1 pound new potatoes, peeled, washed, and cut into wedges
An oven-to-table baking dish that can accommodate both the fish and the potatoes in one layer
4 tablespoons extra virgin olive oil
4 or 5 fresh rosemary sprigs
4 whole garlic cloves, peeled
Fine sea salt
Black pepper ground fresh from the mill
A 2-pound fillet from a firm-fleshed fish, such as grouper, striped bass, red snapper, or mahi mahi
2 tablespoons fine, dry, unflavored bread crumbs

Steps:

  • 1. Turn on the oven to 400°F.
  • 2. Place the potato wedges in the baking dish, pour 2 tablespoons of the olive oil over them, add 2 sprigs of rosemary, all the garlic cloves, and salt, and pepper. Toss thoroughly. Put the dish in the preheated oven.
  • 3. After 15 minutes, remove the dish to turn the potatoes over, then put it back in the oven. Cook until the potatoes feel tender when tested with a fork, another 10 minutes or so.
  • 4. Remove the dish from the oven. Push the potatoes to the sides, making room in the center for the fish fillet to lie flat.
  • 5. Wash the fish fillet, pat it dry with paper towels, and lay it flat in the dish, skin side down. Strip the leaves from the remaining rosemary sprigs, scatter them over the fish, add salt and pepper, and sprinkle the bread crumbs and the remaining 2 tablespoons olive oil over the fillet. Return the dish to the oven and bake for 14 minutes. Let the dish settle out of the oven for 3 to 4 minutes before bringing it to the table.

Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

1 tablespoon unsalted butter, plus a little more to oil roasting pan
2 tablespoons extra virgin olive oil
6 garlic cloves, chopped
1 cup breadcrumbs (I use seasoned)
1/4 cup parsley, chopped
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 egg, beaten
2 lbs boneless cod fish fillets, 1 inch thick and cut into 4 pieces
4 lemon wedges, for serving

Steps:

  • Preheat oven to 400 degrees F.
  • Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
  • Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
  • Mix to moisten the crumbs and seasonings.
  • Dredge each fish fillet in the beaten egg first.
  • Then dredge each fish fillet into the crumb mixture.
  • Place the coated fish fillets in an oiled roasting pan for the oven.
  • Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
  • Serve with lemon wedges.

3 tbsp olive oil
1 large onion , sliced
2 garlic cloves , sliced
1 red chilli , finely chopped
2 tbsp tomato purée
1kg tomatoes , roughly chopped
200ml white wine
350ml fish stock
3 strips orange zest
1kg skinless halibut fillets, cut into large chunks
500g clams
400g large raw prawns
handful flat-leaf parsley , chopped
1 large ciabatta loaf, cut into 1cm slices
5 tbsp olive oil
2 garlic cloves , halved

Steps:

  • To make the garlic toasts, drizzle the bread with oil, then griddle or grill until golden all over. While the toasts are still hot, rub them with garlic and set aside.
  • Heat the oil in a wide, deep frying pan. Add the onion and cook over a gentle heat for 5 mins until softened. Stir through the garlic and chilli and cook a couple of mins more. Add the tomato purée and tomatoes. Turn up the heat and cook for 10-15 mins, stirring until the tomatoes are pulpy. Pour over the wine and cook for 10 mins more until most of it has boiled away.
  • Add the fish stock and orange zest and heat until gently simmering. Nestle the halibut chunks into the liquid and cook for 5 mins. Add the clams and prawns and cook for 5 mins more until the fish is cooked through and the clams have opened (discard any that haven't). Sprinkle the parsley over the stew and serve with the garlic toasts.

1/2 cup dry white wine
2 shallots, minced
2 garlic cloves, crushed and finely chopped
1/4 cup unsalted butter, room temperature
1 teaspoon fresh parsley, finely chopped
2 (8 ounce) white fish fillets
2 tablespoons extra virgin olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • In a small pot, whisk together white wine, shallots and garlic.
  • Cook over high heat until reduced to half. Remove from heat, cool slightly. When mixture is warm, cut in butter and whisk together. Add parsley and season with salt and pepper.
  • Cover with plastic wrap and refrigerate for at least 30 minutes. Bring to room temperature before grill them. Heat grill over high heat.
  • Brush fillets with olive oil and season with salt and pepper. Grill fish for 4 minutes per side, or until golden brown and fish flakes easily with a fork.

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Prepare a broiler pan with cooking spray.

4 fish fillets, skin removed (flounder, tilapia, cod, or bass)
salt
pepper
1/2 cup flour
2 tablespoons olive oil
2 tablespoons white wine
6 tablespoons butter
4 -6 garlic cloves, sliced thin
2 tablespoons italian seasoning (or use fresh herbs)
1/2 lemon, juice of (slice the other half of the lemon for garnish)

Steps:

  • Season the fillets with salt and pepper. Heat a saute pan on top of the grill, firepit, or stove over med high heat.
  • When the pan is hot add the olive oil and heat. Dredge the bass fillets in the flour and shake off any excess.
  • Place the fillets in the pan and pan fry about 3 minutes per side, until golden brown. Remove the fish from the pan. Reduce to a medium/med-low heat (move away from coals if cooking outdoors). De-glaze the pan with the wine and then add the butter.
  • When the butter is melted, add the sliced garlic. Fry for about a minute just until the garlic begins to turn light golden brown.
  • Add the herbs and remove from the heat. Carefully, add the lemon juice. Season with salt and pepper. To serve, place a fillet on a plate and spoon some of the lemon garlic herb butter over the fish. Garnish with lemon slices.

The word "tagine" means two different things, says Jaafar, "either a traditional stew of meat, poultry or fish, or a conical-shaped, earthenware vessel in which we cook it." Although tagines can be purchased at many better kitchenware stores, it's safe to say that most American kitchens do not contain one. An ordinary baking dish is an acceptable substitute if it is very tightly covered. Tagines are almost always served with couscous, which is the "rice" or "pasta," of Morocco, Jaafar tells us.

1/4 cup extra-virgin olive oil
1 medium-sized yellow onion, very finely chopped (about 1/2 cup)
3 cloves garlic, minced
1 cup finely chopped fresh parsley leaves

4 flounder or sole fillets, each weighing about 6 ounces
1/2 pound (drained weight) pitted Middle Eastern green olives, coarsely chopped
1 lemon, very thinly sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • Use a small amount of olive oil to grease a shallow baking dish that is just large enough to hold the stuffed fillets in 1 layer, and set aside.
  • Heat 1 tablespoon of the remaining olive oil in a medium-size skillet over medium heat. When it is hot, add the onion and garlic, and cook, stirring, just until the onion is softened, 3 to 5 minutes. Remove from the heat and stir in the parsley and pepper, and set aside.
  • Rinse the fillets and pat dry with paper towels. Lay the fillets out flat on a work surface, inside up. Spread the onion mixture down the center of each fillet, dividing evenly. Fold fillet over the onion mixture, and secure with a couple of toothpicks. Arrange the stuffed fillets in the prepared baking dish. Spoon the chopped olives evenly over the fillets. Arrange the lemon slices over the olives. Drizzle evenly with the remaining olive oil, then sprinkle lightly with paprika.
  • Cover the baking dish very tightly with aluminum foil, and bake for 20 minutes. Remove the foil, and test the fish for doneness. It should flake when lightly touched with a fork. Serve immediately, accompanied by hot couscous.

  • Turn on the broiler, and cover broiler pan with aluminum foil.
  • Wash, dry and coarsely chop cilantro and parsley. Mince cilantro, parsley and garlic in food processor.
  • Add the cumin, hot pepper flakes, lemon juice and olive oil, and process until well blended.
  • Wash fish, and cut in half. Place in a single layer on foil, and spread cilantro mixture evenly over fish.
  • Broil fish four inches from heat, according to the Canadian rule: measure fish at the thickest part, and cook 8 to 10 minutes to the inch.

THE FISH MARKET CHEEZY GARLIC BREAD

I came to the Bay Area CA in 1975 and the first Fish Market was opened on El Camino Real in Palo Alto CA the next year in 1976. It was only 5 minutes from work and I started going to the Fish Market often for lunch. The second Fish Market was opened in early 80's also in my neighborhood, Santa Clara. Since then, they have expanded to the Socal area. I've always loved their seafood selection. So fresh, but I also loved few other offerings such as this Cheezy Garlic Bread, their coleslaw and potatoes au gratin. This recipe comes from their own cookbook. Apparently this bread was served mainly for their employees long before it hit the menu. In the book, this bread is made with 3 types of sauces ie garlic puree, aioli sauce and finally Parmesan sauce that adds garlic puree and aioli sauce. I streamlined the procedure for easier recipe.

1 loaf sourdough bread, sliced in half lengthwise
10 garlic cloves
2 tablespoons olive oil
1 cup mayonnaise
1 cup parmesan cheese
2 tablespoons lemon juice
2 tablespoons parsley, minced
1/3 cup green onion, minced

Steps:

  • Preheat oven to 425°F.
  • Finely mince garlic in a food processor with olive oil or alternatively finely mince garlic and mix olive oil in to incorporate well. Only use 1 T garlic puree for this recipe and freeze the rest in a small container for other uses or later use. Once frozen, it can be easily scooped out.
  • Combine 1 T garlic puree from above, mayonnaise, Parmesan cheese, lemon juice, parsley, and green onion. Mix well.
  • Slice the bread lengthwise in half and liberally spread the Parmesan cheese mixture on the cut side of the bread.
  • Bake at 425 F for about 9-10 minutes until brown and crusty.

4 tablespoons butter (Olive Oil OK)
1 large onion, chopped
1 green pepper, chopped

1 (15 ounce) can stewed tomatoes
3 (15 ounce) cans chicken broth (veg will do)
8 ounces clam juice
4 red potatoes (optional)

lemon juice
cayenne pepper (to taste)

Steps:

  • This is a very basic recipe, it encourages experimentation with additional ingredients.
  • In Large Saucepan saute butter, pepper, onion, and garlic until onion is translucent.
  • Add Chicken broth, tomatoes and clam juice, and potatoes if necessary, bring to boil; reduce heat to simmer.
  • Add fresh herbs, splash of wine, salt and pepper to taste and let simmer for 3 minutes (or until potatoes are tender) stirring occasionally.
  • Add fish and cook for 5-7 minutes or until fish is cooked.
  • While fish is cooking in soup, make the aioli.
  • In small bowl mix, mayo, garlic, lemon juice and cayenne.
  • Put on the table.
  • Serve soup in large bowls with plenty of sourdough and dollop of aioli.

12 corn tortillas, warmed or lightly toasted

  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. In a medium bowl, whisk together olive oil, garlic, and lime juice. Add fish and turn once to coat; let sit 5 minutes.

Try this simpler, lighter version of bouillabaisse, a classic fish soup - serve with toasted slices of baguette to mop up the tomato based sauce

3 whole heads garlic
150ml good olive oil , plus extra for drizzling
few good pinches of flaky sea salt
50ml Pernod
good pinch of saffron strands
1 fennel bulb
4 celery sticks
1 onion
1 red chilli , seeds left in
2 tbsp olive oil
4 garlic cloves
2 tbsp fennel seeds
pinch of saffron
2 bay leaves
50ml Pernod
200ml white wine
750ml passata
3 grey mullet fillets (about 500g in total), skin on, cut into large chunks
300g gurnard fillets, skin on, cut into large chunks
200g prepared squid and tentacles, cleaned and cut into rings
juice 1 lemon
4 tbsp chopped flat leaf parsley , plus extra to serve
toasted slices of baguette , to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. To make the saffron and garlic paste, cut the whole heads of garlic in half horizontally. Place the garlic heads, cut-side up, on a small baking tray. Drizzle over a little olive oil and season with salt. Cover with foil and bake for 40-50 mins until softened. Remove the foil and return to the oven for a further 15-20 mins until the garlic has turned golden brown.
  • Meanwhile, make the soup base. Chop the fennel, celery and onion into small dice and thinly slice the red chilli. Heat the oil in a large saucepan and add the chopped vegetables. Grate the garlic into the pan and add the fennel seeds. Stir well, then cover and sweat for 10 mins. Add the saffron and bay leaves, and cook for a further 10 mins until the vegetables start to soften. Pour in the Pernod and wine, bring to the boil, then add the passata and 400ml water. Bring to the boil, then turn the heat down to a simmer. Cover and cook for 45 mins until all of the flavours have started to work together, then remove the pan from the heat and leave to cool a little.
  • Transfer the soup to a jug blender and blend until smooth, then pass through a fine sieve into a clean saucepan - you may need to do this in batches. If the soup needs thickening, reduce over a medium heat. When it is the consistency of pouring cream, remove from the heat and set aside, or leave to cool and chill in the fridge until needed. The base of the soup can be made 3 days ahead.
  • Meanwhile, for the paste, pour the Pernod into a small saucepan and add the saffron. Bring to the boil, add the olive oil and warm gently. Take off the heat and leave to cool.
  • When the garlic is golden brown, remove the tray from the oven and squeeze the cloves out into the bowl of a pestle and mortar. Add a large pinch of flaky sea salt and pound to a paste. Slowly add the saffron-infused olive oil, stirring constantly. Transfer to a clean container and chill until needed.
  • Bring the soup base to the boil in a large pan, then turn down to a light simmer and taste for seasoning. Add the chunks of prepared fish and squid, and gently poach the fish in the soup for 10 mins, or until it is just cooked. Remove from the heat and stir in the lemon juice and parsley. Ladle the soup into bowls, piling up the fish in the centre. Spoon on the saffron and garlic paste and sprinkle over some more parsley. Serve with toasted slices of baguette and the extra saffron and garlic paste on the side.

Grilled Fish Sammies with Garlic Tartar Sauce and Baked Waffle Fries with Spicy Bloody Ketchup and a Slaw Salad image

1 pound store-bought waffle fries
4 (6-ounce) fillets white fish, such as halibut, skinless
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
4 crusty rolls, split
3/4 cup mayonnaise
1 clove garlic, grated
3 tablespoons capers
1/4 cup pitted chopped green olives
Handful flat-leaf parsley, finely chopped
1 cup ketchup
2 teaspoons Worcestershire sauce, eyeball it
1 teaspoon hot sauce
1 or 2 tablespoons prepared horseradish, your preference
1 lemon
Celery salt, to season fries
1/2 red onion, very thinly sliced
8 green or red leaf lettuce leaves
Slaw Salad, recipe follows
1 bulb fennel with tops, thinly sliced plus 1/4 cup fennel tops
1/2 head red cabbage, shredded
1/4 cup honey
1/4 cup cider vinegar
2 tablespoons grill seasoning (recommended: McCormick's)
1 tablespoon poppy seeds
1 1/2 tablespoons toasted sesame seeds
1/4 cup extra-virgin olive oil

Steps:

  • Preheat oven to 425 degrees F and bake fries 20 minutes, or according to package directions, turning once.
  • Heat skillet or grill or grill pan over medium-high heat.
  • Season the fish with salt and pepper and coat with about 1 tablespoon extra-virgin olive oil.
  • Toast rolls on grill or heat broiler and set them in the middle of the oven to brown, then reserve.
  • Combine mayonnaise with grated garlic, capers, olives, parsley.
  • Combine ketchup with Worcestershire, hot sauce, horseradish and lots of black pepper.
  • Cook fish 3 to 4 minutes on each side until firm, opaque and cooked through. Squeeze lemon over cooked fish.
  • Remove fries from oven and season with celery salt and pepper.
  • Place fish on rolls with lettuce, red onion and tartar sauce. Serve fries alongside with bloody ketchup.
  • In a large bowl, combine the fennel, fennel tops and red cabbage. In a separate small bowl, combine the honey, cider vinegar, grill seasoning, poppy seeds, and sesame seeds. Slowly whisk in the olive oil. Pour the dressing over the salad and toss together.

Parchment paper
4 (6 to 7-ounce) portions sea bass
Salt and freshly ground black pepper
1 bunch scallions, cut into 3-inch pieces on an angle
1/2 pound shiitake mushrooms, stemmed and sliced
3 to 4-inch knob ginger, peeled and thinly sliced
4 large cloves garlic, peeled and thinly sliced
3 tablespoons honey
2 tablespoons rice wine vinegar
3 tablespoons tamari sauce

Steps:

  • Preheat oven to 375 degrees F.
  • Rip off 4 pieces of parchment to form packets each about 12-inches long. Season fish with salt and pepper. Place a piece of parchment in a shallow dish then in the center of the paper stack 1/4 of the scallions and shiitakes, layer with slices of ginger and garlic and top with fish. Combine the honey, vinegar and tamari and pour 1/4 of the sauce over fish. Fold over the top of the parchment then roll the sides in to form a sealed pouch. Repeat with remaining parchment and ingredients. Arrange the pouches on a baking sheet and roast in hot oven 12 to 14 minutes.

fish fillets - desired amount or whole fish
nonstick vegetable spray (pam)
1/4 c brandy or apple juice
1/2 c onion flakes
1/4 c oil or melted butter (i used butter)
1/4 c lemon juice
1/4 c soy sauce
4 clove garlic, minced
2 Tbsp worcestershire sauce
salt and pepper to taste
lemon slices
paprika and/or parsley

Steps:

  • 1. Rinse and dry fish and put into a baking pan that has been sprayed with nonstick cooking spray. Combine all ingredients (except lemon slices, paprika and/or parsley) and pour over fish. Let stand at least one hour.
  • 2. Bake in a 400 degree oven for about 30 minutes, or until fish flakes and has lost its transparency. Baste a couple of times during baking process. Decorate top with lemon slices, paprika and/or parsley.

3/4 pound striped bass fillets
3/4 pound halibut fillets
2 tablespoons extra-virgin olive oil
2 tablespoons chopped shallots
1 chopped garlic clove
1/2 teaspoon dried crushed red pepper
1 tablespoon chopped Italian parsley plus additional for garnish
Salt
Pepper
20 clams (scrubbed)
16 mussels (scrubbed and debearded)
1/4 cup dry white wine

Steps:

  • Cut striped bass fillets and halibut fillets into 2-inch cubes (don't use tuna or salmon - they do not belong in a fish stew). In a large skillet, heat olive oil over medium-high heat. Add chopped shallots, chopped garlic, and dried crushed red pepper. After they are light brown (about 2 minutes), add parsley, then quickly throw in the fish. Add salt and pepper to taste. After the fish is lightly colored, add clams and mussels and white wine. Cover the pan and cook over medium heat for 5 minutes (when the mussels and clams open, the stew is done). Okay? Sprinkle with chopped Italian parsley. Serve with 1/2-inch-thick slices of Italian bread, fried in olive oil, on the side. That's it; it's done.

1 (4 ounce) fillet swai fish
1 pinch Greek seasoning, or to taste

Steps:

  • Spray a nonstick skillet with cooking spray; heat over medium-high heat. Cook and stir garlic in hot skillet until lightly browned and fragrant, about 1 minute. Move garlic to one side of skillet.
  • Place swai fish into the skillet and season with Greek seasoning. Spoon garlic onto top of fish. Cook until edges of fish are white and bottom is browned, about 5 minutes. Flip fish and cook until fish flakes easily with a fork, about 5 minutes more.

1 long loaf sourdough bread
1/2 cup butter, softened
1 teaspoon parsley, chopped
1/8 teaspoon fresh garlic, minced
1 cup mayonnaise (do not use low-fat, as it will not brown)
1 tablespoon lemon juice
1 tablespoon parsley, chopped
3 cups romano cheese, grated medium

Steps:

  • Prepare garlic butter by combining butter, parsley and garlic.
  • Reserve.
  • In a bowl, mix all the ingredients for Romano Sauce by hand.
  • Blend the mix to a smooth, paste-like consistency, but do not break up the cheese.
  • Cut the loaf of bread in half lengthwise (horizontally) so that you are left with two long halves.
  • Cut the halves in half crosswise (short) so that you are left with four quarters.
  • Spread garlic butter over the loaves on non-crust side, then spread with cheese mix.
  • Bake on a baking sheet in a 400-degree oven until golden brown.
