Everyone I've served it to has enjoyed it-except for one time, that is, when my husband tried to make it following my recipe, which I'd written down incorrectly! PANCAKE:
3 large eggs, room temperature
1 cup 2% milk
3/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
3 tablespoons butter
TOPPING:
2 tart baking apples, peeled and sliced
3 to 4 tablespoons butter
2 tablespoons sugar
Confectioners' sugar

Steps:

  • Preheat a 10-in. cast-iron skillet in a 425° oven. Meanwhile, in a blender, combine the eggs, milk, flour, salt and nutmeg; cover and process until smooth. , Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, for 20 minutes or until pancake puffs and edges are browned and crisp. , For topping, in a skillet, combine the apples, butter and sugar; cook and stir over medium heat until apples are tender. Spoon into baked pancake. Sprinkle with confectioners' sugar. Cut and serve immediately.

I was watching Diners, Drive-ins and Dives and this was made and looked too good. Luckily it was submitted for publishing on the site and wasn't on food.com. This is a recipe courtesy of Maria Bayer, Magnolia Pancake Haus. People eat it for breakfast at the restaurant but could also be served as a dessert.

1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 granny smith apple, peeled, cored and thinly sliced
1/2 cup whole milk
1 tablespoon vanilla extract
3 eggs
1/2 cup all-purpose flour
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 cup brown sugar
4 tablespoons cold butter
powdered sugar, for serving
whipped cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
  • Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
  • Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
  • Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

2 tart apples, peeled, cored, thinly sliced
3 tablespoons sugar
1 lemon, juice of
1/4 teaspoon ground cinnamon
6 tablespoons unsalted butter
3 eggs
3/4 cup milk
3/4 cup flour
1/2 teaspoon salt
confectioners' sugar

Steps:

  • Combine apples, sugar, 2 T of the lemon juice and cinnamon in a medium bowl; toss to coat apples.
  • Melt 2 T of the butter in a skillet over medium-high heat; add apples, cook just until soft, 3 minutes; remove from heat and set aside.
  • Heat oven to 450 degrees.
  • Whisk together eggs and milk in a bowl until well blended, whisk in flour and salt to form a slightly lumpy batter.
  • Melt remaining 4 T of the butter in an oven-proof 10-inch skillet (a well-seasoned cast iron skillet is good) until just beginning to brown, about 2 minutes; spread apples in bottom of pan, pour batter over apples.
  • Bake until the pancake is golden brown and puffed, about 20 minutes; invert onto a large platter.
  • Sprinkle with remaining lemon juice; dust with confectioners' sugar.

This is a recipe I developed years ago, a small amount of baking powder is what makes this recipe special! it's a family favorite and takes very little time to throw together, I sometimes just bake the complete recipe in a 10-inch round cake pan, but two smaller pans will do fine also, you will *love* this!:)

4 large apples, peeled and sliced
3/4 cup flour

1/3 cup sugar (can use 1/2 cup sugar)

  • Set oven to 400 degrees F.
  • Spray two 8-inch round cake pans with cooking spray.
  • Place 2 Tbsp butter in each of the pans.
  • Place the pans in the oven and bake until the butter has melted; remove from oven.
  • In a bowl, beat the flour, 1/4 teaspoons baking powder, sugar (if using) salt, milk and eggs until smooth, then allow to stand for 30 minutes.
  • Arrange the apple slices into the two pans onto the melted butter.

We saw this recipe on Michelle Greenwald's (www.magicalmeltingpot.com)Yahoo Blog, and gave it a try. We both assumed it would be too sweet and gooey for breakfast, but since it's dreary and rainy this morning, figured we'd fire up the oven and give it a try. YUM! It wasn't too sweet at all, and the pancake had a bit of a custardy taste. It was easy to put together and made enough for the both of us, with a couple bites of crust left over for our four dogs. The recipe omits instructions for making up the batter, but we just combined the ingredients and mixed well. We used a 10-inch iron skillet, but any oven-safe non-stick pan would do.

2 tablespoons unsalted butter
1/3 cup flour
1 teaspoon sugar

Steps:

  • Preheat oven to 400 degrees [i use a Cuisinart larger sized toaster oven - a great appliance for cooking for 2].
  • In a cast iron or LeCreuset ovenproof pan, cook sliced apple in melted butter until softened. Remove from heat.
  • Mix flour, sugar, salt. Add half and half and blend. Add eggs and whisk thoroughly. Pour this over the sliced apples and place in preheated oven.
  • Bake in oven for 12-15 minutes. Remove when puffed and not browned.
  • Melt butter in pan while pancake is baking. Add cinnamon sugar to taste. Dish up pancake and drizzle melted butter/cinnamon sugar over each serving.

2 medium granny smith apples (sliced thin)

  • 1. Preheat oven to 400*...Place (2) 9 x 1 1/2" cast iron skillets in oven....
  • 2. Beat eggs well, add flour, milk, and salt in medium mixing bowl on medium speed for 1 minute...Remove skillets from oven.
  • 3. Place 2 TBSP of butter in each skillet; move around till pans are coated well on bottoms and sides.

Steps:

  • Preheat the oven to 450 degrees. Beat together the eggs, milk, flour, and salt until very smooth. Add some very thinly sliced apples if desired. In a heavy 12-inch skillet, melt about 1 1/2 Tablespoons butter. As soon as it is quite hot, pour in the batter and put the skillet in the oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
  • During the first 10 to 15 minutes of baking, the pancake may puff up in large bubbles. If it does, pierce it thoroughly with a fork or skewer.
  • While the pancake is baking, prepare the apple filling. Peel and thinly slice a pound of apples. Saute them lightly in 1/4 cup butter and add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. The apples should be just tender, not too soft. About 8 to 10 minutes of cooking over a medium flame should be plenty. (The filling can be prepared ahead and re-heated just before serving.).
  • When the pancake is ready, slide it onto an oval platter, pour the apple filling over one side, and fold the other side over. A little melted butter can be poured on it you choose, and the whole thing carefully sprinkled with powdered sugar through a sieve. Serve it at once, slicing pieces off crosswise.

3/4 cup flour
3/4 cup milk
3 eggs
2 Tbsp. sugar
1 tsp. vanilla
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Brown Sugar & Cinnamon Cream Cheese Spread
1/2 cup JET-PUFFED Marshmallow Creme
1 can (21 oz.) apple pie filling, warmed

Steps:

  • Heat oven to 450°F.
  • Add butter to 9-inch pie plate; heat in oven 1 min. or until melted. Tilt pie plate to evenly coat bottom and side with butter. Beat flour, milk, eggs, sugar and vanilla with whisk until blended; pour into prepared pie plate. Place on lowest oven rack.
  • Bake 18 min. Reduce oven temperature to 350°F. Bake 10 min. or until edges are puffed and golden brown. Meanwhile, beat cream cheese spread and marshmallow creme with mixer until blended.
  • Fill pancake with pie filling; top with cream cheese mixture.

2 medium apples, pared, cored & sliced
4 tablespoons brown sugar, firmly packed & divided
3/4 teaspoon ground cinnamon
3 eggs
1/2 cup milk
1/4 cup flour
1/2 teaspoon salt

Steps:

  • Preheat oven to 450º.
  • Melt butter in a 9 or 10 inch skillet with an ovenproof handle (cast iron works great).
  • Arrange apple slices in a single layer over butter.
  • Combine 2 tablespoons brown sugar with the cinnamon & sprinkle over the apples.
  • Cook over medium heat, stirring gently, until apples are slightly tender ( 5-6 minutes).
  • Beat eggs, milk, flour & salt till smooth; pour over apple mixture.
  • Bake for 8 minutes; remove from oven.
  • Lower temp to 375º.
  • Sprinkle remaining 2 tablespoons brown sugar over pancake.
  • Return to oven & bake till evenly browned; 8-10 minutes.
  • Loosen pancake around the edges & cut into wedges.

1 tablespoon granulated sugar
1/2 teaspoon table salt
2 large eggs
2/3 cup half-and-half
1 teaspoon vanilla extract
2 tablespoons unsalted butter
1 1/4 pounds Granny Smith apples or Braeburn apples (3 to 4 large apples), peeled, quartered, cored, and cut into 1/2-inch-thick slices
1/4 cup light brown sugar or dark brown sugar
1/4 teaspoon ground cinnamon
1 teaspoon lemon juice
Confectioners' sugar for dusting

Steps:

  • 1. Adjust oven rack to upper-middle position; heat oven to 500 degrees. 2. Whisk to combine flour, granulated sugar, and salt in medium bowl. In second medium bowl, whisk eggs, half-and-half, and vanilla until combined. Add liquid ingredients to dry and whisk until no lumps remain, about 20 seconds; set batter aside. 3. Heat butter in 10-inch ovenproof nonstick skillet over medium-high heat until sizzling. Add apples, brown sugar, and cinnamon; cook, stirring frequently with heatproof rubber spatula, until apples are golden brown, about 10 minutes. Off heat, stir in lemon juice. 4. Working quickly, pour batter around and over apples (see illustration 1 from "Step by Step: Preparing the Pancake). Place skillet in oven and immediately reduce oven temperature to 425 degrees; bake until pancake edges are brown and puffy and have risen above edges of skillet, about 18 minutes. 5. Using oven mitts to protect hands, remove hot skillet from oven and loosen pancake edges with heatproof rubber spatula; invert pancake onto serving platter (see illustrations 2 and 3 from "Step by Step: Preparing the Pancake"). 7 large eggs
1 tablespoon pure vanilla extract
3/4 cup sugar
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
2 tablespoons unsalted butter
3 Golden Delicious apples, peeled, cored and cut into 1/2-inch wedges
1 1/2 teaspoons ground cinnamon
1 1/2 tablespoons sugar
1 tablespoon confectioners' sugar
1/4 cup creme fraiche
1 cup strawberries, for garnish

Steps:

  • Preheat broiler.
  • For the batter: in a blender or food processor, combine the eggs, vanilla, and 3/4 cup sugar. Blend for about 15 seconds, until combined. Add the flour and baking powder and mix for 60 seconds more, or until very smooth. Set the batter aside.
  • Heat a 12-inch nonstick skillet over medium heat and melt the butter. Add the apples and cook until softened, about 4 to 5 minutes. Add the cinnamon and remaining 1 1/2 tablespoons sugar, sprinkling them evenly over the apples, and cook, stirring, until the apples are glazed and slightly translucent at the edges, about 2 minutes.
  • Distribute the apples evenly in the skillet and pour the batter over them. (Chef's Note: You may also make 4 individual pancakes, using a smaller pan. Just use 1/4 of the apples and 1/4 of the batter for each.) Cook until the bottom seems quite firm, about 8 minutes. Transfer the pan to the broiler and, while watching carefully, cook until the pancake is firm throughout and golden on top.
  • Cut the pancake into 4 wedges and transfer them, apple side up, to serving plates. Sprinkle with the confectioners' sugar, place a dollop of crème fraiche on top, and garnish with the strawberries.

1/2 cup all-purpose flour
1/2 teaspoon baking powder

1/8 teaspoon coarse salt
1/8 teaspoon ground nutmeg
4 large eggs
1 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla
Apples:
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup thinly sliced Granny Smith apples
Garnish:
powdered sugar, to taste

Steps:

  • 1) To prepare batter, combine flour, baking powder, 1 tbsp. sugar, salt and 1/8 tsp. nutmeg in a medium bowl, stirring with a whisk. Combine eggs, milk, butter and vanilla in a 2+ cup liquid measuring cup, stirring with a whisk. Add egg mixture to flour mixture and let stand for 20-30 minutes. 2) Preheat oven to 425. 3) Coat the bottom and sides of a 10" ovenproof skillet with cooking spray (or grease with butter in a pinch). Combine 1/2 cup of sugar, cinnamon and nutmeg for apple mixture in a small bowl, then sprinkle half of this mixture evenly over the sides and bottom of the skillet. Arrange the thin apple slices in an even single layer across the pan. Sprinkle remaining sugar mixture over the apples. Cook over medium low heat until apples soften and mixture bubbles (~8 minutes). Remove from heat and slowly pour batter over the apple mixture. 4) Bake at 425 for 15 minutes, then reduce heat to 375 and continue to bake for roughly 13 minutes. Pancake should puff 3-4 inches from the skillet, so be sure to adjust the racks in your oven to accomodate this distension. Sift powdered sugar over the top of pancake, or serve as dessert with a side of vanilla ice cream.

2/3 cup half and half
1/2 cup all purpose flour
4 tbsp unsalted butter, melted
4 tbsp sugar
3/4 tsp ground cinnamon
A pinch of salt
1 large Granny Smith apple, peeled, halved, cored
1 teaspoon powdered sugar

Steps:

  • Preheat oven to 400 degrees F. Place eggs, half and half, flour, 2 tsbp melted butter, 1 tbsp sugar, 1/4 tsp cinnamon and salt in work bowl. Whisk until mixture is smooth, scraping down the sides of work bowl once, about 20 seconds. (Can be prepared one day ahead. Transfer batter to bowl. Cover and refrigerate. Stir thoroughly before using.) Slice the Granny Smith apple slices, and then cut across the slices to create thin, one-inch pieces. Brush remaining 2 tbsp. butter over bottom and sides of 10-inch, cast-iron or other oven-proof skillet. Add apple slices. Sprinkle remaining 3 tbsp. sugar and 1/2 tsp cinnamon over apples. Cook over medium heat until slices are just tender, stirring occasionally to prevent burning or sticking, about 6 minutes. Pour batter over apples. Place skillet in over and bake until pancake is puffed, golden and cooked through in the middle, about 15 minutes. Remove hot skillet from the oven. Cut around pancake. Invert onto platter. Sift powdered sugar over and serve.
