8 slice bacon, cut into small strips
4 Tbsp sugar
1 tsp salt
1/2 tsp pepper
1 c white vinegar
6 green onions, thinly sliced
1 large head of cabbage, finely shredded (8 cups)

Steps:

  • 1. Fry the bacon till crisp and remove and drain on paper towels.
  • 2. Combine sugar, vinegar and salt and stir until dissolved, cooking briefly.
  • 3. Pour the hot vinegar mixture over the cabbage.
  • 4. Stir in the bacon and top with green onions.

Grandpa Al was from Cincinnati, of German descent, and knew how to make a fabulous cole slaw! Thanks to my niece Brandy for sharing her Dad's recipe.

1/2 lb bacon
2 eggs
1/2 cup sugar
cabbage, medium head, finely shredded
1/3 cup vinegar, white or cider

Steps:

  • Fry bacon and reserve grease. Crumble bacon and set aside. Pour bacon grease into saucepan and keep warm.
  • Beat eggs and sugar together.
  • Pour vinegar into warm bacon grease in a saucepan. Add sugar and egg mixture; bring to a boil. Remove immediately, pour over cabbage in large bowl. Add cooked bacon and mix well.
  • Let sit for a couple hours before serving.

1/4 lb chicken, diced
2 tablespoons sugar
4 tablespoons cider vinegar
2 cups cabbage, shredded
1 small onion, diced
salt and pepper

Steps:

  • Brown the chicken in a large and heavy skillet.
  • Whisk in the sugar and vinegar.
  • Stir in the cabbage and onions.
  • Cook for 5 minutes, stirring frequently.
  • Cover and reduce the heat.
  • Simmer until the cabbage is tender (about 20 minutes).
  • Serve warm.
