- 1. Preheat the grill to high.2. Thread the vegetables on the skewers, alternating bell peppers and tomatoes, placing mushrooms between each. Brush the kebabs with olive oil and season with salt and pepper.3. When ready to cook, arrange the kebabs on the hot grate and grill, turning with tongs, until nicely browned, 4 to 6 minutes per side (8 to 12 minutes in all), brushing with olive oil. Squeeze lemon juice over the vegetables and serve immediately.Serves 4

GEORGIAN VEGETABLE KEBABS
A very simply seasoned dish using whole peppers, mushrooms and tomatoes. Tomatoes should be ripe but still firm (so they don't fall off the skewer). Use flat skewers if possible. Adapted from the Barbecue Bible. I've changed the number of tomatoes from 6 to 8, so they would come out even.

- Brush with olive oil and season with salt and pepper.
- Arrange on grill.
- Cook, turning with tongs, until nicely browned, 4-6 minutes per side, basting with oil.
- Squeeze lemon juice over vegetables and serve.
