Nothing is more enjoyable than grilling fresh prawns. The sauce in this recipe accents the sweetness of the prawns to make a stunning dish.

1 pound jumbo prawns
2 tablespoons cooking oil
2 tablespoons minced garlic
2 tablespoons thinly sliced lemon grass
5 fresh Thai chile peppers, sliced thin
1 shallot, sliced thin
2 kaffir lime leaves
1 tablespoon fish sauce, or to taste
1 lime, juiced
1 tablespoon Thai roasted chilli paste (nam prik pao)
1 tablespoon torn fresh mint leaves

Steps:

  • Preheat an outdoor grill for medium heat; lightly oil the grate.
  • Cook the shrimp on the hot grill until they are bright pink on the outside and the meat is no longer transparent in the center, 5 to 10 minutes. Arrange the prawns on a serving platter.
  • Heat the oil in a skillet over medium heat. Fry the garlic in the hot oil until brown, 7 to 10 minutes. Remove from heat and stir the lemon grass, chile peppers, shallot, lime leaves, fish sauce, lime juice, and chilli paste into the garlic; toss to combine. Spoon the sauce over the prawns. Garnish with the mint to serve.

I've always love crustacean dishes...especially prawns. In my hometown in Davao City, Philippines, there's one famous seafood resto that offers the best garlic prawns. I improved the dish by making it more spicy by adding...red and green chili peppers for that "kick".

350 g medium prawns
3 tablespoons olive oil
8 ounces Sprite
rock salt
pepper
7 garlic cloves, crushed
1 dash peppercorn
1 dash oregano, powder
1 teaspoon curry powder
1 dash ground basil
10 pieces green chili peppers, minced (siling labuyo)
1 piece red bell pepper, minced
1/4 cup minced parsley
2 tablespoons olive oil
1 tablespoon sesame oil
2 tablespoons oyster sauce
2 tablespoons red pepper sauce (habanero)
4 tablespoons honey
2 tablespoons sugarcane vinegar
1 tablespoon knorr liquid seasoning

Steps:

  • Remove legs and antennaes from prawns.
  • In a bowl, mix sprite, rock salt, pepper -- add prawns in the marinade, refrigerate for 30 minutes.
  • For the sauce, heat olive oil in a non-stick pan, saute garlic red and green peppers.
  • Add oyster sauce, red pepper sauce, honey, vinegar, liquid seasoning, sesame oil, 1 tbsp minced parsley, peppercorn, oregano, curry powder and basil. Whisk until well mixed. Put in a bowl and set aside.
  • In another non-stick pan, heat olive oil. Stir fry prawns for a minute, then pour 1/2 cup of the marinade.
  • Let marinade boil and simmer for 5 minutes.
  • Then pour in garlic & chili sauce -- mix well.
  • Serve hot!

What could be simpler than this recipe? I like to serve it with rice and an Asian vegetable mixture (I get mine from the frozen food section of my grocery store).

2 tablespoons vegetable oil
1 lb shrimp prawns, peeled and deveined
3 tablespoons chili-garlic sauce, such as Lee Kum Kee brand (usually in the Asian section)
1 green onion, sliced

Steps:

  • (If serving with a frozen vegetable mixture and rice, start cooking them while you peel and devein the shrimp. When the vegetables and rice are done, keep them warm and start cooking the prawns -- it will take only a few minutes.).
  • Heat oil in wok or skillet. Add prawns and stir-fry until just pink.
  • Add chili garlic sauce and stir-fry until prawns are completely cooked, just about 2-4 minutes more, depending on the size of your shrimp. Sprinkle with green onion and serve.

6 Tbs. water
6 Tbs. soy sauce
1/4 cup rice vinegar
4 tsp. sesame oil
1/4 cup ketchup
2 tsp. sugar
2 tsp. cornstarch
3 Tbs. corn or peanut oil
2 lb. tiger prawns, peeled and deveined
2 Tbs. minced fresh ginger
4 garlic cloves, minced
1 red or green jalapeƱo chili, seeded and minced
6 green onions, thinly sliced
Steamed rice for serving

Steps:

  • Make the sauce In a small bowl, combine the water, soy sauce, vinegar, sesame oil, ketchup, sugar and cornstarch. Stir to dissolve the sugar and cornstarch. Stir-fry the prawns Heat a wok or large fry pan over high heat until very hot and pour in 2 Tbs. of the corn oil. Add the prawns and sear, turning once, until browned on both sides, about 1 minute per side. Using a slotted spoon, transfer the prawns to a bowl. Return the wok to high heat and pour in the remaining 1 Tbs. corn oil. Add the ginger, garlic, chili and two-thirds of the green onions and stir-fry until fragrant, about 10 seconds. Give the sauce a quick stir, add to the wok and stir until it begins to bubble. Immediately add the prawns and stir-fry until the prawns are opaque throughout and the sauce has thickened slightly, about 1 minute.
