Instead of making a berry crisp this summer, try this peach-pecan crisp in its place. You can enjoy it with ice cream, whipped cream, or just by itself!

1 c. all-purpose flour
1/3 c. granulated sugar
1/2 c. packed light brown sugar
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/4 tsp. kosher salt
1 stick salted butter, cut into pieces
1 c. chopped pecans
2 1/2 pounds peaches (7 to 8), peeled and sliced
Grated zest and juice of 1/2 lemon
2 tbsp. pure maple syrup
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 ̊. In a medium bowl, mix the flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt using a fork. Add the butter and mix and mush it into the flour mixture with the fork. Stir in the pecans.
  • Combine the peaches and the lemon zest and juice in a large bowl. Add the maple syrup and stir well.
  • Pour the peach mixture into a 1 1/2-quart baking dish and cover evenly with the crumb topping. Bake until crisp and browned on top, 35 to 40 minutes. Serve with ice cream.

5 peaches, skinned and pitted and cut in wedges
nonstick cooking spray
1 -2 large apple, cored, peeled and cut in wedges
2 tablespoons apricot nectar
2 tablespoons orange juice
1/2 teaspoon vanilla
1/3 cup sugar
2 tablespoons all-purpose flour
1 pinch nutmeg, ground
1 pinch ginger
1/4 teaspoon cinnamon
1/3 cup pecans, finely chopped
2/3 cup rolled oats or 2/3 cup quick-cooking oats
2/3 cup all-purpose flour
1/2 cup dark brown sugar
8 -10 tablespoons unsalted butter, melted

Steps:

  • Servings: 6 Prepare fruit. Heat oven to 350 degrees.
  • Spray a 2- to 3-quart baking dish with nonstick cooking spray; set aside.
  • In a large bowl, toss peaches and apples with apricot nectar, orange juice, vanilla, sugar, flour, nutmeg, ginger and cinnamon.
  • Spoon into prepared baking dish.
  • Set aside.
  • Make a topping by combining pecans, oatmeal, flour and brown sugar.
  • Slowly drizzle in butter, tossing mixture with a fork to make a mealy topping.
  • Sprinkle mixture over fruit.
  • Bake until juices of fruit start to bubble, around 30-40 minutes.
  • Cool for about 15 minutes before serving.

A moist bottom layer made with canned peaches and a boxed cake mix is covered with a lovely golden topping of coconut and pecans. 1 can (29 ounces) sliced peaches, undrained
1 package yellow or butter pecan cake mix (regular size)
1/2 cup butter, melted
1 cup sweetened shredded coconut
1 cup chopped pecans

Steps:

  • Arrange peaches in an ungreased 13-in. x 9-in. baking dish. Sprinkle dry cake mix over top. Drizzle with butter; sprinkle with coconut and pecans. , Bake, uncovered, at 325° for 55-60 minutes or until golden brown. Let stand for 15 minutes. Serve warm or cold.

2 1/2 lbs apples, peeled, quartered, cored, and sliced to yield about 6 cups (about 6 medium, Granny Smith works well)
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 cup all-purpose flour
5 tablespoons brown sugar
2 tablespoons sugar
1/2 cup finely chopped nuts (I like pecans)
4 ounces unsalted butter, cut into small pieces and chilled

Steps:

  • Preheat oven to 350.
  • To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
  • To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
  • Sprinkle the entire mixture over the apples.
  • Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.
  • for a large crisp and 1 hour for individual crisps.
  • Cool slightly before serving.
  • You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.
  • Serve with heavy cream or a scoop of vanilla ice cream.
  • Serves six.
