I found this somewhere on the internet. It sounds so pretty! I'm putting it here for safe keeping. I haven't made this yet, but I think it would make a nice gift.

1/4 cup dried parsley
2 tablespoons taco seasoning
2 tablespoons dried onion flakes
2 tablespoons taco seasoning
2 tablespoons cumin
2 tablespoons paprika
2 tablespoons white cornmeal
2 tablespoons taco seasoning
2 tablespoons garlic granules
2 tablespoons chili powder
2 tablespoons dried parsley
1 cup dried pinto bean
1/4 cup small dried white bean
1/4 cup small dried black beans
1 cup dried kidney beans
1 medium diced onion
4 (15 ounce) cans diced tomatoes
1 (8 ounce) can tomato paste
1/2 cup cider vinegar
1/2 cup brown sugar
49 ounces tomato juice
2 lbs ground beef or 2 lbs ground turkey, browned

Steps:

  • The ingredients are layered, like sand art. Don't worry about getting the layers even.
  • The desert effect comes from the rippled appearance of the spices. One tip is to carefully add each seasoning along the edges of the jar, then fill in the middle of the layer. This way all of the beautiful colors show along all of the edges.
  • Attach these instructions to the jar:.
  • Pour contents of jar into 12-quart pot.
  • Add:.
  • 1 medium diced onion.
  • 4 (15 ounce) cans diced tomatoes.
  • 1 large can of tomato paste.
  • 1/2 cup cider vinegar.
  • 1/2 cup brown sugar.
  • 49 ounces tomato juice.
  • 2 pounds ground beef or turkey, browned.
  • Fill remainder of the pot with water. Bring to boil. Let simmer for 2 1/2 to 3 hours. Add salt and pepper to taste.

3 cups dried red beans or 3 cups dried kidney beans
3 tablespoons chili powder
2 tablespoons dehydrated onion
1 tablespoon granulated garlic
1 teaspoon oregano
2 teaspoons salt
1/2 teaspoon cayenne pepper
1 (8 ounce) can tomato sauce
2 (14 ounce) cans diced tomatoes

Steps:

  • Put beans into a jar or large bag.
  • Combine spices into a small bag.
  • Place the cans of tomato sauce and diced tomatoes in your gift basket.
  • LABEL:.
  • Wash beans. Put into pot with spices.
  • Cook until done, about 1 to 1 1/2 hours.
  • Meanwhile, brown 1 pound of ground beef and drain.
  • Add meat, tomatoes and sauce to the beans.
  • Simmer to blend flavors.

Have been making this for a long time for family and friends as gifts for christmas, auctions, bizars, you name it. They say it is a good thing to have in the pantry as a back up or if they need a last minute dinner to take some where since it is so easy to make.

1 quart(s) canning jar, wide mouth if possible
3 cup(s) kidney beans, dry
- ~~seasoning packet makings:
2 tablespoon(s) onion, dried, minced
3 tablespoon(s) chili powder
1 tablespoon(s) garlic, dried, minced (can sub powder if no mince available)
1 teaspoon(s) oregano, dried
2 teaspoon(s) salt
1/2 teaspoon(s) cayenne pepper (optional)
- ~~additional recipe makings (receiver adds):
1 can(s) tomato sauce (8 oz)
2 can(s) tomatoes, diced (14 oz)
1 pound(s) ground beef
10 cup(s) water

Steps:

  • YOUR PART - FILL THE JAR: Take and place all the things listed under seasoning packet and seal them up in a zip lock bag. I find that the "SNACK" size works well for me. If you do not have a zip lock then place in a any plastic bag you have and close as tightly as you can.
  • Take your beans and start to fill your jar part way. Place the packet in the middle and continute fill with beans till you have the packet covered and can only see beans from all sides of the jar and maybe a little bag from the top of the jar.
  • When done seal with lid and ring. You may want to fancy it up with a piece of cloth around the top and some ribbon to attach it and the instructions.
  • TO THE MIX IT SELF/ PRINT IT OUT LIKE THIS FOR YOUR GUEST: 1 JAR CHILI MIX 1 (8 OZ) CAN TOMATO SAUCE 2 (14 OZ) CANS DICED TOMATOES 1 LB GROUND BEEF 10 CUPS WATER
  • Remove seasoning packet from the chili mix and set aside. Rinse and check beans then set in a large pot. Add the water and seasoning. Cook for 1 to 1 1/2 hours; in the mean time, brown the meat drainning of the fat. Add the meat, tomatoes, and sauce to the beans. Simmer it all together for 20 to 30 minutes to blend the flavors.
  • ~~~~~ Good side note: I give a box of Jiffy corn bread mix or if I have on hand a home made jar of corn bread mix it give it instead.
  • *****NOTE: If you have a Food Saver System with a large jar seal attachment you can use it to seal wide mouth jars and give them as gifts. There is also a regular size seal but it is easier to fill the wide. When filling jars I find that when doing layers that if you press/compress them you can get every thing in that is needed to get in. I find a canning muddier/press works good for me ;( The picture above is sealed and was a item at a Christmas bizarre)
