HONEY-GARLIC SHRIMP SKEWERS



Honey-Garlic Shrimp Skewers image

1/2 cup honey
2 tablespoons sriracha
1 teaspoon crushed red pepper
3 cloves garlic, grated
1 lime, zested and juiced
2 tablespoons chopped fresh parsley
20 shrimp (16-20 count), peeled and deveined
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
12 ounces baby spinach
2 cloves garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Heat a grill pan over medium-high heat and a large skillet over medium heat.
  • For the shrimp: In a small bowl, mix together the honey, sriracha, crushed red pepper, garlic, lime zest and juice and 1 tablespoon of the parsley. Set the glaze aside.
  • Thread the shrimp onto 4 metal skewers, 5 shrimp per skewer. Season both sides with salt and pepper. Place on the grill pan and cook for 2 minutes. Flip the shrimp, brush the top with the glaze and cook for an additional 2 minutes. Flip the glazed side down, brush the top with the glaze and cook for an additional minute. Flip, glaze and cook until the shrimp are cooked through, up to an additional minute per side. Remove from the grill and drizzle with any remaining glaze.
  • For the spinach: Meanwhile, heat the oil in the skillet and add the spinach and garlic. Season with salt and pepper and cook until wilted, about 1 minute.
  • Make a bed with the spinach on a serving platter. Top with the shrimp skewers and garnish with the remaining parsley.

2 tablespoons raw honey
1 tablespoon fresh lemon juice
1 tablespoon pineapple juice
1 large clove garlic, minced
2 teaspoons low-sodium soy sauce (such as Bragg®)
1 pinch red pepper flakes
4 ounces large shrimp, peeled and deveined
8 (1 inch) cubes fresh pineapple
8 (1 inch) pieces red bell pepper
2 each bamboo skewers, soaked in water for 20 minutes
1 serving cooking spray

Steps:

  • Combine butter, honey, lemon juice, pineapple juice, garlic, soy sauce, and red pepper flakes in a small saucepan over medium-low heat. Simmer until sauce begins to thicken, 3 to 4 minutes. Set aside 1/2 of the sauce for dipping.
  • Thread pineapple, shrimp, and bell pepper alternately onto both skewers and baste with the remaining sauce.
  • Preheat an outdoor grill for high heat (400 degrees F (200 degrees C)) and lightly oil the grate.
  • Grill until shrimp are cooked through and opaque in color, turning halfway, 5 to 7 minutes. Serve with dipping sauce.

Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil. These need to marinate for 45 minutes before cooking.   • In a medium bowl, whisk lemon juice with oil, mustard, garlic and lemon peel.
  • Add shrimp and stir to coat.

  • In a bowl, mix salt and sugar; add shrimp and stir to coat.

Steps:

  • For the shrimp: 1. To marinate shrimp: Place shrimp on metal skewers, approximately 5 per skewer, and place in a long pan. 2. In a small mixing bowl, combine olive oil, garlic, lemon, oregano, salt and pepper; mix thoroughly. Pour over shrimp and let marinate for 1 hour or overnight. 3. To cook shrimp: Set grill to highest setting. When grill is hot, season shrimp with salt and pepper, and grill approximately 2 to 3 minutes per side. Remove from grill and serve with herb aioli. For the herb aioli: 1. To prepare aioli: Work the garlic, egg yolks, salt, pepper, and lemon juice in food processor to a paste. 2. Start adding oil slowly, letting machine run the whole time. Add all oil, and if paste appears too thick, start adding fresh herbs, a little at a time until oil is pureed. Water from herbs will give the aioli a thinner consistency, if not, add a touch of water.

1 pound large shrimp, peeled, de-veined and tails removed (about 40 shrimp)
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 cup roasted garlic salad dressing
2 teaspoons lemon juice
1 teaspoon Italian seasoning
Canola oil, for grilling
One 5-ounce package baby arugula
2 plum tomatoes, diced
1 lemon, cut into wedges

Steps:

  • Thread the shrimp through the skewers at two points, through the neck and tail portion. If you compare the shape of the shrimp to the letter "C" the skewer should go through both the top and bottom section of the "C". You should have 5 shrimp per skewer. Place into a 9 by 13-inch baking dish and sprinkle with a bit of salt and pepper.
  • In a medium bowl, combine the roasted garlic salad dressing, lemon juice and Italian seasoning. Reserve about 3 tablespoons of the salad dressing mixture. Pour the remaining dressing over the shrimp and, using a brush, make sure all the shrimp are completely coated with the dressing. Let sit in the refrigerator for 5 minutes or up to 30 minutes.
  • Preheat a grill or grill pan over medium-high heat.
  • Brush the grill grates with a paper towel that has been soaked in canola oil. Place the shrimp skewers on the grill and cover. Cook until opaque and cooked through, about 3 minutes per side.
  • While the shrimp are grilling, combine the arugula and tomatoes in a large bowl. Pour the reserved dressing over the arugula, season with salt and pepper and toss to coat. Divide among 4 plates. Place 2 of the shrimp skewers on each plate. Serve with a lemon wedge on the side.

  • Preheat oven to 325°F. Place garlic and wine in center of foil sheet. Sprinkle with salt and pepper. Enclose with foil; crimp edges to seal. Bake until garlic is very tender, about 50 minutes. Squeeze garlic between fingers to release cloves. Transfer garlic and any cooking liquid to blender.
  • Meanwhile, combine orange juice and reserved shrimp shells in heavy medium saucepan. Boil until liquid is reduced to 3/4 cup, about 10 minutes. 1 tablespoon dill seeds
2 tablespoons minced fresh dill
2 tablespoons fresh lemon juice
1/2 teaspoon dried hot red pepper flakes
2/3 cup vegetable oil
eighteen 8-inch wooden skewers, soaked in warm water for 1 hour
18 large shrimp, shelled

Steps:

  • In a saucepan of boiling water boil the garlic for 15 to 20 minutes, or until it is tender but not soft, drain it, and discard the peel carefully, leaving the cloves whole. In a bowl whisk together the dill seeds, the fresh dill, the lemon juice, and the red pepper flakes, add the oil in a stream, whisking, and whisk the marinade until it is emulsified. Onto the end of each skewer thread a shrimp and 1 garlic clove. Arrange the skewers, shrimp end down, in a bowl just large enough to hold them. Pour the marinade over the shrimp, and let the shrimp marinate, cover loosely and chilled, basting them occasionally, for 3 hours. Coarse salt
2 tablespoons peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon light-brown sugar
32 large frozen shrimp, (1 1/2 pounds), peeled, deveined, thawed
Garlic-Chili Oil
1 1/2 pounds (1 to 2 heads) broccoli, cut into florets, stems peeled and sliced 1/2 inch thick

Steps:

  • Make peanut noodles: Cook spaghetti in a large pot of boiling salted water until al dente, according to package instructions; drain and rinse with cool water.
  • In a large bowl, whisk together peanut butter, soy sauce, vinegar, and brown sugar until smooth. Add spaghetti, season with salt, and toss to combine; set aside.
  • Make shrimp skewers and broccoli: Heat broiler, with rack set 4 inches from heat. Thread shrimp onto 8 skewers (4 shrimp each); transfer to a broiler pan or broilerproof baking sheet. (If using bamboo or wooden skewers, cover exposed parts with aluminum foil to prevent scorching.) Dividing evenly, spoon 2 tablespoons garlic-chile oil onto shrimp; set aside.

Add olive oil, parsley, lemon peel, garlic, and pepper. Mix to coat. Thread shrimp on metal or soaked wooden skewers, running skewer through the body once near the tail and donce near the head end of each shrimp so it looks like the letter C. Lay shrimp skewers on an oiled barbecue grill over hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 or 3 seconds); close lid on gas grill. Cook, turning once, until shrimp are bright pink and opaque but still moist-looking in center of thickest part (cut to test), 5 to 6 minjtes total. Serve with lemon wedges to squeeze over shrimp.

2 garlic cloves, minced
2 teaspoons fresh ginger, minced
2 tablespoons olive oil
1 tablespoon 100% pure maple syrup
2 tablespoons fresh lemon juice
3 tablespoons fresh cilantro, finely chopped
16 large shrimp, heads removed, deveined, peeled with tails on

Steps:

  • In a bowl, combine first 6 ingredients.
  • Add shrimp, and cover with plastic wrap.
  • Refrigerate for one hour.
  • Skewer shrimp and grill over medium-high heat until just cooked through.

2 tablespoons kosher salt
2 tablespoons sugar
2 to 2 1/2 pounds peeled, deveined shrimp (12 to 15 per lb.), rinsed and drained
1/4 cup olive oil
1/4 cup chopped parsley
1 tablespoon grated lemon peel
2 or 3 cloves garlic, peeled and minced
1/2 teaspoon fresh-ground pepper

Steps:

  • 1. In a bowl, mix salt and sugar. Add shrimp and stir gently to coat. Cover and chill 45 minutes to 1 hour. Rinse shrimp well and drain; also rinse and dry bowl. 2. Return shrimp to bowl. Add olive oil, parsley, lemon peel, garlic, and pepper. Mix to coat. Thread shrimp on metal or soaked wooden skewers, running skewer through the body once near the tail and once near the head end of each shrimp so it looks like the letter C. 3. Lay shrimp skewers on an oiled barbeque grill over hot coals or high hear on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook, turning once, until shrimp ar bright pink and opaque but still moist-looking in center of thickest part (cut to test), 5 to 6 minutes total. Serve with lemon wedges to squeeze over shrimp. Per serving: 161 cals, 75 cals from fat; 19 g protein, 1.6 g carb., 259 mg sodium, 140 mg chol.

ORANGE AND ROASTED GARLIC SHRIMP SKEWERS



Orange and Roasted Garlic Shrimp Skewers image

1 large head garlic, top sliced off
3 tablespoons olive oil
Salt and freshly ground pepper
2 cups orange juice
20 large shrimp, peeled, deveined, shells reserved
2 tablespoons olive oil
8 (6-inch) wooden skewers, soaked in water
1/4 cup flat leaf parsley, finely chopped

Steps:

  • Preheat grill to high. Place garlic in the center of a piece of aluminum foil, drizzle with the olive oil and season with salt and pepper to taste. Place on the grill, close the cover and let roast for 30 to 40 minutes, until garlic is soft. Squeeze roasted cloves into a bowl. Heat the side burner. Place the orange juice and 1/2 of the reserved shrimp shells in a medium saucepan, bring to a boil and cook orange juice is reduced to 3/4 cup. Strain the reduced orange juice into a blender and add the roasted garlic and olive oil and blend until smooth. Let cool completely. Place shrimp in a large baking dish, pour the orange/garlic marinade over and toss to coat. Let marinate in the refrigerator for 1 hour. Thread 5 shrimp onto each skewer, season with salt and pepper to taste and grill for 2 to 3 minutes on each side, or until just cooked through. Remove to a platter and sprinkle with chopped parsley and basil.

2 1/2 dozen large shrimp
1/2 cup parsley, chopped
1/2 cup olive oil
1/4 cup butter or margarine, melted
1 cup toasted bread crumbs
5 cloves garlic, minced
1/4 tsp salt
1/4 tsp pepper
3/4 tsp dried red chile flakes
1/2 cup grated Parmesan cheese
2 lemons
10 skewers

Steps:

  • 1. Peel, devein and put three shrimp on each skewer. Slice lemons to about a 1/8 inch thick and lay them in the bottom of the baking pan. 2. Arrange skewers over lemon slices in a 13 x 9 baking dish so that the skewers don't overlap. 3. Drizzle with olive oil. In a bowl, mix bread crumbs, garlic, parsley, chile flakes, salt and pepper. Sprinkle half of mixture over the shrimp, then cover and bake for 15 minutes at 300 F. 4. Flip skewers over, drizzle butter over shrimp and sprinkle on the remaining bread crumbs and grated cheese. 5. Return dish to oven uncovered and bake another 5-10 minutes, or until cheese is melted.
