Parmesan garlic roasted potatoes have a crispy edge and tender center. Their mouthwatering parmesan garlic flavor makes them the perfect side!

2 pounds red potatoes (cut into 1 inch pieces)
2 tablespoons olive oil
1/2 cup grated parmesan cheese
3 garlic cloves (minced)
1/2 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper
chopped parsley for garnish

Steps:

  • Preheat oven to 400 degrees. Lightly spray a baking sheet with non-stick cooking spray.
  • In a large bowl add the olive oil, parmesan cheese, garlic, and oregano. Toss with the potatoes until coated and lay in a single layer on your baking sheet. Salt and pepper to taste. I also like to sprinkle additional parmesan on top.
  • Roast for 30-35 minutes or until golden brown and crisp. Serve with parsley sprinkled on top.

2 pounds small red potatoes (rinsed & cut into bite-sized pieces)
3 tablespoons olive oil
5 cloves garlic (minced)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup Parmesan cheese
2 tablespoons unsalted butter (melted)
1 tablespoons fresh parsley (finely chopped)

Steps:

  • Preheat your oven to 400 degrees F. Coat a baking sheet with non-stick cooking spray.
  • Place the potatoes in a large mixing bowl. Pour olive oil over the potatoes and toss to coat.
  • Sprinkle the oregano, basil, paprika, salt, pepper, garlic and Parmesan over the potatoes. Toss until evenly coated.
  • Pour the potatoes onto your prepared baking sheet. Be sure to get all the cheese and seasonings out of the bowl too. Spread the potatoes into an even layer on the sheet.
  • Bake for 40 to 45 minutes, or until the potatoes are golden and fork tender.
  • Carefully remove from the oven and use a spatula to loosen the potatoes from the pan.
  • Drizzle the potatoes with butter and stir to coat. Top with parsley and stir to combine. Transfer to a serving bowl.

¼ cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes in an 8x8 inch baking dish.
  • In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  • Bake, covered, in preheated oven for 30 minutes. Uncover and bake until golden brown and tender when pierced with a fork, about 10 minutes more.

I made this today because I had to use up some potatoes before they went bad. Feel free to make changes depending on what ingredients and seasonings you have available

4 -6 red potatoes, quartered
carrot (optional)
celery (optional)
olive oil, enough to coat vegetables
3 tablespoons melted butter (optional)
1 onion
1 shallot
3 garlic cloves, pressed with garlic press
sea salt
fresh ground pepper
basil
red pepper flakes
oregano
shredded parmesan cheese (optional)

Steps:

  • -Preheat oven to 425.
  • -Cut up potatoes (and celery and carrots, if using) and put in an 8x8 glass baking dish.
  • -Chop onion and shallot in food processor and mix with potatoes/veggies.
  • -Mix garlic in with potatoes/veggies, onions and shallots.
  • -Pour on enough olive oil to coat the potato/veggie mixture (I usually put sandwich baggies over my hands and mix it all with my hands. You want to completely cover the potatoes with the olive oil so that the seasonings will stick).
  • -Sprinkle seasonings over potato/veggie mixture (I used the ones listed above, but use whatever kinds you like). Do not add parmesan cheese yet.
  • -Pour 3 tbsp of butter over everything if you want to add a buttery flavor, or skip this step if you prefer the olive oil only.
  • -Bake for 55 mins, stirring once halfway through cooking.
  • -Remove from oven and add shredded parmesan, then bake for another 5 mins or until cheese is melted.

1 1/2 teaspoons kosher salt

  • Preheat the oven to 400 degrees F.

1 teaspoon vegetable oil, or as needed
2 tablespoons freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon ground black pepper
2 pounds red potatoes, halved
1 tablespoon vegetable oil, or as needed
¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
  • Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
  • Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated.
