1 tablespoon canola oil
1-1/2 pounds pork stew meat
1 medium onion, chopped
2 celery ribs, chopped
1 can (14 ounces) sauerkraut, undrained
8 ounces egg noodles, cooked and drained
1 can (10-1/2 ounces) condensed cream of mushroom soup, undiluted
1 jar (4-1/2 ounces) whole mushrooms, drained
Salt and pepper to taste

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium heat. Brown pork. Add onion and celery; cook until vegetables are crisp-tender. Stir in sauerkraut, noodles, soup and mushrooms; sprinkle with salt and pepper., Spoon into a greased 2-qt. baking dish. Bake, covered, stirring occasionally, until meat is tender, about 1-1/2 hours.

1 pound ground beef
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon onion salt
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sauerkraut, drained
1 ¼ cups egg noodles
½ cup water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Add ground beef, salt, pepper, and onion salt. Cook and stir until beef is browned and crumbly, 5 to 7 minutes.
  • Combine beef mixture with cream of chicken soup and sauerkraut in a small casserole dish. Add noodles and water; stir to combine.
  • Bake in the preheated oven until noodles are tender yet firm to the bite and casserole is heated through, about 1 hour.

1 lb hamburger
1 (32 ounce) bag frozen hash brown potatoes, thawed
2 (10 3/4 ounce) cans cream soup (I use mushroom and chicken - one of each)
1 (14 ounce) can sauerkraut
shredded cheddar cheese
salt and pepper

Steps:

  • Brown hamburger, drain grease.
  • Place in large casserole.
  • Add hash browns.
  • Then spread soup over potatoes.
  • Drain sauerkraut and layer on top.
  • You don't have to use the whole can.
  • Bake at 350 for 1 hour.
  • Sprinkle cheese and bake until melted.
  • Stir well before serving.

1 lb hamburger
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
2/3 cup milk
1 tablespoon butter
12 ounces egg noodles, cooked 5 minutes, and drained
3 cups shredded cheddar cheese
1 (15 ounce) can canned sauerkraut, drained

Steps:

  • Brown hamburger and onion, salt and pepper, drain. Add soups and milk. Stir.
  • Cook noodles, partially, about 5 minutes. They will finish cooking during baking time.
  • Either using a crock-pot(low heat), or a casserole dish, grease with butter, then layer in order, 1/2 of each. Noodles, sauerkraut, hamburger mixture, cheese.
  • Repeat.
  • Either cook in crock-pot on low 4 hours, or bake in a 350 oven, for 45 minutes, until hot and bubbly.

1 small onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1 (14 ounce) can sauerkraut
2 cups about 2 handfuls uncooked wide egg noodles
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup grated cheddar cheese

Steps:

  • Brown beef and onion together; drain fat. Layer half of the beef onion mixture in a 7x11 inch baking dish. Cover with Sauerkraut and top with the remaining meat-onion mixture. Put uncooked noodles on the top. Spread soups over the noodles. Bake 30 minutes at 350 degrees. Sprinkle cheese on top and bake 30 minute more.

3 tablespoons butter or margarine
1 can (27 ounces) sauerkraut, rinsed and drained
2/3 cup uncooked long grain rice
1 large onion, diced
2 pounds lean ground beef (90% lean)
1-1/2 teaspoons salt
Pepper to taste
2 cups water
1 can (8 ounces) tomato sauce

Steps:

  • In a skillet, melt butter. Layer with sauerkraut, rice, onion and beef. Sprinkle with salt and pepper. In a bowl, combine water and tomato sauce; mix well. Pour over beef mixture. Bring to a boil. Reduce heat; cover and simmer for 50 minutes or until meat is no longer pink and rice is tender (do not stir).

This recipe has to be the best tasting sauerkraut I've ever had. Traditionally, my family serves pork and sauerkraut every New Year's Day for luck in the coming year. I love cabbage as a general rule and like most sauerkraut recipes, but they can be quite sour depending on how it is prepared. Sadly I don't remember who gave me this recipe and who deserves the credit, since it was pulled from a collection of hand-written recipes I've kept for years. I made it as a side dish for New Year's Day dinner and it was a complete hit! This is certainly not your typical 'sour' sauerkraut recipe.

1 tablespoon bacon drippings
1 cup finely chopped onion
2 (16 ounce) packages sauerkraut, undrained
1 tablespoon packed brown sugar
1 teaspoon caraway seeds
½ cup chicken stock
½ cup cooking sherry

Steps:

  • Heat bacon drippings in a large skillet over medium heat; cook and stir onion until soft and translucent, about 5 minutes.
  • Place sauerkraut with juice into a large bowl and cover with water. Stir and use your hands to squeeze out as much of the water and juice as possible. Add squeezed sauerkraut to onion.
  • Stir brown sugar, caraway seeds, chicken stock, and cooking sherry into the sauerkraut mixture. Reduce heat to low and simmer until almost all the liquid has evaporated, 30 to 40 minutes, stirring occasionally.

What a hit! I encourage you to try this. This is one of our family favorites. I make this for potluck dinners and always get requests for the recipe and it's something different for the table. Serve with warm bread and homemade pickles and you have a meal that will warm you from inside out and best yet, hardly any ever left.

1 lb ground beef
1 cup onion, finely chopped
1 teaspoon salt
1/4 teaspoon pepper
28 ounces sauerkraut, drained
2 cups wide egg noodles
12 ounces cream of celery soup
12 ounces cream of mushroom soup
1/2 cup cheddar cheese, grated

Steps:

  • Brown ground beef and onion.
  • Drain off fat.
  • Layer half of been and onion in 7x11 casserole.
  • Cover with sauerkraut
  • Top with remaining onion and beef mixture.
  • Put uncooked egg noodles on top.
  • Spread soups over noodles.
  • Bake 30 minutes at 350 degrees, covered.
  • Sprinkle cheese over top and bake an additional 30 minutes more.
  • I often double this recipe for a 9x13 pan.
  • Hint: Make sure you cover all your noodles with soup or they will be rock hard along the edges, bad for the teeth.
  • Zaar won't allow the correct descripton of the sauerkraut, it calls for a 1 pound 11 oz can so I just computed to get the recipe to take.
