SPINACH ARTICHOKE CHICKEN PIZZA

The classic spinach artichoke combination meets...pizza!

Number Of Ingredients 11

1 medium unbaked pizza crust, homemade or storebought
3 Tbsp. olive oil
half of a medium white onion, diced
5 cloves garlic, minced
2 cups fresh baby spinach, loosely-packed
2 cups shredded cooked chicken
1 (14-ounce) jar artichoke hearts, drained and roughly chopped
1-2 cups shredded Mozzarella cheese
1/2 cup shaved or shredded Parmesan cheese
1/3 cup toasted pine nuts
(optional: additional 1 cup fresh spinach, chopped)

Steps:

  • Preheat oven to 425 degrees F.
  • Brush or mist unbaked pizza crust with about 2 Tbsp. olive oil until evenly coated.
  • In a saute pan, heat the remaining 1 Tbsp. olive oil over medium-high heat. Add the diced onion and saute for 4-5 minutes until translucent, stirring occasionally. Add garlic and cook for an additional 2 minutes. Remove from heat, and spread the onion-garlic mixture evenly over the pizza crust, leaving a 1-inch border.
  • Then layer on the spinach, artichokes and chicken in an even layer, and sprinkle afterwards with the Mozzarella cheese.
  • Bake for 10-12 minutes, or until the cheese is melted and slightly golden around the edges. Remove and immediately top with the Parmesan, pine nuts and additional spinach if desired. Serve immediately.

2 tablespoons olive oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, well drained
1 large onion, thinly sliced (about 1 cup)
1/3 cup pitted kalamata olives, halved
2 cups cubed or shredded cooked chicken
1-1/3 cups crumbled goat cheese
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/2 teaspoon garlic salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake 8-10 minutes or until edges are lightly browned., Mix oil and garlic; brush over crust. Top with tomatoes, onion, olives, chicken and goat cheese. Sprinkle with rosemary, garlic salt and pepper. Bake 10-12 minutes or until crust is golden.

4 oz. Cream Cheese, softened
4 Eggs
1 Teaspoon Garlic Powder
1 Teaspoon Dried Basil
1 Cup Mozzarella, shredded
Garlic White Sauce Ingredients:
1/2 Cup Ricotta Cheese
2 Tablespoons Olive Oil
2 Tablespoons Heavy Cream
1/4 Cup Sour Cream
1 Egg Yolk
2 Teaspoons Garlic, minced
Toppings:
1 1/2 Cups Chicken, cooked and diced
1/2 Cup Green Onions, diced
1 1/2 Cups Artichoke Hearts, chopped
3/4 Cup Parmesan Cheese

Steps:

  • Directions: 1. Preheat oven to 375 degrees. 2. Let's make the Crust first. Blend all of the Crust ingredients (except the Mozzarella Cheese) together with a hand mixer. When well combined, stir in the Mozzarella Cheese. 3. Spray a 13 x 9 baking dish with non stick cooking spray. Spread the Crust mixture evenly into the pan. and Bake for 10-15 minutes or until the crust is slightly golden on the sides and top. 4. When the Crust is done, remove from oven and allow to cool. Turn up the oven to 425 degrees to preheat for baking the Pizza. 5. Now we are going to make our Garlic White Sauce. In a medium size mixing bowl, combine the Ricotta, Olive Oil, Cream, Sour Cream, and Garlic with a hand mixer. When well blended add the Egg Yolk and continue to mix for 1-2 minutes. 6. Evenly spread the White Garlic Sauce on the Pizza Crust, then add the Chicken, Artichokes and Green Onion. Top all with the Parmesan Cheese 7. Bake the Pizza in the preheated 425 degree oven for about 15 minutes or until the Cheese is melted and slightly browned. All ovens cook differently so check your Pizza to ensure it doesn't overcook. 1 large prepared pizza crust, like Boboli
1 large boneless, skinless chicken breast, cut into bite-sized cubes
1 tablespoon olive oil
8 oz, marinated artichoke hearts, drained and chopped
3 cloves garlic, chopped
2 green onions, chopped
1/2 cup blue cheese salad dressing
5 slices provolone cheese
1/2 cup shredded Parmesan cheese

Steps:

  • In a large skillet heat oil over medium-high heat. Add chicken and chopped garlic. Cook just until chicken is no longer pink, about 4-5 minutes. Remove from heat. To layer pizza: brush or spread blue cheese dressing evenly over pizza crust. Top with the provolone cheese. Evenly distribute the green onions, chicken/garlic mixture and chopped artichoke hearts over the cheese. Finish by sprinkling the shredded Parmesan cheese over all. 3/4 cup grated parmesan cheese
3/4 cup mayonnaise
1 dash garlic powder or 2 garlic cloves
