2 ½ pounds fresh peaches - peeled, pitted and chopped
½ cup white sugar
1 pint half-and-half cream
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
2 cups whole milk, or as needed

Steps:

  • Puree peaches with the sugar and half-and-half in batches in a blender or food processor.
  • In a gallon ice cream freezer container, mix together the peach mixture, sweetened condensed milk, evaporated milk, and vanilla. Pour in enough whole milk to fill the container to the fill line, about 2 cups.
  • Follow the manufacturer's instructions to freeze the ice cream.

2 cups fresh peach wedges
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 cup milk
1/2 teaspoon ground cinnamon

3 eggs, beaten
1 loaf challah bread, cut into 1 1/4-inch-thick slices
Butter, for coating
Confectioner's sugar, for garnish
Whipped cream, for garnish
Candied Pecans, for garnish, recipe follows
1/4 cup brown sugar
1/4 cup granulated sugar
Pinch ground cinnamon
1 cup pecans, toasted

Steps:

  • For the filling: In a saucepan set over low heat, add the peaches, sugar, cinnamon and ginger. Stir until the peaches are evenly coated, and then simmer until the peaches are tender and the syrup thickens, 15 to 20 minutes. Place the peach mixture in a blender and pulse until thick and chunky.
  • For the French toast: In a large, shallow bowl, add the milk, cinnamon, vanilla and eggs, and whisk together. Dip the bread in the batter and to soak up the liquid.
  • Heat a griddle over medium-high heat, then add some butter. Place the soaked bread on the griddle and cover with large metal bowl to keep the heat in. Cook until golden brown on both sides, 2 to 3 minutes per side.
  • Layer one slice of French toast, a spoonful of the peach filling and a second slice of French toast on four serving plates. Top each plate with confectioner's sugar, whipped cream and some Candied Pecans.
  • Preheat the oven to 350 degrees F.
  • In a saucepan set over medium heat, add the brown sugar, granulated sugar, cinnamon and 2 tablespoons water. Mix to combine and cook until the mixture begins to bubble, 3 to 5 minutes.
  • Place the toasted pecans on a sheet tray and pour the hot mixture over the top and toss until the pecans are evenly coated. Place in the oven for 6 to 8 minutes. Cool the pecans to handle. Crumble the candied pecans and toast 2 more minutes. Yield: 1 cup

1/4 cup gingersnap crumbs
1/4 cup pecan meal (finely ground pecans)
2 tablespoons salted butter
One 8-ounce block cream cheese, at room temperature
One 8-ounce tub mascarpone, at room temperature
1/4 cup sour cream
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Pinch kosher salt
1 tablespoon dark brown sugar
Pinch ground ginger
Pinch ground cinnamon
2 peaches, chopped (about 2 cups)
2 teaspoons bourbon
1 teaspoon lemon juice

Steps:

  • Whisk together the ground gingersnaps and pecans in a small mixing bowl. Melt 1 tablespoon of the butter and stir into the mixture until combined. Place 1 tablespoon of the crumb mixture into the bottom of each of six 4-ounce jars. Press into an even, compact layer. Set aside.
  • To make the filling, place the cream cheese, mascarpone, sour cream, confectioners' sugar, vanilla and salt in the bowl of an electric mixer fitted with the beater attachment. Whip just until smooth, about 1 minute. Drop 3 tablespoons of filling into each jar. Give each jar a few gentle taps against the counter to even out the filling. Secure the lids on top of the jars and refrigerate to set for at least 1 hour.
  • To make the Georgia peach topping, place a large nonstick skillet over medium heat. Add the remaining tablespoon butter and heat until melted. Stir in the brown sugar, ginger and cinnamon. Cook until the sugar dissolves, about 2 minutes. Add the peaches and stir to coat. Add the bourbon and lemon juice. Cook, stirring occasionally, until the peaches are slightly softened, about 3 minutes more. Set aside to cool.
  • Remove the lids from the cheesecake jars. Dollop 1 tablespoon of peach compote on top of each cheesecake. Serve immediately or secure the lids and refrigerate until ready to serve.

1/2 lemon, juice of
2 large eggs
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, 1/2 cup of the sugar, and the lemon juice in a bowl.
  • Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes.
  • Remove the peaches from the refrigerator and drain the juice into another bowl.
  • Return the peaches to the refrigerator. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
  • Whisk in the remaining 3/4 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.

One 16-ounce bag frozen peaches (about 3 1/2 cups)
1/3 cup orange juice
1/4 cup sorghum or honey
2 tablespoons cornstarch
Pinch kosher salt
1/4 cup confectioners' sugar
1 bunch fresh mint

Steps:

  • For the buttermilk chess pie: Place a baking sheet in the oven and preheat the oven to 350 degrees F.
  • Line a 9 1/2-inch pie pan with the pie dough. Crimp the edges as desired.
  • Combine the melted butter, eggs, granulated sugar, sorghum and all-purpose flour in a large mixing bowl. Whisk in the buttermilk, fresh lemon juice and vanilla extract. Pour the buttermilk mixture into the pie shell and gently place on top of the preheated baking sheet in the oven.

2/3 cup light brown sugar, packed
1 tablespoon unsalted butter
1 1/4 cups water
1 1/2 cups sifted all-purpose flour
1 tablespoon baking powder
salt, a pinch
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2/3 cup light brown sugar, firmly packed
3/4 cup milk

Steps:

  • Blanch and peel peaches; cut them in half; remove the pits, and slice them coarse.
  • Note: to blanch peaches-have ready a large bowl of ice-cold water, a slotted spoon, and a saucepan of boiling water deep enough to cover the peaches; with the slotted spoon place the peaches in the boiling water, two or three at a time (if the peaches are fully ripe, they will need only about 15 seconds in the boiling water, if not quite ripe, they will need more); with the slotted spoon, raise a peach from the water and move your thumb firmly over the skin; if the skin has loosened enough it will wrinkle and feel loose; at that point transfer it to the ice water; peel with your fingers, starting at the stem end.
  • Place sliced peaches in a 3-quart saucepan with the sugar, butter, and water; stir briefly over med-high heat just until the mixture comes to a boil; remove from the heat and set aside.
  • Adjust oven rack to the middle of the oven; preheat to 375°.
  • Generously butter a shallow ovenproof baking dish with at least a 2-quart capacity; it can be larger but not smaller.
  • Sift together the flour, baking powder, and salt; set aside.
  • In a small bowl, beat the butter with the vanilla and almond extract; beat in the sugar to mix.
  • On low speed add in half of the milk, then half of the sifted dry ingredients, the remainder of the milk then the remainder of the dry ingredients, scraping the sides of the bowl with a rubber spatula as needed and beating only until mixed.
  • Pour the batter into the baking dish and spread it smooth.
  • With a large slotted spoon, place the prepared peaches evenly over the batter (reserve the peach syrup for the moment); place the dish in the oven.
  • Now, pouring the peach syrup (it will be thin) over the fruit will be easier if you pour it in two additions into a 2-cup measuring cup, then reach into the oven and quickly pour it over the top of the fruit in the baking dish.
  • Place a cookie sheet on a rack below the baking dish to catch spills.
  • Bake for 20 minutes; then decrease temperature to 325° and bake for 25 minutes.
  • Serve immediately or within 20-30 minutes on large flat plates or in dessert bowls, spooning some of the thickened syrup from the bottom over or alongside each portion.
  • Serve plain or with ice cream.

4 skinless chicken breasts, bone-in or 8 chicken thighs
1/2 cup flour, seasoned with
salt and pepper, to taste (remove and reserve 2 TBSP for sauce)
2 tablespoons olive oil or 2 tablespoons canola oil
1 (28 fluid ounce) can sliced peaches
1 cup orange juice
3 tablespoons brown sugar
2 tablespoons vinegar
1 teaspoon dried basil leaves or 2 tablespoons chopped fresh basil
1 teaspoon fresh ginger, minced
1 teaspoon nutmeg
1 -2 clove garlic, minced

Steps:

  • Dredge chicken in seasoned flour, shake off and lay on wire rack to dry, abot 10 minutes.
  • Heat oil in deep sided saute pan, until it is quite hot.
  • Cook chicken, turning to brown evenly, about 3-5 minutes.
  • Remove chicken to paper towel to drain.
  • There should be 1 TBSP of oil in pan, if not, add a little more.
  • Reduce heat to medium and whisk reserved peach and orange juices until smooth.
  • Stir in remaining ingredients, bring to a boil, cook 3 minutes.
  • Add chicken to pan, cover and continue to cook until chicken is longer pick in center, about 25 minutes.
  • Add peach slices and heat through.

14 saltine crackers, finely crushed
1 teaspoon vanilla extract
¼ teaspoon baking powder
½ cup chopped pecans
7 fresh peaches - peeled, pitted, and sliced
2 cups sweetened whipped cream

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large glass or metal bowl, whip the egg whites until they can hold a peak. Gradually sprinkle in the sugar, while continuing to whip the egg whites to stiff peaks. Fold in saltines, vanilla, baking powder and pecans. Spread evenly into an ungreased 9 inch deep dish pie plate.
  • Bake for 30 minutes in the preheated oven, or until a skewer inserted into the center comes out clean. Remove from the oven, and cool. The crust will puff and crack as it cools.

2 tablespoons canola oil
1 sweet onion, finely chopped
1 clove garlic, finely chopped
One 1-inch piece fresh ginger, peeled and grated
1 1/2 cups ketchup
1/2 cup peach jam
2 ripe peaches, pitted and cut into 3/4-inch chunks
2 tablespoons apple cider vinegar
Coarse kosher salt and freshly ground black pepper
3/4 cup dark brown sugar
1/4 cup kosher salt
2 cups boiling water
3 cups ice cubes
4 bone-in pork loin chops (1 1/2 to 2 pounds)

Steps:

  • Place a medium saute pan over medium heat and add the oil. Add the onion and cook until translucent, about 2 minutes. Add the garlic and ginger and cook until fragrant, 45 to 60 seconds.
  • Add the ketchup, peach jam and peaches. Reduce heat to low and simmer until the sauce thickens, about 30 minutes, stirring occasionally. Add the vinegar and season with salt and pepper. Remove from the heat and set aside to cool.
  • Meanwhile, in a medium heatproof bowl, dissolve the brown sugar and kosher salt in boiling water, then stir in the ice cubes to cool. Add the pork chops, cover the bowl with plastic wrap and refrigerate about 30 minutes. Remove the pork chops from the brine, rinse them well and dry thoroughly with paper towels.
  • Pour half the barbecue sauce into a shallow baking dish; reserve remaining sauce. Add the pork chops, turning to coat both sides.
  • Prepare a medium-hot grill or grill pan. Grill the chops until cooked through, about 5 minutes per side, basting chops with barbecue sauce. Remove from the grill and let stand 5 minutes before serving. Serve with the remaining sauce.

3/4 c plus 2 tbsp granulated sugar
1 c self-rising flour
1/4 c plus 1/4 cup (1 stick) butter, melted
1 can(s) (28 ounces) sliced peaches, undrained

Steps:

  • 1. Preheat the oven to 350 degrees F. Grease an 8X11 baking dish with non-stick cooking spray and set aside. In a medium-size mixing bowl coarsely mix 3/4 cup of the sugar, the flour, and 1/4 cup melted butter together. Sprinkle about one-third of this mixture on the bottom of the baking dish.
  • 2. Add the peaches and juice. (If the juice from the peaches does not cover the peaches, add a small amount of water just to cover the peaches. Too little liquid will make the cobbler dry. Too much liquid will make it soupy.)
  • 3. Top the peaches with the remaining sugar/flour mixture. Sprinkle the top with the remaining 2 tablespoons sugar and the remaining 1/4 cup butter. Bake for 30 to 40 minutes or until brown and bubbly. Serve hot! ***HINT: Fresh peaches can be used. When using fresh peaches, peel and slice them, sprinkling the slices with an additional 1/2 cup sugar. Georgia Peach BBQ Turkey Wings image

8 pounds turkey wings (about 8 split wings, tips discarded)
1/2 cup canola oil
3 tablespoons store-bought barbecue spice blend
1 shallot, chopped
4 cloves garlic, quartered
3 ripe peaches, pitted and chopped (about 2 cups)
2 tablespoons tomato paste
1 tablespoon pure maple syrup
1 cup vegetable or chicken stock
2 dashes Worcestershire sauce
1/2 teaspoon smoked paprika
Kosher salt
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Place the turkey wings in a large mixing bowl. Pour in the oil and barbecue spice blend. Massage the wings until evenly coated on all sides. Place the seasoned wings on the prepared baking sheet. Set the oil remaining in the bowl aside. Roast until the wings reach an internal temperature of 165 degrees F and are golden brown and crispy, about 1 hour 20 minutes.
  • Meanwhile, prepare the barbecue sauce: In a small saucepan over medium heat, pour in the oil remaining from the bowl the wings were tossed in. Add the shallot and garlic. Cook until softened, 3 to 5 minutes. Add the peaches, tomato paste and maple syrup. Cook, stirring frequently, until the mixture begins to caramelize. Pour in the stock and stir to combine. Reduce the heat to medium low. Simmer, stirring occasionally, until slightly thickened, about 20 minutes. Stir in the Worcestershire sauce and paprika. Use an immersion blender to puree the mixture until smooth. Add kosher salt to taste.
  • Remove the wings from the oven and brush generously with the sauce. Return to the oven and broil for 3 minutes, until the sauce bubbles and begins to brown. Serve immediately garnished with parsley and with extra sauce as desired.

1/3 cup sugar
1 tablespoon cornstarch
1/2 cup canned peach syrup (from the canned peaches)
4 cups drained canned peaches
1/4 teaspoon almond extract (optional)
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon or 1/4 teaspoon nutmeg
3 tablespoons margarine or 3 tablespoons butter
1 large egg, beaten
3 tablespoons low-fat milk
whipped cream (optional) or ice cream (optional)

Steps:

  • Heat oven to 400°F Lightly grease an 8x8x2-inch baking pan. Prepare the filling by combining the sugar, cornstarch and syrup in a saucepan. Cook over medium heat, stirring, until the mixture boils and is thick. Add the canned peaches and almond extract. Keep the filling warm while you prepare the topping.
  • To prepare the topping, mix the flour, sugar, baking powder and cinnamon. Cut in the margarine until the mixture resembles coarse crumbs. Combine the egg and milk in a small bowl, and stir into flour mixture just until moistened. Pour the filling into the prepared pan. Drop the topping into 6 mounds on top of the hot filling. Bake for 20 to 25 minutes or until a toothpick inserted into topping comes out clean. Serve warm with whipped topping or ice cream, if desired.

4 eggs
1-1/4 cups sugar, divided
1/2 teaspoon salt
4 cups whole milk
2 cans (14 ounces each) sweetened condensed milk
1-3/4 pounds fresh peaches, peeled and sliced

Steps:

  • In a large heavy saucepan, whisk eggs, 1 cup sugar and salt until blended; stir in milk. Cook over low heat until mixture is just thick enough to coat a spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in sweetened condensed milk. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., When ready to freeze, in a small bowl, mash peaches with remaining sugar; let stand 30 minutes. Fill cylinder of ice cream freezer two-thirds full with custard, stirring in some of the peaches; freeze according to manufacturers' directions. Refrigerate remaining mixture until ready to freeze., Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture and peaches.

My family and friends loves my pies and I make them for when we have company or holidays. It is so delicious and sweet and tasty.

pastry for a 9-10-inch double crust pie
1 c sugar
4 Tbsp flour
1/2 tsp cinnamon or nutmeg
dash salt
1 tsp vanilla extract
6 c fresh peaches, peeled and sliced
2 Tbsp butter or margarine
egg wash made with 1 egg yolk and 2 tablespoons water
sanding sugar

Steps:

  • 1. Line pie plate with pastry. Combine sugar, flour, spice and salt. Add to peaches, mix lightly. Fill shell. Dot with butter. Add top crust; crimp edges. Brush with egg wash and sprinkle with sanding sugar. Bake in a 400 degree oven for 45-50 minutes or until juices are bubbling and the crust is nicely browned. Serve warm with a big scoop of vanilla ice cream.

HAM GEORGIA WITH PEACH GARNISH



Ham Georgia with Peach Garnish image

1 fully cooked ham (16 to 17 pounds)
1/2 cup peach preserves
1 teaspoon freshly ground black pepper
2 tablespoons dried mustard
1 tablespoon balsamic vinegar
1/2 teaspoon ground allspice
2 tablespoons confectioners' sugar
1 cup water, for deglazing drippings from baked ham
3 cups demi-glace, store bought
4 tablespoons unsalted butter
3 pounds large ripe peaches (about 10), each pitted (but not peeled) and cut into 8 wedges
1/3 cup sugar
4 ounces dried peaches, cut into 1/2-inch slices
3 tablespoons cider vinegar
4 cups combined demi-glace and deglazed drippings
1 teaspoon salt
1 teaspoon potato starch dissolved in 1 tablespoon water (for thickening, if needed)
1 cup julienned basil leaves

Steps:

  • Put the ham in a large stockpot, and fill the pot with enough cold water to cover the ham. Bring the water to 170 to 180 degrees F (below the boil; if boiled, the ham will crack open at the joint). Cook at that temperature for 3 hours, then let cool in the cooking water.
  • When ready to proceed with the recipe, remove the ham from the water. With a knife, remove the skin from the ham, and trim the surface of the meat where it is brown and skin-like around the shank bone. To make carving easier later, remove the pelvis or hipbone by running a knife around it. When the skin has been removed, trim off all but a thin layer of white fat from the surface of the ham.
  • Run the point of your knife in a crisscross pattern through the remaining fat on the top of the ham, cutting slightly into the surface of the meat. This scoring will help the glaze adhere to the meat while it cooks. Preheat the oven to 350 degrees F.
  • In a small bowl, mix the preserves, pepper, mustard, balsamic vinegar, and allspice together.
  • Spread the glaze coating on the top surface of the ham, place it in a roasting pan, and bake in the 350 degree F oven for 30 minutes. Reduce the heat to 325 degrees F, and continue cooking the ham for 1 hour. Sprinkle the powdered sugar on top, and cook for another 30 minutes, until nicely glazed. Transfer the ham to a platter, and set it aside in a warm place while you make the peach sauce. Discard the accumulated fat in the roasting pan, and add the 1 cup of water to the drippings in the pan, stirring to loosen and mix in the solidified juices. Add the demi-glace, and bring to a boil. Reserve for use in peach sauce.
  • For the peach sauce: Heat the butter in two large skillets, 2 tablespoons of butter per skillet. When it is hot, add half of the peach wedges to each skillet, and saute for 2 to 3 minutes. Sprinkle with the sugar, dividing it between the skillets, and continue cooking for 3 to 4 minutes longer. Add the dried peach julienne and the vinegar, half to each skillet, and stir to mix. Combine the contents of both skillets in one saucepan. Strain the reserved demi-glace mixture over the peaches, and stir in the salt. If the sauce is thinner than you would like, add the dissolved potato starch, and bring to a boil. Boil 1 or 2 minutes. At serving time, stir in the basil.
  • To make carving easier, make a vertical cut down into the ham approximately 1-inch above the shank bone. The object is to make a guard that your knife will not go beyond when you slice the ham; this will give a clean bottom edge to the slices and also protect your hand from the knife in case it happens to slide while you are slicing the meat. Slice the ham on the bias, stopping at the cut edge, and arrange the meat on a warm platter. Serve 3 or 4 slices of ham per person with few slices of the peaches and the sauce spooned around and over the meat.
