1/3 pound firm alpine-style cheese (such as gruyere)
1/3 pound fontina
1/3 pound gouda
2 tablespoons cornstarch
1 cup dry white wine (such as Sauvignon Blanc)
1 clove garlic (minced)
1 tablespoon fresh lemon juice
1 tablespoon brandy
1 teaspoon Dijon mustard
1/8 teaspoon nutmeg
Boiled baby new potatoes in their skins (quartered if large)
Lightly steamed broccoli florets
Lightly steamed cauliflower florets
Lightly steamed asparagus
Button mushrooms (wiped clean and stems removed)
Cherry tomatoes
Sliced firm apples (such as Granny Smith)
Cooked sliced hot sausage
Cubed French, sourdough, and/or pumpernickel bread

Steps:

  • Grate all of the cheeses. In a medium bowl, combine the cheeses with the cornstarch, tossing thoroughly to coat all pieces.
  • In a stove-safe fondue pot or large heavy saucepan, bring the wine, garlic, and lemon juice to a simmer over medium-low heat. Add the cheeses to the simmering liquid a little at a time, stirring well between each addition to ensure a smooth fondue. Once smooth, stir in the brandy, mustard, and nutmeg.
  • Arrange an assortment of bite-size dipping foods on a platter. If necessary, carefully pour the fondue into a fondue pot. Serve with fondue forks or wooden skewers. Dip and enjoy!

This warm, mild, creamy fondue is simple to make but tastes like you spent a lot more time on it. Delicious with bread cubes, vegetables, or even little meatballs. It's a great base recipe to put your own personal twist on with other cheeses or seasonings. Experiment with the types of cheese you like in this; it's great with Asiago, Romano, or even a little sharp Cheddar. For an extra kick, add a touch of cayenne pepper or hot sauce.

1 cup milk
¾ cup grated Parmesan cheese

1 cup dry white wine
½ pound shredded Swiss cheese
½ pound shredded Gruyere cheese
2 tablespoons all-purpose flour
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 (1 pound) loaf French bread, cut into 1 inch cubes

Steps:

  • Simmer wine in fondue pot. Add Swiss cheese, Gruyere cheese, 1/4 pound at a time. Stir after each addition of cheese until melted. Stir in flour. When all the cheese has melted, stir in salt and nutmeg. Serve with cut-up French bread.

GARLIC CREAM CHEESE FONDUE

Every year during New Years, you can see me at home of with a few friends. A few warm snacks is great to have on hand. Dust off that Fondue pot, cut up some snacks and dip away!

2 Tbsp olive oil
2 clove garlic, minced or zested
3 box (8oz) cream cheese or 2 pkg cream cheese and 8oz sour cream)
1 1/4 c whipping cream (heavy cream)
1 Tbsp dried basil
1 tsp chili powder (less if you do not like spicy foods)
1 tsp dried oregano
salt and pepper to taste

Steps:

  • 1. In a medium pot over medium heat, heat the oil and saute the garlic being careful to not burn garlic or it will be bitter. Gradually add the rest of the ingredients, except for the items you wish to use for dippers. Once all the ingredients are melted and well mixed, transfer the mixture into your cheese fondue pot.
  • 2. Light the fondue burner and adjust the heat to maintain the cheese fondue warm but not too hot. Arrange a tray with fondue skewers and items for dipping.
  • 3. Note: If your mixture is too thick, add more light cream (or alcohol of your choice). If the mixture is too runny, add cheese.
  • 4. Tip: If you are preparing this dip ahead of time, make sure to have more cream handy to soften the dip when you serve it.
  • 5. Suggestions for dipping: Pieces of Italian Bread, pretzel sticks, cooked shrimp, cooked ham, mushrooms and steamed broccoli, Boiled potatoes cubed into bite size and assortment of vegetables.

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
Assorted dippers

Steps:

  • In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard.
  • Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
  • Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

1 1-pound crusty French bread or sourdough bread, cut into 1 1/2-inch cubes

Steps:

  • Combine both cheeses, flour, nutmeg, and white pepper in large bowl; toss to coat. Bring 1 cup wine and garlic to simmer in a heavy large saucepan over low heat. Add cheese mixture by handfuls, whisking until melted and smooth after each addition. Mix in more wine by tablespoonfuls to reach desired consistency. Transfer to fondue pot.
  • Set fondue over candle or canned heat. Serve fondue with bread.

1 garlic clove, crushed
1/4 cup dry white wine
9 ounces brie cheese, rind removed and cubed
1 tablespoon cornstarch
2 tablespoons green onions, chopped
1 pinch nutmeg, freshly grated
salt and white pepper

Steps:

  • Rub garlic all over the inside of your fondue pot. Then rub it in a saucepan, leaving the crushed pieces in the bottom. Add the white wine to the saucepan and heat over medium-low heat.
  • Toss the cheese cubes in cornstarch to coat. When the wine is hot, add the cheese. Stir slowly with a wooden spoon at first and then use a whisk. Stir constantly to keep it from scorching on the bottom of the pot.
  • When the cheese has melted, add green onion and remove pot from the heat. Grate in a little nutmeg. Season with salt and pepper to taste.
  • The fondue should be smooth and coat a wooden spoon. If it seems to runny, add more cheese. If it is too thick, add a splash more wine --sparingly.
  • Pour the cheese into your fondue pot and keep fondue warm over low heat.

CLASSIC CHEESE FONDUE

200ml dry white wine
1 tbsp lemon juice
200g comte or gruyère, grated
200g emmental, grated
2 tsp cornflour
1 tbsp kirsch or schnapps
1 garlic clove, halved (optional)
crusty bread, boiled new potatoes, vegetable crudités and cornichons, to serve

Steps:

  • Pour the wine and lemon juice into a heavy-based pan over a medium-low heat and warm until steaming. Add all of the cheese, a handful at a time, whisking between each addition until all the cheese has been added. Continue to stir for 4-5 mins until everything is fully melted, smooth and creamy. Mix the cornflour with the kirsch in a small bowl, then stir this into the cheese mixture. Continue to cook over a low heat for a minute more.
  • Rub the garlic on the inside of the fondue pot, if you like, then carefully pour the cheese mixture into the pot and immediately place it over the flame. (If you don't have a fondue set, add the garlic along with the wine in step one, then remove and discard it before you add the kirsch mixture.) Serve immediately with crusty bread, boiled new potatoes, vegetable crudités or cornichons for dunking, if you like. You can place the fondue back over a low heat if you need to reheat it after serving.

3 tablespoons melted butter, divided
1 package (8 ounces) cream cheese, softened
2 cups shredded part-skim mozzarella cheese
1 cup shredded fontina cheese
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
4 garlic cloves, thinly sliced
1 teaspoon dried rosemary, crushed
1 teaspoon dried thyme
1/2 teaspoon pepper
Optional: Toasted French bread baguette slices, baked pita chips or Assorted fresh vegetables

Steps:

  • Preheat oven to 450°. Brush an 8-in. cast iron or other ovenproof skillet with 1 tablespoon butter; set aside. In a large bowl, beat cream cheese, mozzarella, fontina, cheddar and Parmesan cheeses, garlic, rosemary, thyme, pepper and remaining 2 tablespoons butter until combined. Spread into prepared skillet.
