1 3/4 cups (3 1/2 sticks) unsalted butter, room temperature, plus more for pans
3/4 cup Dutch-process cocoa powder, sifted, plus more for pans
3/4 cup hot water
3/4 cup sour cream
4 ounces (61 percent cacao) bittersweet chocolate, melted and cooled
2 cups cake flour (not self-rising), sifted
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups sugar
4 large eggs
1 tablespoon pure vanilla extract
Chocolate Ganache Frosting for Fudgy Devil's Food Cake

Steps:

  • Preheat oven to 350 degrees. Butter two 9-by-2-inch round cake pans; line bottoms with parchment paper rounds. Butter parchment; dust with cocoa powder, tapping out excess.
  • In a medium bowl, whisk together cocoa and hot water until smooth. Whisk in sour cream; let cool, then whisk in chocolate. Into a medium bowl, sift together flour, baking soda, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, 3 to 4 minutes. Add eggs, one at a time, beating to combine after each addition; scrape down sides of bowl as needed. Beat in vanilla. With mixer on low speed, add flour mixture in two parts, alternating with the cocoa mixture and beginning and ending with the flour; beat until combined.
  • Divide batter between prepared pans (or muffin tins lined with paper liners); smooth with an offset spatula. Bake until a cake tester inserted in center comes out clean, 45 to 50 minutes (18 to 20 minutes for cupcakes).
  • Transfer pans to a wire rack to cool 15 minutes. Invert cakes onto rack; peel off parchment. Re-invert cakes; let cool completely, top sides up.
  • Using a serrated knife, trim tops of cake layers to level. Transfer a cake layer to a cake turntable or platter to frost. Using an offset spatula, spread 3/4 cup frosting on top. Set remaining cake layer into place.
  • Spread remaining frosting over entire cake, swirling to coat. Serve immediately, or cover with a cake dome and refrigerate; let sit at room temperature for 20 minutes before serving.

I bought a convection oven and I was playing around with some recipes and combined a German chocolate recipe with a fudgy chocolate recipe and then my mind just went in a totally different direction - the directions the recipe that I wrote here are for three layers and I think in a conventional oven that would be best - I tried doing my first one which is pictured here in a spring form (because of the convection oven) and then just sliced it in half - I would not recommend that - I was lucky I had wrapped tin foil around the bottom of the pan - the batter is so liquid that it runs through - so three single layer pans will work best - I made this last weekend for my neighbors birthday and everyone was drooling - hope you enjoy it!

1 1/2 cups sugar
1 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/8 teaspoon salt
1 cup buttermilk
3 large eggs
2 1/2 teaspoons pure vanilla extract
6 tablespoons unsalted butter, softened
2 1/2 tablespoons espresso powder
1 cup hot water
1 pint raspberries
1 1/2 cups sugar
1/4 cup water
4 ounces bittersweet chocolate
3/4 cup cream

Steps:

  • Preheat the oven to 325°F.
  • Line the bottoms of three 8" round pans with rounds of parchment paper. Spray pans and paper with vegetable cooking spray.
  • In a large mixing bowl, whisk the sugar, flour, cocoa powder, baking powder, baking soda and salt.
  • In a small mixing bowl, whisk buttermilk, eggs and vanilla.
  • In another glass measuring cup, melt the butter in the espresso grounds and hot water.
  • Using a whisk, beat half of the buttermilk mixture into the dry ingredients at low speed. Beat in half of the coffee mixture, scrape down the bowl. Beat in the remaining buttermilk and coffee mixtures. Pour into the pre lined pans and bake for 30 minutes or until the cake slightly cracks or pops back.
  • For the Filling:.
  • Bring the water and sugar to a boil add raspberries and cook down till you have a syrup (nearly jam consistency). Cool and set aside.
  • Once cake is cooled cover each layer of cake with 1 ½ ounces of Chambord liquor add 1/3 of your raspberry mixture and spread over the top of each layer.
  • Whip 1 pint of Whipping Cream to near peak add ¾ cup confectioners sugar and ½ tsp vanilla. Whip till peaks appear.
  • Place one half of the whip cream mixture over the first two layers and spread evenly.
  • Ganache:.
  • Bring cream to a boil (stirring constantly) add chocolate remove from heat and cover for 5 minutes - uncovered and whisk fill smooth, cool for 10-15 minutes. Allow the Ganache to cover the top of the cake and drizzle down the sides. If you are watching your calories this is not the cake for you - but if you love chocolate - yummy!

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour - swap 2 tbsp of the flour for 2 tbsp sifted cocoa powder (we used Green & Black's)
1 tsp baking powder
2 tbsp milk
200ml double cream
50g butter
3 tbsp clear honey
200g dark chocolate (use 70% cocoa solids if you can), broken into pieces
top with shaved or grated chocolate

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • For the fudge frosting, heat the cream until it just begins to boil. Take off the heat and add butter, honey and chocolate (broken into pieces).
  • Leave to melt for 5 mins, then stir briefly to combine - don't over-mix or it will lose its shine. Sandwich the cakes with a third of the just-warm frosting and spread the rest over the top and sides. Top with shaved or grated chocolate, if you like.

1 cup water
1/3 cup vegetable oil

1/2 cup seedless raspberry jam
3 tablespoons unsalted butter
2 cups powdered sugar

Steps:

  • Position rack in center of oven and preheat to 350°F. Butter three 8-inch-diameter nonstick cake pans with 1 1/2-inch-high sides. Place devil's food cake mix, 1 cup water, 1/3 cup vegetable oil, eggs, vanilla extract and 1/4 cup sour cream in large bowl. Using electric mixer, beat batter 2 minutes. Stir in 1 cup semisweet chocolate chips.
  • Divide batter among prepared pans (about 1 3/4 cups batter for each). Bake until tester inserted into center of cake layers comes out clean, about 25 minutes. Cool cake layers in pans on racks 15 minutes. Run small sharp knife between pan sides and cake layers to loosen. Turn out onto racks; cool completely. Bring 1/2 cup raspberry jam and 3 tablespoons unsalted butter to simmer in heavy large saucepan over medium heat, stirring often. Remove from heat. Add remaining 3 cups semisweet chocolate chips and stir until melted. Add remaining 3/4 cup sour cream and 2 cups powdered sugar. 1 box (4-serving size) chocolate instant pudding and pie filling mix
3/4 cup powdered sugar

6 hard peppermint candies, finely crushed

Steps:

  • Heat oven to 350°F. Grease and flour 12-cup fluted tube cake pan, or spray with baking spray with flour. In medium microwavable bowl, microwave filling ingredients uncovered on High 30 to 40 seconds; stir until melted and smooth. If necessary, microwave 10 to 20 seconds longer. Set aside.
  • In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Spoon half of batter into pan; spread evenly.
  • Bake 15 minutes. Remove from oven; immediately drop spoonfuls of filling over batter, keeping filling away from sides of pan and pressing down lightly. Carefully spoon remaining batter over top; spread evenly. Bake 42 to 47 minutes longer or until toothpick inserted near center comes out almost clean and cake springs back when lightly touched in center. Cool in pan 15 minutes. Loosen cake with knife around center and edges of pan. Turn cake upside down onto cooling rack or heatproof serving plate. Cool completely, about 1 1/2 hours.

Steps:

  • For cake:
  • Preheat oven to 325°F. Butter and flour two 9-inch round cake pans with 2-inch-high sides. Whisk first 4 ingredients in large bowl to blend. Bring 1 cup water to simmer in heavy small saucepan. Remove from heat. Add 2 tablespoons espresso powder; stir to dissolve. Add chocolate; whisk until chocolate is melted and smooth. Cool slightly.
  • In another large bowl, whisk vegetable oil, sour cream, eggs and vanilla to blend. Add chocolate mixture and whisk to blend well. Add 1/3 of chocolate-sour cream mixture to dry ingredients and whisk to blend. Add remaining chocolate-sour cream mixture in 2 more additions, whisking well after each addition.   • For frosting:
  • Bring first 6 ingredients to simmer in heavy large saucepan over medium heat, stirring until butter melts. Remove from heat. Add chocolate and whisk until melted and smooth. Whisk in vanilla. Pour frosting into large bowl; cool until thick enough to spread, stirring occasionally, about 3 hours.

1 pound good-quality bittersweet chocolate, finely chopped
1/4 cup corn syrup
2 1/3 cups heavy cream

Steps:

  • Combine chocolate and corn syrup in a large heatproof bowl. Bring cream just to a simmer over medium-high heat; pour over chocolate mixture. Let stand, without stirring, until chocolate begins to melt.
  • Beginning near the center and working outward, whisk melted chocolate into cream until mixture is combined and smooth. Continue to whisk until frosting just barely begins to hold its shape and is slightly lighter in color. Use immediately (frosting will continue to thicken after whisking).

4 medium beets (1 1/2 pounds), trimmed, peeled, and cut into 2-inch chunks
1/4 cup safflower oil, plus more for pan
1 cup spelt flour, such as Bob's Red Mill
1 cup unbleached all-purpose flour
1 1/2 cups natural cane sugar
1/2 cup unsweetened Dutch-process cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon kosher salt
2 large eggs, room temperature
3/4 cup warm water
1 teaspoon pure vanilla extract
3 ounces bittersweet chocolate, finely chopped
1/2 cup heavy cream

Steps:

  • Cake: Place beets in a steamer basket set in a saucepan containing 2 inches of simmering water. Cover and steam until tender when pierced with a sharp knife, about 25 minutes. Let cool slightly, then puree in a food processor until smooth.
  • Preheat oven to 350 degrees. Brush a 9-inch square or round cake pan with oil. Line bottom with parchment; brush parchment. In a large bowl, whisk together both flours, sugar, cocoa powder, baking soda, and salt. 1/2 cup gluten-free flour (King Arthur)
1/2 cup sugar
1/4 cup cocoa powder
1 pinch salt
6 tablespoons sour cream
6 tablespoons vegetable oil
6 tablespoons cream or 6 tablespoons milk
1 dash vanilla
1/4 cup vegetable oil
6 -8 tablespoons chocolate chips (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Spray 4 medium ramekins with cooking spray; set aside. If microwaving, spray mugs with cooking spray.
  • In a medium bowl, whisk together flour, sugar, cocoa powder, and salt until no streaks remain.
  • Add in sour cream and 6 tablespoons of vegetable oil, and mix with a spoon until a thick paste forms.
  • Mix in cream and vanilla until completely combined.
  • Whisk in your remaining 1/4 cup of vegetable oil until thoroughly combined.
  • Fold in chocolate chips.
  • Scoop an equal amount of batter into each ramekin, using about 1/3 of cup for each cake.
  • Bake for 17-20 minutes for a lava cake, or 23-26 minutes for a fully cooked cake. If microwaving, cook for 2-4 minutes in mugs.
  • Allow to cool for 5 minutes, and turn the cakes out onto a plate or platter.

SHOTTS FUDGY CHOCOLATE LAYER CAKE

After reading a brief article about the all-American chocolatier, Andrew Shotts, I wanted to try one of his decadent recipes that helped him earn his spot among the "Top 10 Artisanal Chocolatier" by USA Today. I can honestly say, hands down, this is the best chocolate cake I have ever made and probably will ever make. 1 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 1/2 teaspoons baking powder

1 cup buttermilk

2 1/2 teaspoons pure vanilla extract
6 tablespoons unsalted butter, softened
1 cup hot coffee
1 1/4 lbs bittersweet chocolate, finely chopped
1 cup heavy cream
2 tablespoons light corn syrup
5 tablespoons unsalted butter, softened
1 tablespoon sugar
1 tablespoon water

Steps:

  • MAKE THE CAKE: Preheat the oven to 325°. Line bottoms of three 8" round pans with rounds of parchment paper. Spray pans and paper with vegetable cooking spray.
  • In a large mixing bowl, whisk the sugar, flour, cocoa powder, baking powder, baking soda and salt.
  • In a small mixing bowl, whisk buttermilk, eggs and vanilla.
  • In another small bowl or glass measuring cup, melt the butter in the hot coffee.
  • Using an electric hand mixer, beat half of the buttermilk mixture into the dry ingredients at low speed. Beat in half of the coffee mixture, scrape down the bowl. Beat in the remaining buttermilk and coffee mixtures.
  • Pour the batter evenly into the pans and bake for 25 to 30 minutes, until the cakes are springy to the touch. Rotate pans halfway through baking. Let the cakes cool in pans for about 10 minutes, then turn out onto a rack to cool completely. Peel off the parchment.
  • MEANWHILE, MAKE THE FILLING AND FROSTING: Add chocolate to a large bowl. In a small saucepan, bring the cream and corn syrup to a boil. Immediately pour over chocolate and let stand in a warm place for 5 minutes.
  • Gently whisk the ganache until smooth. Whisk in butter until incorporated. Refrigerate, stirring frequently, until the ganache is thick enough to spread, about 30 minutes.
  • In a microwave-safe bowl or glass measuring cup, combine the sugar with the water and heat for 30 seconds; stir to dissolve.
  • Set a cake layer on a cake plate or cake cardboard and brush lightly with the sugar syrup. Spread about 3/4 cup of the frosting onto the cake in an even 1/4" layer. Repeat with remaining layers, while stacking. Spread the remaining frosting around the sides of the cake.
  • Let the cake stand at room temperature for an 1 hour or more before slicing.

3 ounces bittersweet chocolate, melted and cooled
8 ounce carton sour cream
1 cup milk
Fudgy Frosting
1 12 ounce package semisweet chocolate pieces
1/2 cup butter
8 ounce carton sour cream
4 1/2 cups sifted powdered sugar

Steps:

  • 1. Let eggs stand at room temperature 30 minutes. Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans. Set aside. 2. In small bowl combine flour, cocoa powder, baking powder, baking soda, and salt. In large bowl beat shortening and sugar on medium speed until combined. Beat in eggs and vanilla until combined. Beat in melted chocolate and sour cream. Alternately add flour mixture and milk; beat on low after each addition just until combined. Divide batter evenly between the prepared pans. Using a small offset spatula or rubber spatula, smooth the top of batter in each pan. 3. Bake 25 minutes or until tops spring back when lightly touched. Cool cake layers in pans on wire racks for 10 minutes. Using a small metal spatula, loosen sides of each cake layer. Place a wire rack on top of one pan; carefully invert pan with rack. Lift pan off cake layer. Repeat with the remaining cake layer. Cool cake layers on wire racks about 2 hours or until completely cool. 4. Prepare Fudgy Frosting. Place one layer flat side down on plate. Spread top with 1 cup frosting. Stack second layer flat side down. Spread the top and sides with the remaining frosting. Makes 16 servings. Fudgy Frosting 1. 150ml sunflower oil , plus extra for the tin
100g dark chocolate , broken into chunks
200g self-raising flour
200g light muscovado sugar
6 tbsp cocoa powder
100ml soured cream
2 large eggs
1 tsp vanilla extract
1 tbsp instant coffee , dissolved in 1 tbsp hot water
1 Cadbury Flake , crumbled, to decorate
100g butter , softened
85g icing sugar
50g cocoa powder , sifted
1-2 tbsp milk

Steps:

  • Heat oven to 160C/140C fan/gas 3. Oil a 23cm round cake tin, then line the base with baking parchment.
  • Whizz the chocolate into small pieces in a food processor. Tip the flour, sugar, cocoa, oil, soured cream, eggs, vanilla, dissolved coffee and 100ml hot water into a large mixing bowl. Whisk everything together with electric beaters until smooth, then quickly stir in the whizzedup chocolate bits. Pour the batter into the tin and bake for 50 mins-1 hr until risen and springy to the touch. Transfer to a wire rack and leave to cool.
  • To make the icing, beat the butter in a large bowl until light and fluffy. Add the icing sugar, cocoa and a drop of milk, and beat until creamy. Beat in more milk, if necessary, to loosen the icing to a spreadable consistency. Spread the icing over the top of the cake and sprinkle with crumbled Flake. The cake can be kept in an airtight container for 1-2 days.

The only chocolate cake recipe I ever use. Very dense, moist, fudgey and rich! Works for me every time. The super fudgey frosting totally makes it. I've also made it in a 9 x 13 pan and it worked great. I've tried it with dark brown sugar and it was delicious. I've tried using butter instead of margarine, but the cake didn't seem to hold together quite as well.

3 ounces unsweetened chocolate
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup margarine
2 1/4 cups brown sugar
3 eggs

1 cup sour cream
1 cup boiling water
4 ounces unsweetened chocolate
1/2 cup butter
1 lb confectioners' sugar
1/2 cup milk
2 teaspoons vanilla

Steps:

  • THE CAKE:.
  • Preheat the oven to 350.
  • Grease and flour two 9" round pans. (I line the bottoms with parchment or wax paper because I'm paranoid, but not necessary).
  • Melt chocolate in microwave and set aside to cool.
  • Mix flour, soda, and salt and set aside.
  • Beat the margarine in a mixer until it's soft
  • Add brown sugar and eggs and beat until light and fluffy (about 5 min.).
  • Beat in vanilla and cooled melted chocolate.
  • Mix in sour cream and dry ingredients alternately, and then beat well.
  • Stir in boiling water (batter will be thin and runny).
  • Pour batter into pans evenly, and bake at 350 degrees for 25-35 minutes, or until toothpick comes out cleanly.
  • Allow to cool on a rack for 10 minutes, and then remove from pans.
  • Allow cakes to cool completely, and then frost.
  • SUPER FUDGEY FROSTING:.
  • Melt chocolate and butter together ( I microwave it) and allow to cool
  • Combine milk, vanilla, and confectioner's sugar in a mixer and mix on low.
  • Add melted butter and chocolate.
  • Whip until frosting is of spreading consistency.(If butter/chocolate mixture is still warm, it takes a bit of time to set up).

6 oz white chocolate for garnish
1 c (2 sticks) unsalted butter
1 c plus 3 tbsp. granulated sugar
1 1/2 c all purpose flour
1/2 c plus 3 tbsp. unsweetened cocoa powder
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp salt
4 large eggs
3/4 c very hot water
1/2 pt (8 oz.) heavy cream
10 1/2 oz semisweet chocolate

Steps:

  • 1. Finely grate white chocolate onto a plate using a vegetable peeler. Chill until needed.
  • 2. Grease the base of two 8-inch round cake pans; line with parchment paper. Combine butter, sugar, flour, cocoa, baking powder, baking soda, salt and eggs in a large bowl. Using an electric mixer set on medium, beat until smooth. Continue beating until increased in volume, about 2 minutes longer. Add the hot water and beat to incorporate, about 1 minute longer. Divide batter between pans.
  • 3. Bake cakes in a preheated 350-degree oven until a toothpick inserted in centers comes out clean, 20-25 minutes. Leave cakes in pans to cool for 10 minutes. Then turn onto a wire rack. Peel off lining paper; let cool.
  • 4. Meanwhile, heat heavy cream just to a boil. Break chocolate into pieces; add to cream and stir until melted. Let cool; chill for 30 minutes, then whisk until thickened to a spreadable consistency.

Divide batter between cake pans. Bake until cakes spring back when gently pressed, 25-30 min. Cool 5 min. in pan, invert onto wire rack. Meanwhile, bring cream just to a boil.
