FUDGY OATMEAL BARS
I received this recipe from my sister-in-law, and it's been a big hit with our family. My husband and I are wheat and cattle farmers and we have three children.

Steps:
- In a large bowl, cream sugar and butter until light and fluffy. Beat in vanilla and eggs. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in oats by hand. Press two-thirds of mixture into a greased 15x10x1-in. baking pan. , For filling, heat butter, milk and chocolate chips in a saucepan over low heat, stirring constantly, until chocolate is melted. Remove from heat; stir in the nuts, vanilla and salt. Spread over oat mixture in pan. , Drop reserved oat mixture by teaspoonfuls onto filling. Bake at 350° for 25-30 minutes. Cut into bars while warm.

This recipe came from my Mother. She made these when I was a little girl. I do something a little different and I will tell you about it but its up to you if you want to try it.Enjoy!!!!!!!!!!

Steps:
- 1. Heat oven to 350 degrees. Grease 13x9 pan. Mix brown sugar, 1 cup of butter, eggs and 1 tsp. of vanilla in a large bowl. Stir in flour, baking soda,and 1/2 tsp. of salt.Stir in oats.Press mixture in pan.
- 2. Heat chocolate chips, condensed sweetened milk, and 2 tlbs. butter. Now this is where I add the peanut butter.Cook in 2 quart pan on low heat til chocolate is melted.Remove from heat. Stir in nuts, 1 tsp. vanilla and 1/2 tsp. salt.Spread over oatmeal mixture. Bake till golden brown 25-30 minutes.While warm cut into bars. I occasionally keep out some of the oatmeal mixture out and then apply it the top of the chocolate.

A friend gave me some of these bars over the holidys and I could hardly wait to get my hands on the recipe and make some more. They are rich but, oh so good. My family and friends rave about these bars.

- Preheat oven to 350°.
- Grease 10x15 jellyroll pan.
- In a large bowl, mix brown sugar, 1 c butter, 2 eggs, and 1 tsp vanilla.
- Stir in flor, baking soda, and 1/2 tsp salt.
- Stir in oats.
- Press oatmeal mixture into prepared pan.
- Melt chocolate chips with sweetened condensed milk and 2 Tbsp butter in saucepan over low heat, stirring until melted.
- Remove from heat and stir in nuts, 1 tsp vanilla and 1/2 tsp salt.
- Spread over oatmeal base.
- Bake until golden brown approximately 25-30 minutes.
- While warm, cut into bars.

Reserve 1/3 of the oatmeal mixture. Press remaining oatmeal mixture in pan. Heat chocolate chips, milk and 2 tablespoons butter in 2 quart saucepan over low heat, stirring constantly, until chocolate chips are melted. Remove from heat; stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt. Spread over oatmeal mixture in pan. Drop reserve oatmeal mixture by rounded teaspoonfuls onto chocolate mixture. Bake until golden brown, 25-30 minutes. Cut while warm.

- 1. Heat oven to 350 degrees.
- 2. Mix brown sugar, 1 cup butter, 1 teasoon vanilla, and the eggs.
- 3. Stir in flour, baking soda and 1/2 teaspoon salt; stir in oats.
- 4. Reserve 1/3 of the oat mixture.
- 5. Press remaining oat mixture in a greased jelly roll pan, 15 1/2×10 1/2×1 inch.
- 6. Heat 2 tablespoons butter, the milk and chocolate chips over low heat, stirring constantly, until chocolate is melted; remove from heat.
- 7. Stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt to chocolate mixture.
- 8. Spread chocolate mixture over oat mixture in pan.
- 9. Drop reserved oat mixture by rounded teaspoonfuls onto chocolate mixture.
- 10. Bake unitl golden brown, 25 to 30 minutes. Cut bars into about 2×1 inch, while warm. 70 bars; 135 calories per bar. *If using self-rising flour, omit baking soda and 1/2 teaspoon salt.
FUDGY CHOCOLATE-OATMEAL BARS
Steps:
- Heat oven to 350°F. Set aside 2 tablespoons of the butter.
- Beat the remaining butter in large bowl on medium speed of mixer for 30 seconds. Add brown sugar; beat until combined. Beat in eggs and 2 teaspoons of the vanilla.
- Stir together flour and baking soda in another large bowl; stir in oats. Gradually stir flour mixture into beaten mixture. Set aside.
- Combine reserved 2 tablespoons butter, the sweetened condensed milk and chocolate chips in a medium saucepan. Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Stir in 3/4 cup of the almonds and remaining 2 teaspoons vanilla.
- Press two-thirds (about 3 1/3 cups) of the oats mixture into the bottom of an ungreased 15 1/2x10 1/2x1-inch jelly-roll pan. Spread chocolate mixture over the oats mixture. Using your fingers, dot remaining oats mixture over the chocolate. Sprinkle with remaining 1/4 cup almonds.
