3/4 cup soy sauce, low-sodium recommended but not a must
¼ cup rice wine (sake)
2 teaspoons sesame oil
4 cloves garlic, minced
4 stalks green onion, finely chopped
2 teaspoon roasted sesame seeds, slightly crushed
2 tablespoons sugar
½ teaspoon pepper
½ Asian pear grated on fine grater or in blender or ½ kiwi, optional
1/2 teaspoon gochugaru (Korean spicy pepper powder), optional

Steps:

  • Place all ingredients in a medium sized bowl or at least 2 cup measuring cup.
  • Whisk together well.
  • Pour over ribs and let marinate 6 - 8 hours or overnight.

KALBI OR GALBI (KOREAN SHORT RIBS), HOWEVER YOU WANT TO SPELL IT, IS SIMPLY THE BEST WAY TO EAT SHORT RIBS ON THE BBQ.

5 lb Korean Short Ribs - LA Cut
1 medium onion ((about 4 oz / 120 g))
1/2 cup water
1 cup soy sauce
1/2 cup red wine
1 cup sugar
6-8 large garlic cloves ((40 g))
3 green onions
4 Tbsp sesame oil
1 Tbsp sesame seeds
1 tsp black pepper
2 Tbsp green plum syrup ((optional))

Steps:

  • Rinse ribs under water to remove any bits of bone. Drain. Trim any chunks of fat but most of the fat will melt away during grilling time. These ribs were good quality ones with minimal fat. Drain washed ribs.
  • While ribs are draining, cut onion into chunks or just half, if onion is small. Cut green onions into shorter lengths to fit into the blender. Here's all the ingredients for the marinade to go into the blender.
  • In a blender or chopper, add onion and 1/2 cup water. Blend until smooth.
  • Add remaining 1 cup soy sauce, 1/2 c red wine, 1 c sugar, garlic cloves, green onions, 4 T sesame oil, 1 T sesame seeds, 1 tsp pepper and optionally 2 T green plum syrup (if you want to).
  • Blend until smooth.
  • In a container, add Kalbi pieces and the marinade. Mix everything so each piece is evenly coated.
  • Let ribs marinate in the fridge for at least 1 hr to overnight. If you are in a hurry, even 30 minutes will work.
  • Take ribs out of the fridge and heat your oven broiler for 5 minutes. Lay out your Kalbi on a metal grill pan and broil it on the top rack for 4 minutes for the first side. Then turn it over and grill another 3 minutes on the other side.
  • Serve immediately with rice and other Korean side dishes.

And while it's delicious cooked on the stove, a BBQ will better replicate the true Korean barbecue experience!Do not worry about overcooking the thin slices of beef. The marinade is magical, it keeps the thin slices of beef incredibly tender even if you cook it for over 10 minutes which would ordinarily turn the beef into inedible dry cardboard!

1 tbsp vegetable oil (, for cooking)
1/3 cup soy sauce ((all purpose or light soy, not dark or sweet))
1/4 cup brown sugar
2 tbsp mirin ((Note 2))
1/4 cup onion (, finely grated (including juice))

  • Make Marinade: Whisk Marinade ingredients in a bowl.
  • Marinade 24 hours: Place beef in a ziplock bag, glass or ceramic container. Pour over Marinade, mix well to coat. Cover and marinade for 24 hours.

2 ½ lb korean beef short ribs
½ asian pear, peeled, cored, and chopped
½ medium yellow onion, chopped, plus more thinly sliced, for serving
1 ½ pieces fresh ginger, peeled
5 cloves garlic
½ cup soy sauce
½ cup water
½ cup brown sugar, packed
¼ cup honey
1 tablespoon sesame oil
1 tablespoon vegetable oil, plus more as needed
1 green onion, chopped

Steps:

  • Rinse the short ribs under cold water. Soak in fresh cold water for 30 minutes to get rid of any impurities and bone fragments.
  • Meanwhile, make the marinade: In a blender, combine the Asian pear, yellow onion, ginger, garlic, soy sauce, water, brown sugar, honey, and sesame oil and blend until smooth.
  • Remove the short ribs from the water and pat dry. Transfer to a clean container and pour the marinade over the short ribs. Mix well to make sure the short ribs are evenly coated. Cover and marinate in the refrigerator for at least 4 hours, or overnight.
  • Heat 1 tablespoon of vegetable oil in a Korean barbecue griddle, large cast iron skillet, or nonstick pan over medium heat. Working in batches to avoid overcrowding the pan, cook the short ribs until they reach your desired doneness, flipping only once to retain the moisture in the meat, 2-3 minutes per side. When the ribs are almost done cooking, cut between the bones into smaller pieces. If not using a Korean barbecue griddle, use paper towels to absorb any excess sauce as the meat cooks.
  • Serve the galbi on a bed of thinly sliced yellow onion and top with the green onion.
  • Enjoy!

1 Korean pear or Asian pear, grated with juices
2 tablespoons finely chopped garlic
1/2 small white onion, grated or sliced
1 tablespoon grated fresh ginger
2 tablespoons light brown sugar
1 tablespoon honey
2 tablespoons sesame seeds, toasted
2 tablespoons toasted sesame oil
1 tablespoon ground red pepper
1/4 teaspoon ground black pepper
2 green onions, thinly sliced

Steps:

  • For the marinade: Whisk together all the marinade ingredients in a large baking dish. Add the ribs and turn to coat. Cover and refrigerate for at least 1 hour or overnight; it is best if marinated overnight.
  • For serving: Heat grill to high. Remove short ribs from marinade and grill short ribs until slightly charred and tender and cooked to desired degree of doneness. Serve short ribs with white rice and kimchee.

KOREAN BBQ GALBI

Best Korean BBQ. Traditionally galbi is cooked over wood charcoal but can be cooked by grill, oven, or using a non-stick frying pan. Instead of Asian pears, you can use rice wine or kiwis. You can also add green onions, sesame seeds or fresh ginger.

5 pounds beef short ribs, cut flanken style
5 cloves garlic
1 onion, coarsely chopped
1 Asian pear, cored and cubed
1 cup soy sauce (such as Kikkoman®)
1 cup brown sugar
¼ cup honey
¼ cup sesame oil
black pepper to taste

Steps:

  • Place the ribs in a large stockpot and cover with cold water. Soak ribs, refrigerated, for 1 hour to pull out any blood. Drain.
  • Combine garlic, onion, and Asian pear in a blender and puree. Pour into a large bowl and stir in the soy sauce, brown sugar, honey, sesame oil, and black pepper. Marinate ribs in the soy mixture, covered, overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill ribs until the meat is tender and the outside is crusty, 5 to 10 minutes per side.

2-3 lb pork, beef or chicken
1 c soy sauce
2 tsp honey
3 scallions
2 tsp sesame oil
3-4 clove garlic
1/4 c cola or apple juice
1 pinch black pepper

Steps:

  • 1. Mix the marinade ingredients together and pour into a large zipper bag. Add you meat. I like to use pork ribs, but you can use whatever you like.
  • 2. Gently massage each piece of meat in the marinade. Squeeze out all the air, place into a container an sit in the fridge for a minimum of 3 hours. The longer, the better.
