LANCASTER COUNTY HAM LOAF WOW WOW WOW
Now THIS is Lancaster County cooking! This is an Amish/Mennonite specialty dish! You will NOT be disappointed! Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! This is SO delicious! ENJOY!

Steps:
- Grind meat (if necessary).
- Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
- Shape into a loaf.
- Bake at 350 degrees Fahrenheit for one hour.
- For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
- Pour sauce over loaf.
- Continue to bake for another hour.

Steps:
- combine eggs, milk, saltines, onion and 1/2 tsp dry mustard, and pepper.
- Add ham and pork.
- Mix well.
- Shape into loaf and place in a 13x9x2 baking pan.
- Bake at 350 for 1 hours
- For Glaze: combine Brown sugar, vinegar, and 1/2 tsp dry mustard.
- Spoon glaze over loaf.
- Bake additional 20 minutes, basting with glaze.

- Combine ground ham, mustard, chopped onion, parsley, oats, milk and egg; mix well to blend and form into a loaf. Place in greased loaf pan.
- Combine brown sugar and vinegar in saucepan; heat till sugar is dissolved. Pour mixture over ham loaf.

Steps:
- Drain pineapple, reserve the juice.
- Preheat oven to 375*.
- In a small bowl, mix together butter, brown sugar, and drained pineapple.
- Coat a 10x10" baking pan with vegetable spray, pour in the pineapple and pat it out smoothly on the bottom of the pan.
- In a large mixing bowl, beat the eggs with a fork.
- Stir in the ham, pineapple juice, bread crumbs, parsley, onions, mustard, ginger, curry powder and pepper.mix well.
- Spread the ham mixture over the pineapple, patting it firmly over the pineapple.
- Bake for 45 minutes.
- Remove from the oven and allow to stand for 10 minutes.
- To serve, invert onto a serving platter.
- If any of the pineapple mixture remains in the bottom of pan, pat it on the loaf and serve immediately.

- Combine milk, eggs & soft bread crumbs.
- Add meat, mixing well.
- Shape into a loaf & place in a shallow baking pan.
- Combine brown sugar, vinegar, water dry mustard in a saucepan on medium heat.
- Bring to a broil, stirring constantly & pour over the ham loaf.
- Bake in a moderate oven (350 degrees) for one hour & 15 minutes.

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

"FRESH ZWIEBACK is baked in many German Mennonite homes to serve to friends who might drop in, or for the weekly Sunday dinner known as Faspa. Instead of butter, we served jelly with our zwieback. Cold sliced meats and cheeses were delicious with these tasty rolls, too!"

- Dissolve yeast in warm water; set aside. In a large bowl, combine milk and shortening; stir to melt shortening. When cool, add sugar and salt. Stir in yeast mixture and 3 cups flour; beat well. Add enough of the remaining flour to form a soft dough. Turn out onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch down dough and divide into fourths. Divide three of the pieces into eight pieces each; shape into smooth balls and place on greased baking sheets. Divide the fourth piece of dough into 24 small balls. Make an indentation in the top of each larger ball; press one small ball atop of each larger ball. Cover and let rise in a warm place until doubled, about 45 minutes. Bake at 375° for 20-25 minutes or until golden brown.

- Add all glaze ingredients together until well mixed.
- Mix all loaf ingredients together until well mixed.
- Add 1/2 glaze to meat.
- Grease a 10x4x3 inch loaf pan with cooking spray.
- Place loaf mixture in pan.
- Bake at 350 degrees for 45 minutes.
- Spread glaze over loaf.
- Bake 15 minutes more.
