1/3 cup orange juice
1/3 cup unsweetened pineapple juice
1/4 cup sugar
1 egg, beaten
1 tablespoon plus 1/4 cup lemon juice, divided
1 cup heavy whipping cream, whipped or 2 cups whipped topping
6 medium red apples, diced
6 medium firm bananas, sliced
3 cups halved green grapes
1/4 cup chopped pecans

Steps:

  • In a heavy saucepan, combine orange and pineapple juices, sugar, egg and 1 tablespoon of lemon juice. Bring to a boil over medium-high heat, stirring constantly. Remove from the heat. , When cool, fold in the whipped cream. In a large serving bowl, toss apples with remaining lemon juice. Add bananas and grapes. Add the dressing; stir to coat. Refrigerate. Fold in pecans just before serving.

1 navel orange
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
2 Tbsp. honey
1 cup blueberries
1 cup raspberries
8 strawberries, quartered
2 kiwis, peeled, cut lengthwise in half, then sliced crosswise

Steps:

  • Grate zest from orange into small bowl. Add sour cream, mayo and honey; mix well.
  • Section orange; place in medium bowl. Add remaining ingredients; mix lightly.
  • Serve fruit salad topped with sour cream sauce.

2 (15.25 ounce) cans fruit cocktail, drained
3 large bananas, peeled and sliced
1 (10 ounce) jar maraschino cherries, halved
½ pint heavy whipping cream
3 tablespoons white sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine fruit cocktail, bananas and cherries. Reserve 3 slices of banana and 1 cherry for garnish.
  • In a mixing bowl, whip the cream to soft peaks with an electric mixer. Add sugar and vanilla, and whip to combine.
  • Fold the whipped cream into the fruit. Garnish with a fan of banana slices. Place cherry at the bottom of the banana fan.

1 (8 ounce) package cream cheese, softened
6 tablespoons sweetened condensed milk
30 ounces fruit cocktail, well drained
10 maraschino cherries, halved
1 banana, diced

Steps:

  • Combine the cream cheese and condensed milk; blend until very smooth.
  • Drain the juice from the fruit cocktail and add to cream cheese mixture. Toss in the banana pieces and cherries. Mix with a large spoon.
  • Cover with saran wrap and chill. Mix well and serve cold.

1 cup plain yogurt
2 tablespoons honey
1/4 cup dark or spiced rum
2 tablespoons finely chopped fresh mint leaves
1 quart container pineapple chunks
1 quart container honeydew melon chunks
1 quart container watermelon chunks
2 Granny Smith apples, cored and chopped

Steps:

  • Preheat the oven to 300 degrees F.
  • Spread the coconut in a single layer on a baking pan. Toast coconut in oven until pale golden brown, watching carefully to avoid burning, about 8 minutes.
  • In a mixing bowl, whisk together the yogurt, honey, rum, and mint. In another large bowl, combine the fruit. Pour the yogurt mixture over the fruit and toss to combine. Allow to sit for 10 minutes so the fruit can absorb the flavors. Sprinkle the toasted coconut on top and serve.

This is just to die for!! I've never served this without someone wanting the recipe, but more than that, they want to take leftovers home! (That's why I always make a double batch!). It's a simple make-ahead sauce and can be used for dessert or breakfast. It's a great presentation when served in a wine or martini glass. I got this recipe from Bon Appetit magazine in 1995.

10 ounces cream cheese, room temperature
1 cup sour cream
1/2 cup powdered sugar
6 tablespoons powdered sugar
1/2 cup whipping cream
2 tablespoons Grand Marnier (I usually double this)
8 cups fresh fruit

Steps:

  • Combine first 5 ingredients and 2 tablespoons Grand Marnier in processor. Blend until smooth.
  • Taste and add more Grand Marnier, if desired.
  • Transfer mixture to bowl and refrigerate until cold, about one hour. (Can be prepared 1 day ahead. Keep refrigerated.).
  • Divide fruit among 8 stemmed goblets.
  • Top with sauce and serve.
  • Note: Use any fresh fruit in season that you like. It's especially good with strawberries, grapes, and blueberries.

2 tablespoons Triple Sec, optional
2 medium kiwifruit, peeled, sliced and halved
2 medium ripe pears, peeled and chopped
2 medium Red Delicious apples, chopped
2 medium navel oranges, peeled and sectioned
2 cups seedless red grapes, halved
1 medium pink grapefruit, peeled and sectioned
CITRUS YOGURT SAUCE:
1 cup plain yogurt
2 tablespoons brown sugar
2 tablespoons sour cream
1 teaspoon grated orange zest
1/2 teaspoon vanilla extract

Steps:

  • For syrup, in a large saucepan combine the first five ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Cool. Stir in triple sec if desired. , In a large bowl, combine the kiwi, pears, apples, oranges, grapes and grapefruit; add syrup and gently toss. Cover and refrigerate overnight. In a small bowl, combine sauce ingredients. Cover and refrigerate overnight. Serve fruit salad with a slotted spoon; drizzle with yogurt sauce.
