RUTABAGA-SWEET POTATO MASH WITH GARLIC AND SAGE
Ever-popular sweet potatoes team up with an underrated root vegetable in this silky mash: peppery rutabaga. Garlic and sage cooked in butter, plus a generous dose of cream, make the side dish sing. Serve with Pork Wellington with Prosciutto and Spinach-Mushroom Stuffing.

- In a pot, combine rutabaga and sweet potatoes; cover with water by a few inches and season generously with salt. Bring to a boil, then reduce heat to medium and cook until easily pierced with the tip of a knife, about 15 minutes. Drain.
- Return pot to medium heat; add butter. When it melts, add garlic and sage; cook 1 minute. Add cream; bring to a simmer, then remove from heat. Return rutabaga and sweet potatoes to pot; mash to desired consistency and season with salt and pepper. Serve.
ROAST SWEET POTATO, SQUASH & GARLIC MASH

Steps:
- Heat oven to 200C/fan 180C/gas 6. Peel and cut the squash and sweet potatoes into chunks. Divide between 2 roasting tins with the garlic and red chilli. Toss with the oil.
- Roast for 45 mins. Halve and deseed the chilli, then chop. Squeeze out the garlic and mash everything together. Season and drizzle with oil to serve. Great with roast chicken, chorizo, blue cheese.
LEMON & GARLIC ROAST CHICKEN WITH CHARRED BROCCOLI & SWEET POTATO MASH
A healthy, all-in-one roast lunch, that supplies two portions of veg and a vitamin C boost

- Heat oven to 200C/180C fan/gas 6 and put the chicken in a large non-stick roasting tin. Halve 1 garlic clove and rub it over the chicken. Drizzle with oil, rub in with your fingers, then stuff the cavity with the thyme, 1 lemon half and the garlic you just used.
- Cut the other lemon half into quarters and scatter around the chicken with the other garlic clove, halved.
- Cover the tin with foil and bake for 40 mins, then remove the foil and spoon over the hot juices. Arrange the broccoli around the chicken, turning well in the juices, and return the tin to the oven for another 20-30 mins. To check that it is cooked through, pierce between the leg and thigh - if the juices run clear, the chicken is ready. Re-cover with foil and set aside while you prepare the sweet potatoes.
- Put the sweet potatoes in a pan of boiling water, return to the boil, then simmer for 7-10 mins until tender. Drain well, then mash. Set aside 100g of sweet potato mash if using for Chicken wrap with sticky sweet potato, see 'goes well with', then add the cream cheese to the rest and stir well.
- Remove the broccoli from the roasting tin and divide between 2 plates. Put the chicken on a serving plate, discard the lemon and garlic from the tin and remove as much of the fat from the juices as possible. Pour the remaining juices into a serving jug.
- Carve the chicken and serve about 100g (1-2 slices) per person (keep the rest of the chicken for Chicken wrap with sticky sweet potato if making, see 'goes well with'). Serve with the broccoli and mashed sweet potatoes, and a drizzle of the lemony-garlic juices on top.

ROASTED GARLIC SWEET POTATO MASH
I threw this together yesterday looking for an easy side for some roasted meat... and it was possibly the most delicious mash i've ever had! So simple and tasty! The roasted garlic REALLY comes through!

- Roasted Garlic: To roast a head of garlic, first slice off top of head, (about 1/4 inch off top), place on a square of tinfoil that will cover whole head, drizzle top with olive oil, or whatever oil you have on hand, sprinkle with salt and wrap tightly. Place on/in oven proof pan/dish and bake at 350 deg. for 45 min - 1 hours Remove from oven, let cool.
- Mash: Peel and cube Sweet potatoes and potatoes, (about 3/4 - 1 inch cubes). place in pot and cover with water. Salt water generously. Bring to a boil and reduce heat. Once you can pierce cubes with fork easily, they are done, (15 min approx). Drain water and mash cubes. Add butter, milk and salt and pepper. Add roaster garlic by either removing each clove and adding it to pot, or, if head is cool enough, squeeze head into pot and cloves should squish right out. mash and stir once more. Texture should be smooth. Add more milk if you like it creamier.

- Meanwhile in the same pan add butter and saute garlic until lightly browned.
