2 ¼ cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
1 pinch sea salt
1 cup butter, softened
1 cup light brown sugar, packed
1 cup white sugar
2 large eggs, lightly beaten
2 teaspoons vanilla extract
1 cup semisweet chocolate chunks
1 cup sweetened shredded coconut
1 cup pecans, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with a silicone baking mats or parchment paper.
  • Whisk flour, cocoa powder, baking soda, and salt together in a bowl.
  • Beat butter, brown sugar, white sugar, eggs, and vanilla extract together in a bowl with an electric mixer until light and fluffy. Add flour mixture to butter mixture, 1/4 cup at a time, until dough is well-combined. Gently stir chocolate chunks, coconut, and pecans into dough. Scoop dough in 1-inch balls onto prepared baking sheets.
  • Bake in the preheated oven until cookies are set, 8 to 10 minutes. Cool completely.

2 sticks butter, softened
1 cup light brown sugar
1 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs, beaten
2 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa, such as Hershey's
1 teaspoon baking soda
Pinch salt
1 cup semisweet chocolate chips
1 cup shredded sweetened coconut, such as Baker's Angel Flake Coconut
1 cup chopped pecans

Steps:

  • Preheat the oven to 375 degrees F. Line baking sheets with parchment paper.
  • In a stand mixer or large bowl using a hand mixer, blend the butter, both sugars, vanilla and eggs. In a medium bowl, stir together the flour, cocoa, baking soda and salt. Gradually add the flour mixture into the butter mixture and blend until combined. Stir in the chocolate chips, coconut and pecans.
  • Drop the dough by tablespoonfuls onto the prepared baking sheets, 12 cookies per sheet, and bake 8 to 10 minutes. Cool on a baking rack.

1/3 cup vegetable oil
1/2 cup quick-cooking oatmeal
2 large eggs, slightly beaten
1 cup semi-sweet chocolate chips

Steps:

  • Pre heat oven to 350°.
  • Mix all ingredients together.
  • Drop by teaspoon onto ungreased cookies sheet.
  • Bake for 10-12 minutes.
  • Let cool for for 2 minutes and remove.
  • Hide them, they will disappear!

⅔ cup shortening
1 (16 ounce) container prepared coconut pecan frosting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the cake mix, eggs and shortening until well blended. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheet.

1/3 cup butter, softened

2 tablespoons water
1/2 cup flaked coconut
1 cup nuts
4 tablespoons cocoa (optional)

Steps:

  • With mixer on low speed blend, butter, eggs and water. By hand stir in cake mix. Add coconut and nuts.
  • Chill dough for approximately 1 hour before placing on parchment lined baking sheet.
  • Form into large balls, place on baking sheet and press down with hand.
  • Bake 350 degrees for 12 minutes. Let cool before removing from baking sheet.
  • Note: If you wish a more chocolate flavor add the optional 4 tablespoons of cocoa.

1/3 c brown sugar
2 Tbsp brown sugar
1 c white sugar
1 c unsalted butter (room temperature)
1 Tbsp fresh honey
2 eggs (room temperature)
1 tsp vanilla
1/2 c cocoa
3/4 tsp salt
1 tsp baking soda
2 1/4 c all purpose flour
2 c milk chocolate chips
3/4 c shredded coconut
1 c chopped pecans

Steps:

  • 1. Preheat your oven to 325 degrees. Place chopped pecans on cookie sheet and toast 8 minutes until it turns a golden brown in color, turning once after five minutes. After toasted, set the pecans aside and let them cool.
  • 2. Mix brown and white sugars together in bowl, add butter & mix until smooth. Slowly add honey, eggs, and vanilla until all ingredients are combined.
  • 3. In separate bowl sift together AP Flour, cocoa, salt, and baking soda. Add your chocolate chips, 1/2 cup toasted pecans and coconut to the dry mix . Add to the wet and mix until combined.
  • 4. Scoop out cookies of desired size onto parchment lined cookie sheet. (I normally use a 1 1/2" scoop). Top each cookie with a few chopped pecans. Bake 10-12 minutes, rotating pan after 6 minutes.

3 large egg yolks
1/2 c butter
