GARLIC MASHED POTATO CASSEROLE
A great make-ahead recipe, and a nice amount of extra flavor instead of your standard mashed.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to pot.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a glass baking dish.
- Combine milk, cream cheese, 1/3 cup green onions, egg, butter, garlic, and salt in a bowl. Pour onto the prepared potatoes. Mash together until mixture is smooth. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese and remaining green onions.
- Bake in the preheated oven until lightly browned, about 40 minutes.

CREAMY GARLIC MASHED POTATO CASSEROLE
This is a very smooth and creamy side dish. It's simple to make and uses ingredients that most people have on hand. You can make it early in the day and then just pop it in the oven for dinner that evening. The prep time includes boiling the potatoes.

Steps:
- Put everything, except the cheddar cheese in a large pot or bowl.
- Using a mixer blend until smooth.
- Spoon into a casserole dish that's been sprayed lightly with cooking oil.
- Cover and bake at 325 degrees for 40 minutes.
- Uncover and sprinkle with cheddar cheese.
- Bake 5-10 minutes just until cheese melts.

- Put the garlic cloves into a saucepan and cover with water. Bring to a boil, reduce the heat and simmer 30 minutes. Drain.
- Cool slightly and press the garlic out of the skins into a small bowl.
- Cut the potatoes into quarters and steam over boiling water 20 to 25 minutes, or until tender. Drain and put into a large bowl. With an electric mixer beat the hot potatoes until well mashed. Beat in the garlic, cream cheese, sour cream, milk, green chilies, salt and 2 tablespoons butter or margarine.
- Beat until smooth and fluffy. Transfer to a greased 2-quart casserole and cool. Cover and refrigerate up to 24 hours ahead. Remove from refrigeration 1 hour before cooking.
- Dot with 1 tablespoon butter and bake, covered, in a preheated 350 degree oven 30 minutes.
- Uncover and continue baking 25 additional minutes.
- Note: For those who like very spicy food, substitute a 4-ounce can of chopped jalapeno chilies for the chopped green chilies.

GARLIC MASHED POTATO CASSEROLE
This is a do ahead recipe that I haven't been able to top in the last 10 years. I make this throughout the year. There are never any leftovers.

- 1. Boil the potatoes with the garlic cloves in the water. Meanwhile soften the butter and cream cheese in a bowl large enough to add the boiled potatoes to as they finish cooking.Tip:I cover the bowl with a clean kitchen towel to keep the heat in as I add the finished potatoes.
- 2. When all the potatoes are cooked (test them with a fork) add them to the bowl on top of the stick of butter and pkg. of cream cheese. Heat the milk in a microwave safe bowl for about 1:20 minutes and add just before blending the whole thing with my hand mixer.
- 3. Mix the potatoes,garlic, butter, cream cheese, and milk until of a smooth consistency. Pour into a greased casserole or souffle dish.top with pats of butter and bake for 30 minutes at 350. The top will have a slight crust depending on how much butter is added on top.
GARLIC PARMESAN MASHED POTATO CASSEROLE
Garlic Parmesan Mashed Potato Casserole makes the PERFECT Thanksgiving and holiday side dish! Russet potatoes cook with garlic, then are mashed and baked!

- Using a sharp knife, chop the scrubbed and peeled potatoes into 1" cubes.
- Fill a large saucepan or Dutch oven with water, then add the potatoes to the water. Place the garlic cloves in the water, as well.
- Season the water with a teaspoon of salt.
- On the stovetop, heat the water and potatoes over high heat and bring to a boil. Cook until the potatoes are fork tender, about 20 minutes.
- Drain the potatoes, and place back in the saucepan.
- Measure out the butter, milk and 1 cup of parmesan cheese on top of the potatoes.
- Using a hand mixer on a low speed, slowly blend the ingredients together until smooth and creamy.
- Season the potatoes with salt and pepper.
- Preheat the oven to 350°F. Spray a 9'' x 13'' baking dish with nonstick cooking spray, and set aside.
- Transfer the mashed potatoes into the prepared baking dish. Sprinkle the additional ¾ cup cheese on top of the casserole.
- When the oven is preheated, transfer the casserole to the oven.
- Bake for 25 minutes, then turn up the heat to 425°F. Bake for an additional 15 minutes, or until the cheese has browned.
- Remove from the oven, and let cool slightly.
- Serve warm, and enjoy!
