My husband loves German chocolate cake and cheesecake, but is a diabetic, so I wanted to find something special for his birthday. It was a hit. Even our friends who want nothing to do with low fat anything love this cheesecake. Easy sustitutes like cottage cheese, Greek yogurt, Egg Beaters and Splenda help make this a healthier version.

1 1/4 cups chocolate graham cracker crumbs
1/4 cup cocoa
1/4 cup Splenda sugar substitute
4 tablespoons Smart Balance butter spread, softened
7 ounces German sweet chocolate, melted
1 1/2 cups low fat cottage cheese
12 ounces low-fat cream cheese
3/4 cup sugar
1/2 cup Greek yogurt
2 teaspoons vanilla
2 tablespoons flour
1 cup Egg Beaters egg substitute
1/4 cup Smart Balance butter spread
1/3 cup Splenda sugar substitute
1/3 cup evaporated milk, low fat
1/4 cup Egg Beaters egg substitute
1 1/3 cups flaked coconut
1 cup pecan nuts, chopped
1 teaspoon vanilla
3 ounces semisweet chocolate (optional)

Steps:

  • Preheat oven to 425 degrees F; Place a pan 1/3 full of water on bottom shelf, in the oven.
  • For crust mix together in a 9" spring form pan chocolate graham cracker crumbs, cocoa, 1/4 cup Splenda, and 4 Tbls Smart Balance for crust and press mixture across the bottom and about one inch up the sides. Place pan in refrigerator while mixing the filling.
  • To prepare filling melt chocolate and set aside. Blend cottage cheese in food processer until silky smooth and there are no lumps (hint, go an extra 2-3 minutes longer once you think all of the lumps are gone). In large mixing bowl combine, cottage cheese, cream cheese, 1/3 cup Splenda, yogurt and 1 tsp vanilla. Beat with a mixer until smooth. Add flour, 1 tablespoon at a time, blending well after each addition. Add Egg Beaters and melted chocolate. Blend well. Pour into crust. Place cheesecake on center shelf in the oven. Bake 10 minutes without opening oven door at 425 degrees;. Reduce oven to 225 degrees; and continue baking 35-45 minutes or until center is set. Remove from oven. With knife loosen sides and cool completely. Chill overnight before adding topping.
  • For topping melt Smart Balance in small saucepan. Stir in 3/4 cup Splenda, evaporated milk and 1/4 cup Egg Beaters. Cook and stir over low heat about 10 minutes or till thickened. Take off heat and stir in coconut and pecans. Spread topping over cake. Garnish with 1/3 cup coconut, pecan halves. Drizzle melted semisweet chocolate over top if desired. Keep refrigerated.

1 1/2 cups sugar-free chocolate cream-filled cookies (about 18 cookies)
2 tablespoons butter, melted
3 (8 ounce) packages cream cheese
1/2 cup butter
1 teaspoon vanilla
1 1/2 cups Splenda sugar substitute (or equivalent sweetener)
1 1/2 cups unsweetened baking cocoa
3 eggs
whipped cream
fresh fruit

Steps:

  • Pre-heat your oven to 325oF if using a silver 9 inch spring form pan; 300oF if using a dark non-stick 9 inch spring form pan. Mix crushed cookies and butter; press firmly onto bottom of pan. Bake 10 minutes.
  • Sift together splenda and unsweetened cocoa. Set aside. Beat cream cheese, vanilla and butter with electric mixer on medium speed until well blended. Add dry ingredients and beat to completely incorporate. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.
  • Bake 45 - 55 minutes or until center is almost set. Run Knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Top with whipped topping and fruit.
  • Helpful hints:.
  • *Cream cheese can be softened by microwaving on high for 30 - 45 seconds.
  • *For ease of serving; lightly butter ring of spring form pan and line the bottom with a circle of wax or parchment paper as well as lining the sides with strips of wax or parchment. Lightly buttering the sides and bottom help the paper to stick and when it's ready to serve when you take the ring off you just have to carefully peal the parchment/wax paper off. The sides of the cake don't get mangled this way.

1 cup low-fat buttermilk

Steps:

  • Preheat oven to 350°.
  • Coat 3 (8-inch) round cake pans with cooking spray, and dust with 1 Tbs flour.
  • Combine cocoa and chocolate in a small bowl; add boiling water, stirring until chocolate melts; set aside.
  • Combine sugars, butter, and oil in a large bowl, and beat at medium speed of a mixer until well-blended (about 5 minutes).
  • Add yogurt, extracts, and egg whites; beat well.
  • Lightly spoon sifted flour into dry measuring cups, and level with a knife.
  • Combine sifted flour through salt.
  • Add flour mixture to creamed mixture alternately with buttermilk, beginning and ending with flour mixture; beat in cocoa mixture.
  • Pour cake batter into prepared pans and sharply tap pans once on counter to remove air bubbles.
  • Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pans 10 minutes, and remove from pans; cool completely on wire racks.
  • Place 1 cake layer on a plate; spread with 1/3 cup Coconut-Pecan Frosting, and top with another cake layer.
  • Spread with 1/3 cup frosting (below), and top with remaining cake layer.
  • Spread remaining frosting over top and sides of cake.
  • Store cake loosely covered in refrigerator.
  • FROSTING:.
  • Melt butter in a medium saucepan over medium-high heat.
  • Add chopped pecans, and sauté until the pecans are browned (about 2½ minutes).
  • Remove mixture from heat, and stir in sugar, cornstarch, and salt.
  • Add milk, syrup, and egg yolks, and stir well.
  • Cook 2 minutes over medium-high heat or until thick, stirring constantly.
  • Remove from heat, and stir in flaked coconut and extracts.
  • Pour mixture into a bowl; cover and chill until slightly stiff (about 15 minutes).

1 package German Chocolate cake mix (regular size)
2 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar
4 large eggs, lightly beaten
FROSTING:
1 cup sugar
1 cup evaporated milk
1/2 cup butter, cubed
3 large egg yolks, lightly beaten
1 teaspoon vanilla extract
1-1/2 cups sweetened shredded coconut
1 cup chopped pecans

Steps:

  • Prepare cake batter according to package directions; set aside. In a small bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. , Pour half of the cake batter into a greased 13x9-in. baking dish. Gently pour cream cheese mixture over batter. Gently spoon remaining batter over top; spread to edge of pan., Bake at 325° for 70-75 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 1 hour. , For frosting, in a heavy saucepan, combine the sugar, milk, butter and egg yolks. Cook and stir over medium-low heat until thickened and a thermometer reads 160° or is thick enough to coat the back of a metal spoon. , Remove from the heat. Stir in vanilla; fold in coconut and pecans. Cool until frosting reaches spreading consistency. Frost cooled cake. Refrigerate leftovers.

Moist, rich cheesecake...and its not bad for you. Based on a recipe my aunt received while living in Germany. You can flavor it with a different extract, or stir in berries, chocolate chips, etc. I normally top it with homemade blueberry sauce. The fat free cream cheese does yield a slightly different taste than full fat, but its hardly noticeable. I use the splenda that measures cup for cup like sugar. The crust is optional.

2 tablespoons unsweetened applesauce
1/3 cup Splenda granular
1 egg white
1 1/4 cups flour
4 egg whites
24 ounces fat free cream cheese (3 packs)
3/4 cup Splenda granular
2 tablespoons flour
1 teaspoon vanilla
2 tablespoons skim milk

Steps:

  • For the crust: Cream applesauce, splenda, and the egg white; add flour. (You may need a tiny bit more applesauce - the consistency should resemble cookie dough.) Spread in the bottom of a 9" spring form pan and bake for 5 minutes at 450, remove and cool slightly.
  • For the filling: Cream the cream cheese, add splenda slowly, and vanilla. Cream in egg whites, add milk and flour.
  • Pour onto crust, and bake 10 minutes at 450; reduce the heat to 250 and bake an additional 60 minutes (or until center tests done.).
  • Cool to room temp, the refrigerate until chilled. Serve cold.
  • Note: My mom just tosses all of the ingredients into the mixer at once, but I think it comes out creamier if you mix them as listed.
  • To make blueberry sauce, place about 2 cups of frozen berries over medium heat, add 1/2 cup splenda (to taste) and simmer for 10 minutes (or until thickened.) Cool, and spread over room temperature cheesecake.
