This easy pork and cabbage recipe, handed down through the generations of Nancy's family, is a delicious combination of pork with cabbage.

6 pork chops
2 tablespoons vegetable oil
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 teaspoon garlic powder , or to taste
1 head cabbage

Steps:

  • Gather the ingredients.
  • Season the pork with salt, pepper, and garlic powder.
  • In a large, deep skillet or Dutch oven over medium-high heat, brown the pork chops in the oil, turning to brown all sides. This is key since the cabbage will get its color and flavor from the caramelization of the pork. Work in batches if needed.
  • After the pork is sufficiently brown on all sides, core a head of green cabbage and cut it into 8 wedges.
  • Lower heat to medium-low to low. Add cabbage and a little more salt, cover, and simmer for 1 hour.
  • Continue simmering, stirring frequently, until the pork is falling apart and cabbage is brown and totally wilted.
  • Serve with bread and homemade applesauce .

7 bacon strips, divided
1 boneless pork shoulder butt roast (3 to 4 pounds), well trimmed
1 tablespoon coarse sea salt
1 medium head cabbage (about 2 pounds), coarsely chopped

Steps:

  • Line bottom of a 6-qt. slow cooker with 4 bacon strips. Sprinkle all sides of roast with salt; place in slow cooker. Arrange remaining bacon over top of roast., Cook, covered, on low 8-10 hours or until pork is tender. Add cabbage, spreading cabbage around roast. Cook, covered, 1 to 1-1/4 hours longer or until cabbage is tender. , Remove pork to a serving bowl; shred pork with 2 forks. Using a slotted spoon, add cabbage to pork and toss to combine. If desired, skim fat from some of the cooking juices; stir juices into pork mixture or serve on the side.

4 cups shredded red cabbage
1 onion, chopped
1/2 cup brown sugar
1/2 cup apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
3 lbs boneless pork shoulder

Steps:

  • Combine cabbage, onion, brown sugar, and vinegar in 4 to 4 quart slow cooker. Sprinkle roast with salt and pepper and brown in heavy skillet, about 5-6 minutes total, turning until browned on all sides. Place pork in slow cooker; cover, and cook on Low for 7-8 hours until pork registers 160 degrees F.

2 Granny Smith apples, peeled, thinly sliced (3 cups)
1 medium onion, finely chopped (1/2 cup)
1/2 cup cider vinegar
1/4 cup apple juice
2 tablespoons sugar

Steps:

  • In 12-inch skillet, cook bacon over medium-high heat, stirring occasionally, until crisp. Remove bacon from skillet to large bowl; reserve drippings in skillet. Sprinkle both sides of ribs with salt and pepper; cook in drippings until browned. Meanwhile, stir cabbage, apples and onion into bacon in bowl.
