2 cups all-purpose flour
½ cup confectioners sugar, plus extra for dusting at the end
2 cups granulated sugar
¼ cup all-purpose flour
½ teaspoon baking powder
4 eggs, at room temperature
6 tablespoons lemon juice
1 teaspoon lemon zest

Steps:

  • Preheat oven to 350° F. Grease and flour a 9 x 13-inch glass baking dish.

I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

cooking spray
2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

Our family just loves "lemon" anything with a lemon flavour. This particular recipe has become a family favourite and are a MUST for any holiday.

Number Of Ingredients 11

1 cup flour
2 tablespoons flour
1/4 cup icing sugar
1 tablespoon icing sugar
1/4 teaspoon baking powder
1/2 cup butter, cold
2 eggs
3/4 cup white sugar
1/2 teaspoon lemon zest
1/4 cup lemon juice
1 pinch salt

Steps:

  • Preheat your oven to 350ºF.
  • In a medium bowl stir together 1 cup of flour and 1/4 cup icing sugar. Cut in the butter until it looks like coarse meal; then work it with your fingers until the dough holds together. Press the mixture into the bottom of an ungreased 8" square pan and bake for 15 or until golden. Remove and leave the oven on.
  • In a medium bowl beat eggs until frothy. Gradually beat in the sugar. Add lemon zest and lemon juice; beat at high speed for 10 minutes, until smooth and slightly thickened.
  • In a small bowl combine the remain 2 Tbsp flour with baking powder and salt; gradually beating it into the lemon mixture, beat until smooth.
  • Pour over the baked crust and bake for 20 minutes, until set and lightly browned. Cool in the pan on a rack and then sift the remaining 1 tablespoons of icing sugar over the top and cut into 12 squares.
