STRAWBERRY PEACH GELATIN DESSERT

I derived this recipe from one I got here on 'Zaar (Cherry Gelatin Squares recipe #64331 submitted by Carolyn Young). I wanted to try it in a different way as well as make a smaller amount, using less gelatin. I used a whole can of Peach Pie Filling because I did not know what to do with the rest if I used half the can. I am sure it will be be just as good using a half can of the pie filling. Cook time is time it takes to set in the refrigerator. Time is approximate.

1 (2 3/4 ounce) package Royal or Jell-O strawberry gelatin
1 cup boiling water
1/2 cup cold water
1 (10 1/2 ounce) can peach pie filling or 1 (21 ounce) can peach pie filling (depending on how peachy you want it)
whipped topping (optional)

Steps:

  • Put gelatin in a medium sized bowl.
  • Add the boiling water and stir until gelatin is dissolved.
  • Add the cold water and stir.
  • Add the pie filling.
  • Stir until well mixed.
  • Keep the gelatin mixture in the bowl or pour it into a 6 1/2 inch square Pyrex or Corningware dish.
  • Refrigerate until set.
  • Serve in individual soup or salad bowls.
  • Top with whipped topping. (if desired)

this is a great make ahead recipe to mail for Christmas as a gift from your kitchen I live to make different flavors and then combine a mixture for gift giving

Number Of Ingredients 6

1 1/3 cups applesauce
2 (1 ounce) envelopes unflavored gelatin
6 ounces fruit flavored gelatin
1 3/4 cups sugar
1 1/2 teaspoons lemon juice concentrate
sugar, for rolling when dried

Steps:

  • prepare 9x5" loaf pan by filling halfway with cold water and set aside.
  • in a 2 quart saucepan, combine all ingredients, except the sugar for rolling --
  • heat to boiling and boil for one minute.stirring frequently to prevent sticking and burning --
  • pour out water in loaf pan and immediately pour cooked gelatin mixture into wet pan.
  • when loaf pan is cool enough to handle, refrigerate about 3 hours or until candy is very firm.
  • you may refrigerate longer, even overnight.
  • cut the candy into 1" square pieces with a knife that has been dipped in cold water.
  • this helps to prevent the candy from sticking.
  • remove candy piece by piece from the pan and place on cooling racks.
  • allow to air dry for at least 8 hours.
  • DO NOT COVER CANDY.
  • when candy pieces have dried, roll each square in a bowl full of granulated sugar until all sides are coated.
  • store in tin cans.
  • You will get about 45-50 squares from each batch.
  • when using orange or peach gelatin, add 1 tsp cinnamon for extraordinary flavor.

1 (6 ounce) package cherry gelatin
1 1/2 cups boiling water
1 (21 ounce) can cherry pie filling
1 1/4 cups carbonated lemon-lime beverage, chilled
whipped topping (optional)

Steps:

  • In a bowl, dissolve gelatin in water.
  • Stir in pie filling; mix well.
  • Slowly stir in soda (mixture will foam).
  • Pour into an 8-inch square dish.
  • Cover and refrigerate until firm.
  • Cut into squares.
  • Garnish with whipped topping if desired.

NOTE: Cooking time is refrigeration time. Serving size is a guess. This recipe was one of several passionfruit recipes in an expat magazine. I haven't tried them yet, but these little gelatin squares sound really good! Passionfruit is yellow here, and is sweeter than the purple variety found in the US. This may require that you add a bit more sugar, although a can of sweetened condensed mik sounds pretty sugary to me. Adjust sugar to your taste before adding the egg whites.

1 (14 ounce) can sweetened condensed milk
3 eggs, separated
3/4 cup passion fruit pulp, this is 4-6 fruits (strained)
1 tablespoon unflavored gelatin
1/4 cup water
chantilly cream (whipped)
fresh mint sprig
maraschino cherry

Steps:

  • Process the passionfruit pulp to extract the juice, then strain. Set aside.
  • Mix the gelatin in the water and warm it to dissolve it completely.
  • Pour the condensed milk into the mixer bowl and begin to mix, adding one egg yolk at a time.
  • Add the passionfruit pulp as you continue to mix, then add the dissolved gelatin. Set aside.
  • In a separate bowl, beat the three egg whites untiol soft peaks form, then fold into the gelatin mixture.
  • Pour the mixture into a pyrex and refrigerate for at least three hours.
  • Cut into squares. Garnish with whipped cream (or cool whip), a mint leaf and a cherry, if desired.

1/2 cup finely chopped pecans
1/4 cup packed brown sugar
1/2 cup butter, melted
2 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1 (8 ounce) carton whipped topping, thawed
2 (3 ounce) packages raspberry gelatin powder
2 cups boiling water
2 cups cold water

Steps:

  • In a bowl, combine the flour, pecans and brown sugar; stir in butter. Press into an ungreased 13x9x2 inch baking dish.
  • Bake at 350* for 10-13 minutes or until lightly browned. Cool on a wire rack.
  • In a large mixing bowl, beat cream cheese and sugar until smooth; fold in whipped topping. Spread over crust. Cover and refrigerate for 1 hour.

1 (3 ounce) box cherry Jell-O
1 cup pineapple juice
3 cups water, divided

Steps:

  • Boil 2 cups water and add to dry jello, stirring until dissolved.
  • Add an additional cup of water along with the pineapple juice.
  • Transfer to a large bowl or a 9x9 square glass dish and chill until set.
