HäHNCHEN SCHNITZEL (GERMAN PAN FRIED BREADED CHICKEN CUTLETS) RECIPE - (4.3/5)

Hähnchen schnitzel (German pan fried breaded chicken cutlets) Recipe - (4.3/5) image

Provided by á-39535

Number Of Ingredients 13

2 large eggs
1 clove garlic, minced
1/2 teaspoon minced fresh parsley
coarse salt
ground pepper
1 cup fresh breadcrumb (made from 3 slices white bread or purchased bread crumbs
1/2 cup grated parmesan cheese
4 (6 ounce) chicken cutlets, pounded to an even 1/4 inch thickness
4 tablespoons olive oil
1 tablespoon butter
1/4 cup dry white wine
1/2 cup chicken broth
1 tablespoon fresh lemon juice

Steps:

  • Beat eggs in a shallow bowl with garlic, parsley, salt and pepper. In a separate shallow bowl, combine breadcrumbs (I pulse the bread slices in the food processor to get nice fresh crumbs) and parmesan cheese. Place chicken cutlets between two sheets of waxed paper and beat as thinly as possible with a meat mallet. Dip each cutlet into egg mixture to coat completely, then dredge in breadcrumb mixture, patting it on to help it stick. For each 2 cutlets, heat 2 tbsp oil in a large non-stick skillet over med-high heat. Cook 2 cutlets at a time until golden brown and cooked through, about 3 minutes per side. Transfer the cooked chicken cutlets to an oven-proof platter or pan, and keep warm in the oven while cooking the remaining cutlets and making the sauce. Wipe the skillet clean with paper towels. Heat butter until melted and add wine. Heat 30 seconds and stir in broth and lemon juice. Season with salt and pepper. Simmer 2 minutes. Pour broth mixture over cutlets and serve. Garnish with parsley and lemon slices.

GERMAN CHICKEN RECIPES: FRICASSEE RECIPE - (4.3/5)

German Chicken Recipes: Fricassee Recipe - (4.3/5) image

Provided by Thom7747

Number Of Ingredients 17

For the Fricassee:
fresh or frozen chicken (weight 1-3 pounds)
1/2 celery root, 2 carrots, 2 celery sticks, 1 leek
1 onion
2 bay leaves
2 cloves
2 liter purified water
100 g butter
3 tbsp flour
1 small jar white asparagus, whole or in pieces, 10 thin green asparagus, frozen or jar
frozen peas (or fresh)
2 small cans mushrooms
2 egg yolks
1/2 lemon
100 ml heavy cream
salt, pepper, nutmeg to taste
1/2 lemon

Steps:

  • Soup: - wash the chicken, dry it and put it a pan that is big enough for 2-3 liter liquid - add 2 liter cold water and bring it to a boil. - cut celery root in cubes, cut carrots in 2-3 pieces. - add the celery, the root, carrots, bay leaves to the broth. - cut the onion in 2 pieces, in every piece stick a clove, add it to the soup. - let it simmer for 1-2 hours or until chicken meat is tender. Fricassee: - take the cooked chicken out of the broth, drain it through a a sieve. Keep 1 liter for the fricassee. - Remove all the nice looking meat from the bones (don't use the skin, or dark brown pieces); cut bigger pieces into smaller pieces. - Drain mushrooms and asparagus. If you use frozen asparagus break the frozen asparagus in small pieces. - Add butter in an extra pan and on reduced heat, mix in the flour while stirring until the flour has a golden yellow color. The butter should not become brown. - Very slowly add the chicken broth, first a little bit, then more and more while whisking it. You want to avoid clumping. - Let it simmer for 10 minutes on low heat while stirring frequently. - Add chicken meat, asparagus, peas and mushrooms to the sauce. - Now add the yolk into the milk, and mix it carefully into the fricassee mix. Important: The sauce should not be boiling hot. Let it cool off a bit before adding the yolk/milk mix, and don't bring it to a boil again. - Squeeze the lemon and and add the juice to the sauce. Spice it with salt and pepper and nutmeg to taste. You can also add additional lemon juice if you think it needs more. You should taste the juice a bit.

GERMAN CHICKEN, HAM, AND CHEESE ROULADES

German Chicken, Ham, and Cheese Roulades image

A substantial and altogether winning appetizer. Flattened chicken breasts with thin slices of Westphalian or Black Forest ham, garlic and herbs rolled up and cooked in chicken stock and white wine. Chilled and sliced crosswise into rounds.

Provided by Olha7397

Categories     Chicken Breast

Time 1h

Yield 20 rounds

Number Of Ingredients 9

2 whole boneless skinless chicken breasts, halved (about 1 pound each)
4 slices Westphalian ham (thin slices) or 4 slices black forest ham (thin slices)
4 slices gruyere (thin slices) or 4 slices emmenthaler cheese (thin slices)
1 medium garlic clove, very finely chopped
1/4 teaspoon marjoram or 1/4 teaspoon sage
fresh ground white pepper
1/3 cup dry white wine
1/3 cup chicken broth
watercress or parsley sprig

Steps:

  • Place each chicken breast between sheets of plastic wrap and pound it lightly with the flat side of a cleaver or a wooden mallet until it is about 1/4 inch thick. Trim the slices of ham and cheese so that they are the same size as the flattened pieces of chicken. Place a slice of ham on each piece of chicken and cover the ham with a slice of cheese. Season with the finely chopped garlic, thyme, marjoram, or sage and white pepper. Roll up the pieces tightly and fasten with wooden picks, or tie securely with string.
  • Arrange the roulades in a greased baking sheet just large enough to hold them comfortably in one layer and pour the wine and broth over them. Cover with aluminum foil. Bake in a preheated 350°F oven 35 to 40 minutes or until the chicken is tender.
  • Transfer the roulades to a platter and cool to room temperature, then cover and chill. Remove the wooden picks or string. Slice the roulades crosswise into rounds and arrange on a chilled serving platter. Garnish with watercress or parsley sprigs and serve. Makes about 20.
  • VARIATION: In a medium sized, heavy skillet melt 2 Tablespoons Clarified Butter, or heat a mixture of 1 tablespoon each butter and flavorless vegetable oil or olive oil over moderate. Add the roulades and sauté, turning to brown lightly on all sides. Add the wine and chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer about 30 minutes or until the chicken is tender. Cool, chill, slice, and serve as directed above.

MOM'S VEGETABLE SOUP WITH CHICKEN OR BEEF(GERMAN GEMUSE SUPPE)

Mom's Vegetable Soup With Chicken or Beef(German Gemuse Suppe) image

Nothing can beat a bowl of steaming hot soup to warm the soul! This hearty chicken (or beef) vegetable soup is especially welcome and satisfying on a cold winter's day, or if you're feeling a bit under the weather. Serve with a crusty French bread or rolls and fresh butter; would also be great topped with matzo/matzoh balls, freshly chopped dill, and fresh lemon slices. From my mother, who has been making this soup since time immemorial. Enjoy!

Provided by BecR2400

Categories     Vegetable

Time 2h50m

Yield 8 serving(s)

Number Of Ingredients 13

1 round beef bones (soup bone) or 1 whole chicken
8 cups water
1 bay leaf
1 onion, cut into 1/2-inch chunks
3 sprigs fresh parsley
4 -5 medium carrots, sliced
1 leek, chopped (white and light-green parts only)
2 -3 stalks celery, sliced (with leaves)
1 -2 chicken bouillon cube
ground black pepper (do not add any salt)
3 -4 medium potatoes, peeled and chopped into 1-inch chunks
1 medium cauliflower, broken into rosettes
1/2 cup fresh parsley, chopped

Steps:

  • To an 8 quart stock pot, add beef bone or chicken, water, bay leaf, onion chunks, and sprigs of parsley. Bring to a boil; cover, then simmer about 1 to 1 1/2 hours until beef or chicken is almost done.
  • Remove meat bone or chicken to a plate and let cool enough to handle. Strip meat from the bones into chunks (discard bones), and set aside.
  • Meanwhile add sliced carrots, leek, chopped celery with leaves, chicken bouillon cubes and pepper (do not add salt). Bring to a boil; cover and simmer 5 to 10 minutes.
  • Add the potatoes and the chunks of meat from the cooled soupbone or the chicken; cover and simmer about 35 minutes longer.
  • Add cauliflower rosettes, cover, and simmer for 10 minutes. Add chopped fresh parsley and remove from heat.
  • Serve steaming hot with a crusty French bread or rolls and butter.
  • Makes good leftovers (soup is great on day 1, but tastes even better on days 2-3), and freezes/reheats well.
  • VARIATIONS: May add about 6 oz. frozen peas at same time as cauliflower (increase cooking time by about 5 minutes to compensate for the cold peas). I also sometimes add a cup or two of fresh sliced zucchini and/or green beans a few minutes after adding the cauliflower. Also good with sliced hot dogs or kielbasa sausage added during the last 5 minutes or so of cooking time (enough time to heat through).

GERMAN CHICKEN STEW WITH CARAWAY DUMPLINGS

German Chicken Stew With Caraway Dumplings image

HUHNEREINTOPF MIT KUMMELKLOSSEN. Eintopfgericht, means meal made in one pot. Many of these German stews are prepared days in advance and they are excellent reheated. The final stew will be tender, with the chicken falling off the bone, and if you make it with caraway dumplings, you'll have a substantial meal that can feed a group of people.

Provided by Olha7397

Categories     Stew

Time 2h20m

Yield 6 serving(s)

Number Of Ingredients 19

3 tablespoons unsalted butter
1 (4 lb) chicken, cut into serving pieces, plus gizzards,if any
1 small yellow onion, chopped
1/4 cup unbleached all-purpose flour
1/2 celeriac, peeled and cubed (about 3/4 pound)
2 parsley roots, peeled and cubed (about 3 1/2 pounds total)
4 carrots, sliced (about 1 pound)
10 small white onions, peeled (about 1 1/2 pounds)
10 black peppercorns
1 bay leaf
1 1/2 quarts boiling water
2 cups shelled peas, fresh or frozen
salt & freshly ground black pepper
3 tablespoons fresh lemon juice
2 large eggs
1/2 cup unbleached all-purpose flour
2 tablespoons vegetable oil
salt
2 tablespoons caraway seeds

Steps:

  • In a large casserole or stew pot, melt the butter over medium high heat.
  • Once it has stopped sizzling, brown the chicken, gizzards (if they are included), and chopped onion until golden, turning occasionally, about 12 minutes.
  • Sprinkle the flour over the chicken pieces and turn them to absorb the flour.
  • Add the celeriac, parsley roots, carrots, whole white onions, peppercorns, and bay leaf.
  • Cover with the boiling water, and bring to just below a boil.
  • Reduce the heat to very low, using a diffuser if necessary, and simmer until the meat is nearly falling off the bone and the vegetables are tender, about 2 hours.
  • At no time should the broth ever boil, otherwise the chicken will be tough.
  • Add the peas and cook for 10 more minutes.
  • Season with salt and pepper and add the lemon juice.
  • While the stew is simmering, prepare the dumplings.
  • Drop the dough by the tablespoon on top of the stewing chicken, making sure the balls don't sink into the gravy.
  • Cover and cook for 20 minutes without looking.
  • Serve immediately.
  • Makes 6 servings.
  • TO MAKE THE DUMPLINGS: Stir together the eggs, flour, vegetable oil, salt and caraway seeds.
  • NOTE: Celeriac and Parsley Root are wonderful vegetables for a stew.
  • Both, though, are big, bulbous, root-like vegetables with lots of ugly, hairy-looking rootlets coming off the central portion.
  • The best celeriac is that of medium size, without secondary corms, and with a modest clump of leaves.
  • Peel celeriac before using.
  • Parsley root is grown specifically for large roots.
  • The texture and density of the root are similar to those of celeriac.
  • They store well.
  • Peel parsley root before using.
