CHICKEN WITH ROASTED PEPPER-GARLIC SAUCE

20 garlic cloves, unpeeled
1 tablespoon plus 2 teaspoons olive oil
1 green bell pepper
1 red bell pepper
1 tablespoon butter
3 tablespoons chopped shallots
2 teaspoons chopped garlic
3/4 cup dry white wine
1/4 cup fresh lemon juice
1 1/4 cups whipping cream
4 6-ounce skinless boneless chicken breasts
4 ounces feta cheese, coarsely crumbled

Steps:

  • Preheat oven to 350°F. Toss garlic cloves with 1 tablespoon oil in small glass baking dish. Roast uncovered until garlic is tender and golden, about 30 minutes. Cool. Peel garlic. Set aside.
  • Char both peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel and seed peppers. Cut into matchstick-size strips.
  • Melt butter in heavy medium saucepan over medium-high heat. Add shallots and chopped garlic and sauté until fragrant, about 1 minute. Add wine and lemon juice and simmer until reduced to 1/2 cup, about 7 minutes. Add cream and simmer until reduced to sauce consistency, about 5 minutes. Mix in roasted garlic and bell peppers. Season to taste with salt and pepper.
  • Meanwhile, preheat broiler. Brush chicken with remaining 2 teaspoons oil. Sprinkle with salt and pepper. Broil until cooked through, about 5 minutes per side. Place 1 chicken breast on each plate. Spoon sauce over. Sprinkle feta over and serve.

4 boneless skinless chicken breasts (about 1 1/2 lbs)
2 tablespoons vegetable oil
1 small onion, sliced thin
6 garlic cloves, sliced thin
1 (12 ounce) jar roasted red peppers, drained and chopped
2 teaspoons sugar
1 1/2 cups low sodium chicken broth
1/4 cup fresh basil, chopped
2 tablespoons unsalted butter

Steps:

  • Pat chicken dry with paper towels and season with salt and pepper. heat oil in large skillet over medium-high heat until just smoking. Cook chicken until golden brown, about 5 minutes per side. Transfer to plate.
  • Add onion to fat in skillet and cook until lightly browned, about 3 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add peppers, sugar, broth, and browned chicken along with any accumulated juices and bring to a boil. Reduce heat to medum and simmer until chicken is cooked through, about 5 minutes.
  • Transfer chicken to serving platter, and tent with foil. Return skillet to high heat and simmer until sauce is slightly thickened, about 5 minutes. Off heat, whisk basil and butter. Season with salt and pepper. Pour sauce over chicken. Serve.

Garlic and Oregano Marinated Chicken with Roasted Pepper and Black Olive Relish with Saffron-Tomato Rice image

2 tablespoons sherry vinegar
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
2 tablespoons honey
1 tablespoon ancho chile powder
10 cloves garlic, coarsely chopped
1/4 cup fresh oregano leaves
2 cups pure olive oil
Salt and pepper
4 chickens, 2 1/2 pounds each, quartered
2 roasted red bell peppers, peeled, seeded and diced
2 roasted yellow bell peppers, peeled, seeded and diced
1 cup pitted and coarsely chopped Nicoise olive
2 cloves garlic, finely chopped
1 tablespoon fresh thyme leaves
1/4 cup coarsely chopped parsley
1/4 cup sherry vinegar
1 tablespoon honey
Salt and freshly ground pepper
4 cups water
2 cups home-made or low sodium canned chicken stock
Pinch saffron threads
2 tablespoons unsalted butter
1 tablespoon olive oil
1 medium Spanish onion
3 cups converted white rice
5 tomatoes, seeded and diced
Salt and pepper, to taste

Steps:

  • Combine the vinegar, lemon juice, lime juice, honey, ancho chile powder, garlic and oregano in a blender and blend for 30 seconds. With the motor running, slowly add the olive oil until emulsified. Season to taste with salt and pepper. Place the marinade in a large shallow baking dish, add the chicken pieces and turn to coat. Cover and let marinate for 2 hours in the refrigerator. Preheat the oven to 375 degrees F. Heat a large saute pan until almost smoking. Remove the chicken from the marinade and season with salt and pepper to taste. Saute the chicken until golden brown on both sides. Place the chicken on a large baking sheet and place in the oven, bake for 12 to 15 minutes or until just cooked through. Remove from the oven and let rest, 5 minutes.
  • For the Roasted Pepper and Black Olive Relish: Combine all ingredients in a medium bowl and season with salt and pepper to taste. Serve at room temperature.
  • For the Saffron-Tomato Rice: Combine water, stock, 2 tablespoons salt and saffron in a medium saucepan over high heat and simmer until the threads open, about 5 minutes. Melt butter and oil in a medium saucepan over medium high heat, add onion and saute until soft. Add the rice and stir to coat with the oil and butter. Add the saffron broth, bring to a boil, cover and reduce heat to medium. Cook until the rice is tender about 12 to 15 minutes. Fold in the tomatoes and season with salt and pepper to taste.

1 Whole Chicken or 1 Chicken cut up (2-3 lbs)
To Make the Marinade:
4 Garlic Cloves
1/3 cup of Cilantro, or small portion of a bunch
1 tablespoons of Peppercorns (you can put less peppercorns if you don't prefer as much)
1/3 cup of GOOD Extra Virgin Olive Oil- the flavor the oil is important, so get a good one
2-3 Tbsp of white wine vinegar (you can add less if you do not prefer the taste of vinegar, you can even substitute with lemon or lime and it is also delicious)
Salt (to desired taste)
Adobo- any combination or brand of adobo that you prefer is fine (to desired taste)

Steps:

  • Combine all of the ingredients into a small processor. If you don't have a processor, you can also use a Pilon. If using a Pilon (Pestal & Mortar), first smash the garlic and the peppercorns together, then add the cilantro. Once all blended together add the olive oil and white wine vinegar. The marinade is not thick it has a loose consistency. Once all the ingredients are ground together, add the salt to your preference. Taste and make sure to adjust the salt for flavor. Marinade After the marinade is the right salt content, its time to rub it on the chicken! The most important part of putting the marinade on the chicken is, to make sure that you get your finger in between the skin and the meat and incorporate the marinade in those parts. The only way to make the chicken truly flavorful is to marinade between the skin and the meat! Delicately slip your fingers between the two and make sure to get all that good flavor in there. That makes for one juicy chicken! Once all is marinated. put in a ziplock bag and leave it overnight. This makes the chicken taste so delicious! Chicken, once marinated Make sure that once you ready to cook the chicken you preheat the oven to 350. Also, please make sure that you take the chicken out of the refrigerator at least 45 minutes before baking and bring it to room temperature. You NEVER want to put a cold chicken to bake in the oven, it becomes tough before it becomes tender. Once at room temperature just lightly sprinkle the top of the chicken with adobo for a final touch. And into the oven it goes! I leave my chicken in for about 3 hours uncovered, it seems long but the chicken is juicy and down right delicious once it comes out of the oven. Dinner time! Happy Cooking! The Gardening Chic

3 -4 chicken breasts, thawed
1/2 cup melted smart balance butter
2 garlic cloves, finely chopped
6 -8 fresh basil leaves, chopped
15 ounces gar classico red roasted pepper alfredo sauce
0.5 (13 1/4 ounce) package of multigrain spaghetti noodles

Steps:

  • Pre-heat oven 350.
  • Mix half of chopped fresh basil, melted butter and garlic together in baking casserole dish.
  • Place chicken breasts on top of mixture and top with remaining fresh chopped basil. Bake covered for 45 minutes.
  • Bake uncovered for 15 minutes.
  • Prepare spaghetti noodles boil for 7-10 minutes to preferred taste.
  • Over low heat warm alfredo sauce, stir often. Be careful not to scorch.
  • Serve. Pepper to taste.

Claudia Dawn's Grilled Stuffed Chicken #88887 was the inspiration for this creation. I used jarred roasted peppers and roasted garlic for time purposes, but you could definately use fresh igredients and it would be even better. Prep time includes 30 minutes of marinade time.

2 chicken breasts
4 slices asiago cheese
2 teaspoons roasted garlic
2 tablespoons roasted red peppers
1/2 teaspoon dried oregano
3 tablespoons olive oil
1 tablespoon oregano
1 tablespoon red wine vinegar
1 tablespoon parsley

Steps:

  • See photos posted to view most of the steps.
  • Butterfly or cut a deep pocket into each chicken breast.
  • Place 2 pieces of Asiago Cheese on each breast pocket.
  • Chop roasted Red Pepper and place in small bowl.
  • Add the roasted Garlic& Oregano to the peppers and mix well.
  • Place this mixture on top of Asiago cheese.
  • Secure with toothpicks.
  • Prepare the marinade and drizzle over chicken and let sit for 30 minutes.
  • Preheat BBQ grill.
  • Grill breasts for approximately 10- 15 minutes or until no longer pink.

My DH and I have started The South Beach Diet. This is absolutely delicious. Cook time is approximate as the Perdue Oven Stuffer Roasters have a pop-up timer. Sorry! But if you're on The Beach......after cooking discard the crispy skin. If you're not on The Beach you can substitute the table salt with Lawry's Seasoned Salt (which includes sugar as one of the ingredients) and enjoy the crispy skin (which isn't healthy for you but is oh so good). : )

extra virgin olive oil

garlic pepper seasoning (with no sugar added)

Steps:

  • Prep chicken by cleaning out cavity and rinsing.
  • Pat dry.
  • Rub entire chicken with Extra Virgin Olive Oil.
  • Sprinkle liberally, all over, with salt and garlic pepper.
  • Roast in a 350 degree oven till done.
