMILK BBQ SAUCE

- In a small saucepan over medium heat, reduce the apple cider and brown sugar until thick and syrupy, about 25 minutes. Reduce heat and stir in BBQ sauce. Turn heat off. Add buttermilk and mix. Serve on top of pork chops.
BIG AL'S TENNESSEE RED BAR-B-Q SAUCE
"This is a fusion of Tennessee sauce and Carolina sauce with an added bit of sweetness. I developed this recipe out of my love for southern bbq. I wanted a combination of sweet savory spicy vinegar sauce that goes well with pork. I think I have hit the nail on the head with this creation I came up with while living in Korea. - Put the 1 cup of ketchup in a mixing bowl and then add all the other wet ingredients. Then add all the dry seasonings.
- The final sauce will be thinner if you add in more vinegar (based on taste). No need to heat this sauce. Just mix or shake in jar and done -- simple but with huge flavor! Best if added to finished pulled pork or last 15 minutes of ribs. If you want to use as a marinade, add water to desired consistency. My other sauce on Allrecipes: Big Al's K.C. Bar-B-Q Sauce is the #1 rated 5 Star sauce. I hope you really enjoy this simple and flavorful recipe.
- Footnote: The sauce needs no heat. Just add, mix and use (or refrigerate). For the basic recipe use 1/2 cup of vinegar. If you like more zip, then gradually add more after tasting initial recipe. If you need more heat, add in the red pepper flakes to taste. The Korean Red Pepper Paste can be purchased at any Asian market or on-line. If you don't have any and can't wait, then add in a touch more honey (2 T) and some Sriracha hot sauce (2 T).

NEELY'S BARBECUE CHICKEN
Pat and Gina Neely and their family own and operate some of Tennessee's best - and devilishly delicious - barbecue restaurants. But when they are relaxing at home in Memphis, they love to create tasty dishes their whole family can enjoy. Now they're ready to share secrets from their famous restaurant dishes. Here is the recipe for their Barbecue Chicken. Courtesy of Food Network. This recipe is absolutely WONDERFUL! I made it for 4th of July and it went over BIG!!! When grilling make sure you keep your heat low, as the sugar can char while cooking. Make sure you use tongs so you don't puncture your meat while turning. Also, make sure you soak your wood in water for 1/2 hr. before putting in your smoker or grill so it won't burn. Preparation time does NOT include marinating time.

- Barbecue Chicken:.
- Rinse chicken halves in cold water and pat dry with paper towels. Place chicken in a large bowl or baking dish, coat with Italian dressing and evenly season with Neelys Seasoning. For best results, allow the chicken to marinate in the refrigerator overnight.
- If Cooking Inside:.
- Take the chicken out of the refrigerator and brush chicken with Neelys Barbeque Sauce.
- Place into a preheated 350 degree F oven for 45 minutes.
- If Grilling Outside:.
- Thirty minutes before you're ready to cook, take the chicken out of the refrigerator and allow it to come to room temperature. Preheat the grill to a medium temperature, about 275 degrees F preferably over hickory and charcoal.
- Place the chicken halves on grill, meat side down. Cover grill and cook for about 50 minutes. Flip chicken over and let it brown until the chicken becomes golden, about 15 to 20 minutes. The wing and the drumstick should become very tender and will easily pull away at the joints. Brush the chicken with Neelys Barbecue sauce during the last 5 minutes of cooking.
- Neelys Italian Dressing:.
- Mix all the ingredients together in a bowl, except the oil and salt and pepper. Slowly whisk in the oil and season with salt and pepper, to taste.
- Makes 1 1/2 cups.
- Neelys Barbecue Seasoning:.
- Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
- Neelys Barbecue Sauce:.
- In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
- Makes 3 1/2 cups.
