1 cup pecans
1/2 cup graham cracker crumbs
1/2 cup ginger snaps
1/4 cup unsalted butter, melted
4 (8 ounce) packages cream cheese, softened
1/2 cup sugar
2 tablespoons sugar
4 large eggs, the whole egg
2 large egg yolks
2 tablespoons all-purpose flour
2 teaspoons watermelon syrup, from the watermelon
8 ounces white chocolate (grated)
1 cup watermelon, chopped (water extracted on kitchen towel)
1 cup fresh raspberry

Steps:

  • To make the crusty madness, place first three ingredients in food processor. Process until fine and add butter, blending until all combined. Press into the bottom of a 10-inch spring form pan. Preheat oven to 350 degrees.
  • To make the filling beat the cream cheese in a mixer until light and fluffy. Add sugar. Add one egg at a time, then add yolks, while operating mixer on low speed and scraping bowl after each one is added. Add the flour and watermelon syrup until combined and looking darling. Then add grated chocolate.
  • Place the raspberries and chopped watermelon over the crust and then pour the cheesecake mixture over the watermelon and raspberries. Bake in the middle of oven, 45-55 minutes. You can place a pan of water in the bottom of the oven to prevent the cake from cracking. Remember the cake is still cooking when it comes out of the oven. Let it cool for several hours, then refrigerate for a couple hours.

My husband brought this delightful recipe with him from Egypt. It is a quick and easy sandwich spread or it can also be used as a dip mix. We make this often since we both enjoy cheese.

8 ounces bulgarian feta cheese
2 roma tomatoes, finely chopped
1 cucumber, finely chopped
1 tablespoon olive oil (optional)
3 -4 pita breads, warmed and cut in half

Steps:

  • Use a fork to mash the cheese in a medium mixing bowl.
  • Add the tomatoes and cucumber.
  • Mix well.
  • Add in some of the oil if the mixture is too dry.
  • Fill each half pita bread to eat as a sandwich or serve the dip and pitas as an appetizer.

1 medium watermelon, peeled
1 teaspoon kosher salt
1/2 cup goat cheese
1 cup bias cut green onion

Steps:

  • Cut the watermelon into 1 by 1-inch cubes. On a long rectangular plate (or bowl) spread the watermelon in an even layer. Lightly sprinkle with salt. Cut the goat cheese into small chunks and distribute over the watermelon. Sprinkle with the green onions and refrigerate until ready to serve.

This is a breakfast appropriate dish. Or even brunch. serve with warm pita. I ate this alot growing up especially on a warm day. you will be surprised to see how well the cheese and watermelon complement each other.

2 cups chopped feta
1 cup chopped tomato
1/4 watermelon (cubed)
olive oil (as needed)
1 tablespoon dried thyme (or zattar)
4 loaves pita bread

Steps:

  • in a serving platter scatter the feta.
  • layer the tomatoes on top.
  • drizzle with a couple tbs of olive oil ( use more or less depending on your liking/ health consciousness)
  • sprinkle with zattar or thyme.
  • arrange watermellon around the cheese and tomato.
  • warm the pita under the broiler (care full not to burn) for just 2 minute.
  • enjoy!
