GARLIC, LEMON, HONEY "TEA"
This cough-inhibiting concoction may help with easing of cold symptoms. Garlic inhibits cough and cold microbes and is an effective decongestant. Honey are considered by many to be a respiratory tonic, improving breathing, and is also known to be antimicrobial, assisting the immune system with fighting infection. Lemon reduces and thins mucus and alters the body's pH, which may make it less hospitable to viruses and bacteria. I make it every winter to prevent colds and because I think it tastes good. Steps:
- Put water in a medium saucepan and add garlic.
- Bring to a boil.
- Turn off heat and add honey and lemon juice.
- Sip 1/2 cup, three times per day.
- Refrigerate leftover beverage.

TEA STEAMED CHINESE BLACK MUSHROOMS STUFFED WITH GARLIC-CHIVE FRIED RICE
Steps:
- Set up a steamer filled with water and lined with banana or cabbage leaves. Bring water to a boil then add the tea bags. In a hot wok heavy coated with oil, add the eggs (they should sizzle) and stir quickly. They will cook in 10 to 15 seconds. Remove eggs and set aside. In the same, hot wok, coated lightly with oil, add the garlic and ginger, stir, then the garlic chives. Add the rice and gently mix together. Add soy and season with black pepper. Add back the eggs and check for seasoning. Season each mushroom, then stuff with the rice and place in steamer. Steam hard for 15 minutes.
- Plating: If banana leaves are available, line a large platter and place the leftover rice, if any, in the middle of the platter. Surround with mushrooms and enjoy.
- Beverage: Lapsang Souchong tea or glass of Veuve Clicquot Blanc de Blanc or DVX

Steps:
- In a saucepan, bring 3 cups of water and the 3 cloves of garlic to a boil. Turn off the heat when the water boils, and add 1/2 cup of the honey and 1/2 cup of the fresh lemon juice. Strain.
- Sip 1/2 cup, warm, three times a day.
- Refrigerate extra to use the next day.

GRILLED TEA SPICED NY STRIP STEAK WITH GARLIC BROCCOLI
New York Times (7/5/00), Dr. John Weisburger: "HCA (heterocyclic amines) formed when creatine in muscle meats react with amino acids at high temperatures. Sprinkling tea on the meats could help reduce the formation of these amines. May help even to drink strong tea."

Steps:
- Very lightly coat the steaks in oil and sprinkle with tea, white pepper and salt.
- On a hot grill, well oiled, place the steaks on cook for about 4 to 5 minutes a side, criss-crossing them for grill marks. Be careful to move steaks around if/when there are flare ups.
- Let the meat rest for 5 minutes before slicing on the bias.
- Place a small mound of brown rice in the middle of a plate and top with the garlic broccoli. Cut the steak on the bias and place on the broccoli. Drizzle sauce around.
- In a hot wok, coat with oil and saute the garlic and ginger until soft, about 30 seconds. Add the broccoli (florets and stem). Stir-fry for 1 minute, add the oyster sauce and the stock. Check for seasoning. When liquid is boiling, add the cornstarch slurry to thicken. Cook for an additional 30 seconds and check again for seasoning.
