2 cups reduced-fat graham cracker crumbs (about 10 whole crackers)
5 tablespoons reduced-fat margarine, melted
1 can (12 ounces) cold reduced-fat evaporated milk
3/4 cup cold fat-free milk
2 packages (1 ounce each) sugar-free instant vanilla pudding mix
2 medium firm bananas,sliced
1 can (20 ounces) unsweetened crushed pineapple, drained
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
3 tablespoons chopped walnuts
2 tablespoons chocolate syrup
5 maraschino cherries, quartered

Steps:

  • Combine cracker crumbs and margarine; press into a 13-in. x 9-in. dish coated with cooking spray. , In a large bowl, whisk the evaporated milk, fat-free milk and pudding mixes for 2 minutes (mixture will be thick). , Spread pudding evenly over crust. Layer with bananas, pineapple and whipped topping. Sprinkle with nuts; drizzle with chocolate syrup. Top with cherries. Refrigerate for at least 1 hour before cutting.

Our family gatherings wouldn't be the same without this classic gelatin salad with its festive fruit layers. Since it stays nice and firm, it travels well and is ideal for taking to covered-dish suppers and church potlucks.

1 package (6 ounces) strawberry gelatin
1 cup boiling water
2 packages (10 ounces each) frozen sweetened sliced strawberries, partially thawed
1 can (20 ounces) crushed pineapple, drained
1 cup mashed firm bananas (about 3 medium)
1/2 to 3/4 cup chopped walnuts
2 cups sour cream
2 teaspoons sugar
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, dissolve gelatin in water. Stir in strawberries, pineapple, bananas and nuts. Pour half of the mixture into a 13-in. x 9-in. dish. Refrigerate for 1 hour or until set. , Set the remaining gelatin mixture aside. Combine the sour cream, sugar and vanilla. Spread over the chilled gelatin. Spoon remaining gelatin mixture over top. Chill overnight.

1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 can (20 ounces) crushed pineapple, drained
1 package (10 ounces) frozen sliced strawberries in syrup, thawed
2 medium firm bananas, chopped
1 carton (12 ounces) frozen whipped topping, thawed
1 cup chopped walnuts
Red food coloring, optional

Steps:

  • In a large bowl, beat the cream cheese and sugar until smooth. Stir in pineapple, strawberries and bananas. Fold in the whipped topping, walnuts and food coloring if desired. , Pour into an oiled 13x9-in. dish. 1 package banana cake mix
1 (3 ounce) package strawberry Jell-O gelatin dessert
water
1 env dream whipped topping
1 (3 1/2 ounce) box chocolate instant pudding
1 1/2 cups cold milk

Steps:

  • Preheat oven to 350.
  • Dissolve jello in 3/4 cup boiling water, then add 1/2 cup cold water and set aside.
  • Mix and bake cake as directed on package for a 13x9 pan.
  • Cool cake 20-25 minutes.
  • Poke deep holes through top of warm cake with a meat fork or skewer about 1 inch apart.
  • Slowly pour jello over the cake.
  • Refrigerate while making topping.
  • Blend topping ingredients in a chilled bowl and beat until stiff and fluffy, about 4-8 minutes.
  • Immediately frost cake.
  • May be garnished with strawberry and banana slices.
  • Store in refrigerator and serve chilled.

1 (8 ounce) can crushed pineapple
2 cups water
1 (3 ounce) package lemon gelatin (jello or like)
8 large marshmallows
2 bananas, sliced
2 teaspoons lemon juice
1/4 cup sugar
5 teaspoons all-purpose flour
1 dash salt
1 egg, beaten
1 tablespoon butter or 1 tablespoon margarine
1 cup heavy cream, whipped
1/4 cup pecans, chopped

Steps:

  • Drain pineapple, reserving 1/2 cup; set aside.
  • In a saucepan, bring water to a boil; remove from heat. Add gelatin and marshmallows; stir until dissolved.
  • Chill until partially set.
  • Toss bananas with lemon juice; fold bananas and pineapple into gelatin.
  • Pour into an 8" square dish.
  • Chill until firm.
  • Combine the sugar, flour and salt in saucepan. Stir in egg and reserved pineapple juice; cook and stir over low heat until thickened.
  • Remove from heat; stir in butter. Cool.
  • Fold in whipped cream; spread over firmed gelatin and sprinkle with pecans
  • Chill overnight.
