"It's the only place where you can find a giant vat of peeled garlic, because it's the only place that truly understands how much garlic you'll need for the kind of food your people eat," Michelle Zauner writes about the supermarket H Mart in her memoir, "Crying in H Mart." Thankfully, many other grocery stores now sell containers of peeled garlic cloves. If you don't already buy those, then this recipe is a great reason to start. Chicken thighs, white pepper, chardonnay and 20 garlic cloves are all you need for this zinger of a one-pot meal, which braises in an hour. In that time, chicken fat, wine and water turn into a luscious sauce packed with garlicky redolence. The white pepper, musky and full of earthiness, is a key taste here, so don't skip it.

2 pounds bone-in, skin-on chicken thighs (about 4)
Salt
20 peeled garlic cloves
3/4 teaspoon ground white pepper
1 cup dry chardonnay
Steamed white rice, for serving

Steps:

  • Heat oven to 350 degrees.
  • In a large Dutch oven over medium-high, add enough oil to lightly coat the bottom. Season the chicken with salt on both sides, then add to the pot skin side down. Cook until the skin turns golden and crispy, 8 to 10 minutes. If the skin browns too quickly, lower the heat. Flip, and sear the other side briefly, about 1 minute. Transfer the chicken to a plate and set aside.
  • Add the garlic to the schmaltzy oil over medium-high, and stir until fragrant and very lightly golden at the edges, 1 to 2 minutes. Stir in the white pepper, then immediately add the wine and 1 cup water. Scrape up any stuck-on bits from the bottom of the pot while bringing the liquid to a simmer. Nestle the chicken in the pot skin side up, cover and cook in the oven until the chicken and garlic are meltingly tender, and the wine has reduced, about 1 hour. Taste for seasoning, adding more salt if needed. Serve with rice.

1 1/2 cups rice vinegar (unseasoned)
1/2 cup reduced-sodium soy sauce
1 tablespoon turbinado or light brown sugar
3 bay leaves
1 head garlic, cloves peeled and smashed

8 pieces bone-in, skin-on chicken thighs and drumsticks (about 3 pounds total)
2 tablespoons vegetable oil

Steps:

  • Combine vinegar, soy sauce, sugar, bay leaves, garlic, and 1 teaspoon pepper in a bowl; add chicken and toss until coated with marinade. Cover bowl and refrigerate at least 2 hours and up to overnight.
  • Remove chicken (reserving marinade) and pat dry with paper towels. Heat oil in a large Dutch oven over medium. Add half of chicken and cook until golden brown, 3 to 5 minutes. Turn and brown other sides about 2 minutes more; transfer to a plate and repeat with remaining chicken.
  • Return all chicken and any accumulated juices to Dutch oven; add reserved marinade, making sure liquid comes halfway up sides of chicken (you may need to nestle it). Bring to a simmer over high, then reduce heat to low, cover, and cook until chicken is cooked through and tender, 20 to 25 minutes. Transfer chicken to a clean plate. Skim fat from liquid with a spoon and discard bay leaves. Increase heat to medium‐high and reduce liquid until syrupy (you should have about 1 cup). Spoon sauce over chicken and serve.

  • While bacon is cooking, pat chicken dry and season with salt and pepper. Brown, beginning with skin sides down, in 2 batches in bacon fat over moderately high heat, turning, about 8 minutes. Transfer chicken as browned with tongs to a plate and pour off all but 2 tablespoons fat from skillet.
  • Add shallots to skillet and cook over moderately low heat, covered, stirring occasionally, until soft and pale golden, about 10 minutes.
  • Remove lid and cook shallots, stirring, until deep golden, about 10 minutes more. Add garlic and 1 cup water to skillet and boil, stirring, 1 minute.
  • Return chicken to skillet, turning pieces to coat, then arrange them skin sides up and gently simmer, covered, until chicken is cooked through and garlic is tender, about 30 minutes.
  • Transfer chicken with tongs to a serving dish. Add vinegar to sauce and boil, uncovered, mashing garlic with back of a spoon, until slightly thickened. Season sauce with salt and pepper and pour over chicken, then sprinkle with bacon.

4 whole chicken legs (thigh and drumstick), patted dry with paper towels

2 Tbsp. extra-virgin olive oil
1 head of garlic, halved crosswise, plus 1 clove
1 (3") piece ginger, peeled, scrubbed, thinly sliced
1 Tbsp. coriander seeds
1 Tbsp. cumin seeds
1/2 tsp. crushed red pepper flakes
1 tsp. ground turmeric
3 cups plain whole-milk yogurt (not Greek), divided
1 (15-oz.) can chickpeas, rinsed
Thinly sliced scallions, mint leaves, and lime wedges (for serving)

Steps:

  • Generously season chicken legs all over with salt and pepper. Heat oil in a medium Dutch oven over medium. Arrange chicken legs in pot skin side down (you want them to fit snugly) and cook, lifting up once or twice to let hot fat run underneath, until skin is golden brown and crisp, 10-15 minutes. Transfer chicken to a plate, placing skin side up.
  • Reduce heat to medium-low and add head of garlic, cut sides down, and ginger to pot. Cook, stirring occasionally, until ginger is starting to brown and curl around the edges and garlic is golden, about 4 minutes. Add coriander, cumin, and red pepper flakes and cook, stirring often, until spices are fragrant, about 1 minute. Stir in turmeric followed by 2 cups yogurt and mix until smooth; season with salt.
  • Nestle legs back into pot, skin side up, in a single layer and add water just until legs are almost submerged with skin barely peeking out. Bring to a very gentle simmer, adjusting heat if needed, and cook, uncovered, until meat is very tender and just about falling off the bone, 75-90 minutes (the yogurt will separate and look curdled, which is fine). Let cool 10 minutes.
  • Meanwhile, finely grate remaining garlic clove into a small bowl. Add remaining 1 cup yogurt and stir to combine; season with salt and pepper.
  • Smear yogurt mixture across a platter and scatter chickpeas over. Carefully transfer chicken legs to platter. Using a large spoon or small ladle, skim off bright yellow fat that has collected on surface of braising liquid and drizzle all over platter (it's okay if some rogue spices make it onto platter). Top with scallions and mint, then squeeze lime wedges over.

CHICKEN BRAISED WITH 20 CLOVES OF GARLIC

2 large heads garlic
1 cut-up chicken, about 3 pounds
Salt and freshly ground pepper
2 tablespoons olive oil
1 small onion, chopped
1/3 cup dry white wine
1 teaspoon dried thyme
2/3 cup chicken broth
1 teaspoon cornstarch (optional)

Steps:

  • Bring a small saucepan of water to a boil. Separate head of garlic into individual cloves. Add to boiling water and cook 1 1/2 minutes, or until skin peels off easily. Drain and rinse briefly under cold running water. Peel garlic cloves. Trim any pieces of fat or extra skin from chicken; rinse pieces and pat dry. Season liberally with salt and pepper. In a large skillet, heat oil over medium-high heat. Add chicken, skin side down, and saute until skin is nicely browned, 8 to 10 minutes. Carefully holding lid against pan, pour off all but a thin film of fat. Turn chicken over and sprinkle onion between pieces. Cover and cook 5 minutes. Pour in wine and bring to a boil, stirring with a wooden spoon to scrape up any brown bits on bottom or around sides of pan. Boil until wine is reduced to 2 or 3 tablespoons, about 2 minutes. Scatter garlic around chicken, season with thyme and pour broth into pan. Cover, bring to a boil, reduce heat to low and simmer 25 minutes, or until chicken is very tender. Remove chicken and half of garlic cloves to a deep platter or serving dish. Skim fat off sauce in pan. Pour sauce into a blender or food processor and puree until smooth. If sauce is too liquid, pour into a small saucepan and bring to a boil. Dissolve cornstarch in 1 tablespoon cold water and stir into sauce. Cook, stirring, 1 minute, until slightly thickened. Season sauce with additional salt and pepper to taste. Pour over chicken and serve.

40 large cloves hardneck or purple garlic, unpeeled
8 large skin-on, bone-in chicken thighs
Kosher salt and freshly ground pepper
2 tablespoons EVOO
1 small bunch Tuscan kale or spinach, stemmed (if using kale, thinly slice)
4 tablespoons butter
1 pound cremini mushrooms, thinly sliced
2 tablespoons finely chopped fresh thyme
1/2 cup Marsala wine
3 to 4 cups chicken stock
Freshly grated nutmeg
Ciabatta bread, for mopping

Steps:

  • Preheat the oven to 400 degrees F.
  • Simmer the garlic in a saucepan of water until tender, about 10 minutes (this will soften the flavor). Drain and let cool, then pop the jackets off the cloves and reserve.
  • Sprinkle the chicken with salt and pepper. Heat the EVOO in a large ovenproof skillet. Add the chicken, skin-side down, and cook until the skin is browned and very crisp, 7 to 8 minutes. Flip the chicken and brown the other side, 3 to 4 minutes more. Remove the chicken to a plate. Melt the butter into the fat remaining in the skillet and add the mushrooms and thyme. Cook until the mushrooms are browned and very tender, 12 to 15 minutes. Deglaze with the Marsala, stirring and scraping up any browned bits from the bottom of the skillet with a wooden spoon. Return the chicken to the skillet, skin-side up, and add the garlic. Add enough stock to come up and around the chicken but not cover the skin. Transfer the skillet to the oven and cook for 45 minutes.
  • Transfer the chicken to a warmed platter and loosely tent with foil. Reduce the sauce on the stovetop until it is thick enough to coat the back of a spoon. Add the kale and cook until just wilted, then stir in a bit of nutmeg.
  • Spoon the sauce and kale into shallow bowls and top with the chicken. Serve with warm bread for mopping.

  • Pat chicken dry and sprinkle all over with salt and pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, starting skin sides down, turning over once, 8 to 10 minutes. Transfer to a plate and pour off all but 1 tablespoon fat from skillet.
  • Add butter to skillet and heat over moderately high heat until foam subsides, then sauté celery root and garlic, stirring frequently, until celery root is browned, about 5 minutes.

1 1/2 teaspoons whole coriander seeds
3 cloves garlic
2 tablespoons extra-virgin olive oil
4 bone-in, skin-on chicken thighs (about 1 3/4 pounds)
Coarse salt and freshly ground pepper
1/2 cup dry white wine
Fresh cilantro sprigs, for serving

Steps:

  • In a large skillet over medium heat, toast coriander seeds until fragrant, about 2 minutes. Transfer seeds to a mortar and pestle and lightly crush.
  • Smash two of the garlic cloves and remove peel. Peel remaining clove of garlic and finely chop. Add oil to skillet and increase heat to medium-high. Add smashed garlic and cook until pale golden, 1 to 2 minutes. Season chicken with salt and pepper and add to skillet; let brown on all sides, about 5 minutes per side.

Cover and reduce heat to low temperature. Cook, turning chicken once, about 20 minutes, or until carrots are tender and fork can be inserted in chicken with ease.
  • Remove chicken and carrots from frypan; set aside and keep warm. Cook garlic an additional 3 minutes. Add salt, pepper and broth; bring to a boil. Cook, uncovered, about 3 minutes or until liquid is reduced to 1/4 cup.
  • In blender container, place broth mixture and blend about 30 seconds or until smooth; set aside.
  • In large saucepan, place spinach (do not add water). Cover and cook over medium heat 3 minutes; drain well. Place spinach on serving platter and arrange chicken and carrots on top. Drizzle with garlic mixture.

40 cloves garlic (Garlic Should be parboiled and peeled.)
6 chicken legs-thighs (Chicken may be skinned if desired)
2 medium onions, Coarsely Chopped
2 tablespoons olive oil
1 cup fresh parsley, Chopped
1 teaspoon dried tarragon, Crumbled
1/2 teaspoon allspice
1/4 teaspoon cinnamon
salt & pepper
1/4 cup cognac
1/3 cup dry white vermouth

Steps:

  • Preheat oven to 375 degrees F.
  • Place all the ingredients in a deep, heavy pot that can be covered.
  • Combine everything very well with your hands.
  • Seal the pot very tightly with foil.
  • Place a cover over the foil.
  • Pot must be very well sealed so that no juices or steam can escape.
  • Bake for 1 1/2 hours.
  • Do not open the pot during this time.
  • Serve piping hot, with good crusty bread for mopping up the juices and garlic.
  • Open the pot at the table, so that the diners may get the full benefit of the marvelous fragrance that explodes out of the vessel.

6 chicken thighs (with skin and bone)
2 tablespoons olive oil
10 garlic cloves, halved
3 celery ribs, cut crosswise into 1-inch pieces
1 cup dry white wine
1 cup water
1/4 cup flat leaf parsley, finely chopped

Steps:

  • Pat chicken dry and season with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers.
  • Sear chicken, skin side down, in 2 batches until golden brown (do not turn), 3 to 5 minutes, then transfer to a plate.
  • Pour off all but 2 tablespoons fat from skillet.
  • Cook garlic and celery in skillet over medium heat, stirring frequently, until golden and just beginning to soften, about 5 minutes.
  • Add wine and boil, uncovered, until reduced by about half, 3 to 5 minutes.
  • Add water and bring to a simmer.

1 head garlic
6 tablespoons butter
6 Chicken breasts, skin on bone-in (or out)
2 teaspoons Rosemary, fresh or dried
1/3 cup White wine
1 cup Chicken stock

Steps:

  • Separate garlic cloves and drop into pot of boiling water. Simmer for 2 to 3 minutes.
  • Drain well, slip off skins and set aside.
  • Preheat oven to 425F or 218C. Melt butter in shallow roasting pan, large enough to accommodate chicken in single layer.
  • Roll chicken in butter and arrange in pan skin side down. Sprinkle with salt and pepper and rosemary. Roast 15 minutes and then turn over.
  • Scatter with garlic cloves, baste with butter and continue roasting for another 20 minutes or until golden.
  • Transfer chicken to platter. Pour off excess fat, add wine and bring to boil
  • Add some of reserved garlic and stir until most wine has evaporated. Add chicken stock and lemon juice and boil rapidly until sauce thickens slightly. Season and serve with chicken.

This simple yet very yummy dish gets a down home touch and boost of flavor adding celery! One of my favorite aromatics! Discovered in September 2008's Gourmet Magazine which states "Celery- often dismissed as one of the produce world's poorest relations- contributes an intriguing earthiness to moist chicken infused with the flavors of wine and garlic." If you must substitute the garlic please remember that halved garlic will not release the same amount of garlic flavor that minced does. If using minced fresh garlic I think I would try 1 tablespoon, taste and add more if desired. I calculated servings using one piece of chicken per person. Use any mixture of legs and thighs you prefer. I used 2 legs and 4 thighs. That must have been a weird looking chicken! lol I have had fun playing with this recipe and I have tweaked it a bit to make it even better, I think. Hope you enjoy!

2 lbs chicken thighs or 2 lbs chicken legs
1 teaspoon salt
1/2 teaspoon pepper
olive oil, for browning chicken
10 garlic cloves, halved
1 cup celery, sliced in 1/2 inch pieces
1 cup dry white wine
1 cup fat free chicken broth
2 tablespoons parsley, chopped
1/2 cup green onion, chopped

Steps:

  • Rinse chicken and pat dry well with paper towels. Season with salt and pepper.
  • Spray a large skillet with cooking spray and add just a touch of olive oil to coat the bottom of the pan. Heat oil over medium high heat just until the oil in the pan begins to shimmer. Add chicken skin side down and sear that side only until golden brown. The chicken will release from the pan when ready- do not force it. May need to work in two batches. Remove chicken and reserve.
  • Pour off all fat leaving only a light film on the bottom of the skillet. You can also add a touch of cooking spray if you like. Add celery and cook over medium heat, stirring frequently until it begins to soften and turn golden. About 5 minutes. Add garlic and cook for one more minute, stirring to keep everything from scorching.
  • Add wine and stir, scraping browned bits from bottom of pan. Bring to a boil, uncovered, and reduce by about half, about 3-5 minutes. Add broth and bring to a simmer.
  • Return chicken skin side up, and continue to simmer, partially covered, until cooked through, 20-25 minutes.
  • Remove chicken to a platter. Stir in green onion and parsley, reserving a little to garnish if desired. Bring back to a boil to reduce further and thicken if desired. Taste and season with more salt and pepper if desired.
  • Serve over mashed potatoes, rice or pasta,.

2 3 1/2-pound whole chickens, each cut into 8 pieces
5 whole heads of garlic, cloves separated (about 70), unpeeled
6 tablespoons extra-virgin olive oil, divided
2 cups dry white wine
6 very large fresh thyme sprigs

Steps:

  • Trim excess fat off chicken. Sprinkle chicken with salt and pepper. Lightly smash garlic cloves just to flatten slightly, leaving peel attached and cloves as whole as possible.
  • Heat 4 tablespoons extra-virgin olive oil in heavy large pot over medium-high heat. Working in 2 batches, add chicken and cook until brown on all sides, about 12 minutes per batch. Transfer chicken to plate. Add remaining 2 tablespoons olive oil and garlic to pot. Stir until golden brown, about 4 minutes. Add wine and thyme; bring to boil. Return chicken to pot. Reduce heat to medium, cover, and simmer until chicken is cooked through, moving chicken pieces from top to bottom every 5 minutes (sauce will not cover chicken), about 20 minutes. Season to taste with salt and pepper.
  • Transfer chicken to platter. Spoon garlic cloves around chicken and drizzle sauce over.

1/3 cup extra virgin olive oil
1 medium onion-thinly sliced
5 garlic cloves,sliced
chicken pieces-I like 3 half breast and 6 thighs (skin removed from thighs)
6 Tablespoons of flour
3/4 cup white wine
2 Tablespoons tomato paste
1/4 cup chick stock
1 Tablespoon dried rosemary-crumbled or 3 Tablespoons fresh-chopped

Steps:

  • Heat oil in large Dutch oven over medium heat. Add sliced onion and garlic and saute until soft and slightly brown, about 5 minutes. Transfer onion and garlic to small bowl using a slotted spoon. Season chicken with salt and pepper, dredge in flour and brown well in reserved oil. Transfer chicken to plate. Add wine and tomato paste to pot and deglaze. Return chicken thighs and onion/garlic mixture to pot. Reduce heat to low and cover and cook 20 minutes turning chicken thighs and adding breast pieces. Cook 10 minutes longer. Add 1/4 cut stock and rosemary. Cover and continue cooking until chicken is tender turning occasionally about 20 minutes longer. Transfer chicken to platter, tent with foil. Continue cooking pan juices adding stock to desired thickness.
