STUFFED GARLIC-BROCCOLI BREAD LOAF

For garlic lovers! an absolute killer side kick to a meal, or great to have as a snack, this is absolutely amazing! My advise, is you better prepare two of these, cause you will need it.

Number Of Ingredients 10

1 loaf unsliced French bread
6 tablespoons butter
1 head fresh garlic, peeled and chopped fine
2 tablespoons sesame seeds
1/4 cup grated parmesan cheese
1 1/2 cups sour cream
2 cups monterey jack cheese, cut into 1-inch cubes
2 teaspoons lemon pepper (optional)
2 tablespoons chopped fresh parsley
2 cups steamed broccoli, cut into small pieces

Steps:

  • Set oven to 350°F.
  • Cut the loaf in half lengthwise; tear out the soft center of bread in chunks, don't throw away the chunks of bread, (leaving the crust intact).
  • Lay the crust SHELLS on a lightly greased cookie sheet.
  • In a large skillet, melt butter, stir in the garlic and sesame seeds; cook for 1-2 minutes.
  • Stir in the torn bread chunks, and cook until golden brown, and the butter has been absorbed; remove from heat.
  • In a very large bowl, combine the sour cream, Jack cheese, Parmesan cheese, parsley and the lemon pepper (if using).
  • Stir in the steamed broccoli, and the buttered toasted bread chunks (add in the garlic bits in the frypan too!).
  • Toss all together well, and spoon into bread shells.
  • Cover loosely with foil, bake for 20 minutes.
  • Remove the foil, and continue to bake for another 10 minutes.
  • Serve warm-- delicious!

I thought a crusty bread that did not require a lot of time to make would be an ideal compliment to the soup. 4 c all purpose flour ( i used white lily)
1 tsp salt
2 Tbsp sugar
1 large egg
2 c buttermilk
2 Tbsp prepared horseradish ( refrigerated section)
1 bunch chopped green onion tops only
1 tsp baking soda
1 Tbsp granulated garlic powder

Steps:

  • 1. Preheat oven to 450 degrees F. I made this crusty and flavorful bread loaf to compliment my Vegetable with Beef and Orzo Soup. It was a great addition to the soup. Spray a large shallow baking pan or cast iron skillet with non stick cooking spray and set aside till needed. Some of the ingredients used to make the bread loaf.
  • 2. Sift flour into a large bowl then make a well in the center of it adding the salt, sugar & baking soda.
  • 3. Then add the horseradish chopped green onion tops, granulated garlic, egg and buttermilk.
  • 4. Then with a spoon or by hand gradually begin to blend the spices into the flour mixture, with the wet ingredients until the dough comes together.
  • 5. Dough may tend to be a little sticky. Add enough extra flour just until it holds together. Then shape into desired shape and place on baking pan or in skillet. I chose to make it like a loaf this time. With a serrated knife make a long X across bread about 1 1/2 inches deep so that the steam can escape as the bread cooks.
  • 6. Bake in preheated 450 degrees F oven for 15 minutes then REDUCE THE TEMPERATURE TO 400 DEGREES AND CONTINUE TO BAKE FOR AN ADDITIONAL 30 MINUTES OR UNTIL BREAD SOUNDS HALLOW WHEN TAPPED ON THE BOTTOM.
  • 7. Remove from oven and spray with butter flavored cooking spray or brush top with softened butter if desired. I find it much easier to slice bread using an electric knife. Add softened butter while bread is warm if desired.

1 pkg pillsbury refrigerated french bread loaf
3 Tbsp olive oil, extra virgin
1 Tbsp dried chopped chive or parsley
1 Tbsp granulated garlic (not garlic salt)
1-2 Tbsp grated parmesan cheese
garlic juice (optional) 12 sprays

Steps:

  • 1. Spray a long cookie sheet with nonstick cooking spray. Open package and place loaf on cookie sheet seam side down. Make 4-6 deep gashes (cuts) into bread) with a sharp knife.
  • 2. Add the olive oil, and other ingredients to a small bowl EXCEPT THE PARMESAN CHEESE. STIR TILL BLENDED together.
  • 3. Now brush over the top and sides of loaf with an acrylic brush.
  • 4. Now spray with the garlic juice if desired for more garlic flavor.
  • 5. Sprinkle top with grated parmesan cheese
  • 6. Bake in preheated oven for allotted time on package. Mine took about 28 minutes. Remove from oven allow to sit at least 10 minutes before cutting with a serrated knife.
  • 7. Slice into desired size pieces, add butter while bread is hot, if desired. enjoy. I served this bread with my Stuffed Bell Pepper Soup.

5 cups bread Flour
¼ cup Sugar
1 Tsp Salt
1½ Tbsp Yeast
2 eggs
2 Cups Warm Milk About 105 and 110°F
4 Tbsp butter
2½ Tsp Garlic powder
scallions chopped
1 Egg for egg wash - optional

Steps:

  • In a large mixing bowl, dissolve the yeast and one tablespoon of sugar the warm yeast. Stir and leave to proof for about 5 to 10 minutes.
  • Add the flour, remaining sugar, garlic powder, melted butter, green onions, eggs, and salt inside the proofed yeast. Stir with a wooden spoon till a wet mass of dough is formed. About 1-2 minutes.
  • Cover the bowl and leave to rest for 30 minutes.
  • Meanwhile, prepare two 9×5 loaf pans by brushing them with butter and sprinkling some flour over it to coat all the inside of the pan.
  • Remove the dough from the bowl, place it on a lightly floured work surface and divide it into two halves. Use your fingers to flatten out the dough and brush with the butter garlic mixture.
  • Roll the dough into a loaf shape and place in gently place the shaped dough inside the loaf pan.
  • Cover the pan with a clean damp kitchen towel and leave to rest for 20 to 30 minutes.
  • Bake in a 350F preheated oven for 25 to 30 minutes or till a skewer inserted in the middle of the bread comes out clean. Enjoy!
