1 pkg. (8-serving size) JELL-O Strawberry Flavor Sugar Free Gelatin
1-1/2 cups cold water
3/4 cup blueberries
3/4 cup chopped strawberries
1-1/2 cups thawed COOL WHIP Sugar Free Whipped Topping

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until slightly thickened. Remove 1-1/2 cups of the gelatin; let stand at room temperature.
  • Stir fruit into remaining gelatin. Spoon into 6-cup mold sprayed with cooking spray. Refrigerate 15 min. or until set but not firm. (Gelatin should stick to finger when touched and should mound.)
  • Add COOL WHIP to reserved gelatin; stir with whisk until well blended. Spoon over gelatin layer in mold. Refrigerate 4 hours or until firm. Unmold just before serving.

1 package (3 ounces) raspberry gelatin
1 cup boiling water
1-1/2 cups ginger ale, chilled

1 can (11 ounces) mandarin oranges, drained

Steps:

  • In a bowl, dissolve gelatins in boiling water. Gently stir in ginger ale. Refrigerate until slightly thickened, about 1-1/2 hours. Stir in grapes and oranges. Transfer to a 5-cup mold coated with cooking spray. Cover and refrigerate until firm. Invert onto a serving plate.

Steps:

  • Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold water. Refrigerate 45 minutes or until slightly thickened. Remove 1-1/2 cups gelatin; let stand at room temperature.

Three 3-ounce boxes pineapple gelatin
Two 12-ounce cans seltzer, chilled
One 15-ounce can mandarin oranges in light syrup, drained
3 cups blackberries
1 cup blueberries
1 1/4 cups mixed berries, for serving

Steps:

  • Prepare the gelatin mix according to the package instructions, using the seltzer in place of the cold water. Allow to cool for 30 minutes.
  • Meanwhile, place a mandarin followed by a blackberry in the grooves of a 2.1-quart fluted bundt pan. Repeat to form a circle. Pour in just enough of the gelatin to cover the fruit (about 1 1/2 cups). Chill until set, about 1 1/2 hours, leaving the remainder of the gelatin mix on the counter.
  • Sprinkle the blueberries in an even layer over the firm gelatin. Cover with the remaining mandarin oranges. Top with the remaining blackberries. Pour the remaining gelatin mixture over the fruit. Chill until firm, at least 8 hours and up to overnight.
  • When ready to serve, place the gelatin mold in a bowl of warm water for 2 minutes to loosen. Invert onto a circular serving platter. Fill the center of the mold with fresh berries to serve.

2 box (small) rasberry jello
2 c water, boiling
1 1/2 c ginger ale
1 can(s) whole cranberry sauce

Steps:

  • 1. In a large bowl prepare the Jell-O according to package directions using only 2 cups of boiling water. Add ginger ale. When completely mixed add the canned cranberries,stirring with a fork to break up the sauce. Chill until partially set about 40 minutes; pour into a ring mold. Chill overnight.
  • 2. I served this mold with the following: 1 - 3 oz cream cheese 1 - Tbls lemon juice 1 - cup of heavy cream 2 - tsp of current jelly Mash the cream cheese with a fork and beat until smooth. Beat in slowly the 2 tablespoon lemon juice, 2 teaspoons of currant jelly and 3/4 cup of heavy cream. Chill dressing 1 hour or more.
  • 3. Third and final step...Enjoy this Cranberry Mold with your family or guests. Ciao!

This is a great salad to make, although I prefer to leave out the cinnamon candies and use raspberry jello and make this for Thanksgiving!

JIGGLING FRUIT MOLD WITH BERRY COMPOTE

4 cups (2 pints) raspberries or strawberries, hulled and sliced
2 cups water
1/2 cup granulated sugar
Pinch of salt
4 sheets of gelatin or 1 tablespoon powdered unflavored gelatin
3 cups (1 1/2 pints) mixed berries like blueberries, blackberries, raspberries and strawberries
1/2 cup sugar
1/2 cup water
1 tablespoon finely grated orange rind
Pinch of salt
1/2 cup unsweetened heavy cream, whipped

Steps:

  • To make the fruit jell, put the berries, water, sugar and salt in a saucepan. Bring to a boil, stirring, and boil gently for 3 or 4 minutes. Remove from the heat, and set aside for an hour.
  • Line a fine-meshed sieve with a double layer of cheesecloth, and strain the cooked berries, pressing down gently so no pulp or seeds get into the liquid. Discard the pulp; there should be 2 cups of berry juice.
  • Soften the gelatin sheets in enough cold water to cover for about 5 minutes. If using powdered gelatin, sprinkle it over 1/4 cup cold water, and allow to soften for 5 minutes.
  • Put the reserved berry juice in a saucepan. Squeeze out excess water from the gelatin sheets, and add them to the juice, or add all the softened powdered gelatin. Warm over low heat, stirring, until the gelatin dissolves.
  • Spray four 1/2-cup molds with flavorless oil. (You can use metal molds, ramekins or coffee cups.) Fill with the berry juice. Refrigerate, covered, for 4 hours or overnight.
  • To make the berry compote, put the 1 1/2 pints of mixed berries in a saucepan with the water, sugar, orange rind and salt. Bring to a low boil, and cook, stirring, for 3 to 4 minutes until the fruit has almost dissolved and is syrupy. Remove from the heat, transfer to a bowl, cool, and refrigerate, covered, for 4 hours or overnight.
  • To serve, spoon berry compote onto four dessert plates. Dip the bottom of each mold into warm water, and unmold onto the compote. Put a dollop of whipped cream on the side of each, and serve.

1 (6-ounce) package lemon gelatin
2 cups boiling water
1 (8-ounce) package cream cheese, softened*
1 (11-ounce) can mandarin orange sections, drained
1/3 cup chopped maraschino cherry, drained
1/2 cup whipping cream
lettuce leaves

Steps:

  • 1. Chill small mixing bowl and beaters of electric mixer.2. Drain pineapple, reserving liquid. Measure liquid. Add enough water to equal 1 cup total.3. Dissolve gelatin in boiling water. Stir in pineapple liquid. Gradually beat gelatin mixture into cream cheese with wire whisk. Refrigerate until partially set. Beat with wire whisk until smooth. Fold pineapple, oranges and cherries into gelatin mixture.4. In chilled bowl beat whipping cream on medium speed of electric mixer until soft peaks form. Fold into gelatin mixture. I have been making this recipe for over 25 years. It's one of the easiest most delectable recipes ever... better yet, it's no bake, SCORE! I created this recipe in the mindset of helping out my fellow hostesses when I was a Tupperware lady. Not only could I alleviate some of the stress entailed in being a hostess, I actually got to share some of my favorite recipes with them as well.

16 ounce(s) container pound cake (if frozen thawed)
1 - container non dairy topping, thawed (i used cool whip)
15 ounce(s) can of pears (or fruit of choice), drained
1/3 cup(s) strawberries, frozen thawed (or fruit of choice)
- *optional* 1/3 cup roasted nuts (i used slivered almonds)

Steps:

  • -We start by cutting our loaf of pound cake into 16 slices. We cut the 8 slices in half making fingers. Set aside. -Drain your canned fruit and reserve the juice in a separate bowl. -If you are going to use nuts, I would dry pan roast the nuts now and when roasted and placed in a bowl, toss with 1/2 tsp granulated sugar. Set aside. -Dip your first pound cake finger slightly in the reserved fruit juice and mold into your jello mold. Continue dipping and pressing the fingers till the perimeter has been enclosed. -Spread 1/3 cup or so of the non-dairy topping on the bottom of the mold. Add, 1/3 of your fruit. Top off with the larger pieces of pound cake that have been dipped lightly into the reserved juice. Sprinkle with half of the nuts.
  • -Repeat the layering one more time ending with the nuts. -Using your Tupperware lid, burp according to the instructions on the video till you have a very flat, almost concave lid. Place in the refrigerator for at least 1/2 hour. -After the allotted time, bring the mold out and invert either onto the Tupperware tray, or a pretty platter. -Additional fresh fruit for garnish makes the plates look so pretty!
