NEELY'S QUICK BREAD

2 tablespoons vegetable oil, plus more for pan
3 1/2 cups all-purpose flour, plus more for pan
2 tablespoons ground mustard
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
Pinch cayenne
1 large egg, beaten lightly
1 (12-ounce) bottle light beer
1 cup grated smoked Gouda
1 tablespoon chopped fresh thyme leaves

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a loaf pan.
  • Mix together flour, ground mustard, salt, baking soda, baking powder, and cayenne into a large bowl.
  • In a separate bowl whisk together egg, vegetable oil and beer and stir the batter until it is just combined.
  • Add the wet ingredients to the dry. Mix in the cheese and thyme. Pour the batter into the pan and bake for 45 minutes.
  • Let cool on a wire rack.

1/2 cup virgin olive oil
2 cloves garlic, finely chopped
1/4 teaspoon red pepper flakes
1/4 teaspoon dried basil
Salt
1 loaf Italian bread, sliced into 1/4-inch slices
1 cup shredded mozzarella

Steps:

  • Preheat grill to low-medium heat.
  • In a small bowl, combine olive oil, garlic, red pepper flakes, basil and salt. Brush both sides of the bread with the olive oil and garlic mixture.
  • Place the bread on the grill and grill both sides, until golden and crisp; about 5 minutes. Sprinkle the top with cheese and place in the broiler until bubbly and golden, if inside. If outside, cover the grill and cook until the cheese is melted and bubbly. Serve immediately.

HERBED GOAT CHEESE ON FLAT BREAD



Herbed Goat Cheese on Flat Bread image

1 large log fresh goat cheese, room temperature
1 Tbs. chopped fresh dill
1 Tbs. chopped fresh parsley
1 tsp. chopped fresh oregano
2 Tbs. extra virgin olive oil
salt and pepper to taste
more fresh dill for garnish
store-bought flatbread crackers or pita chips

Steps:

  • Combine first five ingredients, salt and freshly ground black pepper together in a mixing bowl and stir well until evenly combined. Transfer mixture into a disposable piping bag fitted with a star tip.
  • Lay out crackers or chips and pipe a round rosette of goat cheese mixture onto each one. Top rosette with a small sprig of fresh dill. Serve immediately.

1 1/4 cups whole wheat flour
1 teaspoon salt
1 teaspoon yogurt
2 tablespoons butter
1/2 cup water
Potato Filling, recipe follows
4 tablespoons softened butter
1 potato, baked, cooled, peeled and mashed
1/2 cup yogurt
1 small onion, minced
1 jalapeno, stemmed, seeded, and minced
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon cumin powder
2 tablespoons minced cilantro
2 teaspoons salt

Steps:

  • Sift the flour with the salt, and knead into a soft dough by adding the yogurt, butter, and water.
  • Cover with a moist cloth and let rise for 1/2 an hour.
  • Meanwhile, combine ingredients for the potato filling in a bowl and refrigerate until needed.
  • Knead the dough again, and divide into 8 equal parts, rolling them into small balls. Using a rolling pin, roll out each ball into a round disc approximately 3 inches in diameter.
  • Place the potato filling in the center of 4 of them, cover with the remaining disks, and roll out into a 4 to 5 inch discs. Brush the breads with soft butter.
  • Place the stuffed breads on non-stick or well-seasoned cast iron pan on medium-high heat. They can also be cooked on a charcoal grill or pancake griddle. Cook till both sides are golden brown, approximately 2 to 3 minutes per side.

1 (.25 ounce) envelope active dry yeast
1 cup lukewarm water
2 cups bread flour
1 teaspoon salt
2 teaspoons white sugar
2 tablespoons olive oil
⅓ cup butter or margarine, softened
2 tablespoons garlic powder
¼ cup grated Parmesan cheese
⅓ cup shredded mozzarella cheese

Steps:

  • In a cup or small bowl, sprinkle yeast over the surface of the lukewarm water. Let stand for 5 to 10 minutes to dissolve.
  • In a large bowl, stir together the flour, salt and sugar. Pour in the yeast mixture along with the olive oil. Beat with a sturdy spoon until dough is stiff enough to pull away from the sides of the bowl. Cover, and set aside until doubled in size, about 35 minutes.
  • Remove the dough from the bowl and knead briefly on a floured surface. Roll the dough out to 1/4 to 1/2 inch thickness or to the size of your baking sheet. Place on a greased baking sheet and spread butter over the top. Sprinkle with garlic powder, Parmesan cheese and mozzarella cheese. Let rest while you preheat the oven to 350 degrees F (175 degrees C).
  • Bake for 20 minutes in the preheated oven, until golden brown and cheese is bubbly. Serve warm.

You can make personal pizzas quickly by using premade naan, flatbread or pita as the base, then topping with whatever sounds good to you. Here, the combination of feta, Parmesan, ricotta and mozzarella hits every note - salty, creamy, tangy and gooey. Corn's sweetness balances the savoriness, and a generous amount of black pepper cuts through the richness, as it does in cacio e pepe. Feel free to swap the cheeses based on what you have - pecorino instead of Parmesan, fontina instead of mozzarella - and incorporate any toppings you like: spinach, herbs, garlic, red-pepper flakes, hot honey and so on.

3/4 cup crumbled feta (about 3 ounces)
3/4 cup finely grated Parmesan (about 2 1/2 ounces)

1 1/2 cups corn kernels (from 2 ears of corn or frozen and thawed)
Black pepper
4 flatbread, naan or pocketless pita (roughly 8-inch diameter, store-bought or homemade)

Steps:

  • Heat the oven to 450 degrees, and place a rack in the lower and upper thirds of the oven. In a large bowl, mash the ricotta, feta, Parmesan, mozzarella and thyme together with a fork. Stir in the corn, and season to taste with black pepper.
  • Place the flatbread on two baking sheets, then top evenly with the cheese mixture. Roast, rotating pans halfway through, until the bread is crisp and the cheese is melted and browned in spots, 8 to 10 minutes.
  • Let cool for a few minutes, then cut and top with more black pepper.
