Steps:
- Preheat the oven to 150 degrees F (65 degrees C). Cover a baking sheet with a layer of plastic wrap or parchment paper.
- In the container of a blender, combine the sugar, lemon juice, apple and pear. Cover and puree until smooth. Spread evenly on the prepared pan. Place the pan on the top rack of the oven.
- Bake for 5 to 6 hours, leaving the door to the oven partway open. Fruit is dry when the surface is no longer tacky and you can tear it like leather. Roll up on the plastic wrap and store in an airtight jar.

FRUIT LEATHER

- Tip the strawberries and apple into a saucepan. Put the pan over a low heat, you don't need to add any water. If you've used frozen fruit, juice will run out as they thaw. Heat gently, keeping an eye on the pan until the strawberries start to break down, you can put a lid on the pan if you like, this keeps the steam in and helps the fruit break down. Cook until the strawberries have softened and given up their juice and the apple is soft.
- Take the pan off the heat. Purée the contents with a stick blender or in a food processor. Squeeze the purée through a sieve into a clean pan, pushing as much pulp through as possible.
- Put the pan back on a low heat and cook, stirring occasionally, until the purée thickens enough to leave a clear patch on the base of the pan when you pull a spoon through it. The more moisture you drive off now, the shorter your drying time will be.
- Heat the oven to as low as it will go. Pour the purée onto a lined baking sheet (we use a reusable silicone tray liner) and spread it out to a thin layer, the purée should be thick enough to look opaque.
- Put the tray in the oven and dry until the surface is no longer tacky when you touch it, but the leather is still flexible - don't overcook it or it will turn brittle. This will take several hours depending on the oven temperature. If it is very hot and sunny you can air-dry the leather, or use a dehydrator.
- Leave the leather to cool to warm and then peel it carefully off the tray. Trim off the raggedy edges. Roll the leather up, then cut the roll into sections, using scissors is easiest. Each of these will unroll to make a strip. Keep the strips individually wrapped and airtight. The offcuts can be chopped up and used in baking, or snacked on.

APRICOT FRUIT LEATHER ROLLS

- Preheat oven to 160 degrees with rack in center. Place apricots in a large bowl, and cover with the water; let soak until they are completely soft, 30 to 45 minutes. Transfer to a fine sieve; drain, and reserve liquid.
- Place apricots in the bowl of a food processor fitted with the metal blade; add honey and sugar. Process until mixture is very smooth and easily spreadable. If it is too thick, add up to 1 tablespoon soaking liquid.
- Cover two 10-by-15-inch baking sheets with plastic wrap. Divide puree between the sheets; spread in a thin, even layer with an offset spatula. Let dry in oven until mixture is firm but slightly tacky, about 8 hours or overnight. Remove from oven; let cool.
- Peel fruit leather from plastic wrap, and cut into 1-inch-wide strips using a pizza cutter. Roll tightly into cylinders, and serve.
STRAWBERRY FRUIT LEATHER

- Position an oven rack in the center of the oven and preheat to 175 degrees F. Line a 17-by-12-inch baking sheet with a silicone baking mat.
- Put the strawberries, honey and lemon juice in a blender and blend until smooth. Pour the puree into a saucepan, bring it to a boil, lower the heat and simmer for 10 minutes. Let cool for 5 minutes.
- Pour the puree onto the prepared baking sheet and spread it out almost to the edges, ensuring it's thin and even. Pay particular attention to ensure the middle is thin. Bake until the puree is set, about 5 hours. Let cool completely.
- Lay a sheet of parchment on top of the fruit leather. Invert the leather and gently peel off the mat. Cut the leather into 7 strips. Gently roll up each strip starting from the short end, then tie with twine. Store in an airtight container or package in cellophane bags.

GRAPE FRUIT LEATHER

- Puree the grapes in a blender or food processor, in batches if necessary, until very smooth. Pour the puree into a fine sieve and press hard with a spatula to extract as much juice as possible. Puree the grapes again and put them back into the sieve. Press again and reserve the juice for another recipe. There should be about 2 cups of grape puree.
- Pour the puree into a small saucepan with the sugar and lemon juice and bring to a boil. Simmer, stirring often and scraping the sides, until the puree turns glossy and darkens slightly, about 30 to 45 minutes.
- Preheat the oven to 200°F using convection mode if available. Line a large-rimmed baking sheet with a silicon baking sheet. Pour the puree onto the mat and spread into an 1/8-inch thickness using an offset spatula, leaving a 1-inch border of space around the edge. Bake 1½ to 3 hours, rotating the tray halfway through, until the puree is tacky and not quite dried in the center. Let stand at room temperature until fruit leather peels easily from the tray, 24 hours to 48 hours.
- Place a piece of parchment paper over the fruit leather and invert. Peel off the silicon baking sheet and starting at the long end, roll up the fruit leather and parchment. Using scissors or a sharp knife, cut the fruit leather roll into 1-inch segments. Store in a resealable plastic bag for up to 1 week at room temperature or 2 to 3 months in the freezer.
PINEAPPLE-BERRY DEHYDRATOR FRUIT LEATHER
Skip the snack aisle and make chewy homemade fruit leather in your dehydrator. Berry and pineapple purees are swirled together and dried to make a pretty marbled fruit leather with no added sugar.

- Combine the raspberries, strawberries and 1/2 cup applesauce in a blender and blend until very smooth. Strain through a fine mesh sieve and transfer to a medium bowl or measuring cup.
- Combine the pineapple and remaining 1/2 cup applesauce in the blender and blend until very smooth.
- Put one nonperforated dehydrator insert on a work surface. Pour the pineapple puree onto the insert in random dots. Pour the berry puree onto the insert to fill the remaining space, making sure not to overlap too much with the pineapple (it will create thicker layers that won't dry properly). Gently shake the insert to evenly spread the puree all the way to the sides. Use a spoon or offset spatula to thin out any thick spots.
- Place the insert in a dehydrator and dry according to the manufacturer's instructions at 125 degrees F until the fruit puree is dry to the touch, matte and no longer shiny, about 12 hours (times may vary depending on the machine). Test with your fingers to make sure it is dry all over. Let cool at room temperature for 5 minutes. Use a butter knife to loosen the fruit leather from the insert and slowly peel away.
- Cut or tear the leather into pieces and store in an airtight container up to a week.
FRUIT LEATHER (NO DEHYDRATOR NEEDED)
This can be made with any ripe fruit. If you like your fruit leather entirely smooth, you can remove the skins, but you can leave them in for the nutritional value. Remove any stems, seeds or bruised areas. Be creative with spices and flavorings - apples or pears go marvelously with a pinch each of nutmeg and cinnamon, while cherries and peaches both love almond or vanilla extract. Add sweetener if the fruit needs it. The cooking time will vary widely depending on the ripeness and water content of the fruit - it's done when it is barely tacky to the touch and peels easily off the sheet. - Preheat the oven to 150ºF (125ºF for convection ovens).
- Line two 14x10-inch (35x25 cm) rimmed baking sheets with parchment paper, making sure the paper is a little bit bigger than the pans.
- In a small saucepan, bring the blueberries and Welch's grape juice to a low boil.
- Add the lemon juice, stir, and simmer for 10-15 minutes or until mixture thickens. Let cool slightly.
- Place all the ingredients in a blender and blend until smooth, about 20 seconds. Carefully remove the lid from the blender as contents will be hot.
- Pour the mixture evenly over the two parchment paper-lined sheet trays and use a rubber spatula to make sure it is spread evenly.
- Place the pans in the oven for 4-5 hours. The desired texture should be smooth to the touch and not sticky.
- Cool for 20 minutes. Cut into 2-inch (5 cm) strips, and roll up.

HOMEMADE APPLE AND RASPBERRY FRUIT LEATHER

- - Peel and chop apples into small pieces. (no need to peel or chop.) - Place apples and raspberries (or any prepared fruits you prefer) into a large pot. - Pour in 1/2 cup water for every 4 cups fruit you add to the pot. Bring to a boil, then turn heat to lowest setting and simmer for about 5 minutes or until fruit has broken down and softened considerably. - Once fruit has softened, mash by hand with a potato masher until fruit mixture thickens. At this point, add lemon juice, spices and sugar to taste. If deciding to add sugar, go slowly with about a teaspoon at a time until you reach desired taste. - Continue to simmer on low heat for another 5 minutes, then transfer mixture to food processor and pulse until you get a really smooth puréed consistency. - Gently pour fruit purée onto parchment paper lined baking sheets, making sure the puree spreads evenly and thin at about 1/8 an inch thickness throughout the baking sheet (the thickness will go down a great deal during the drying process so don't worry if you think your spread looks too thick going in). - Place baking sheets in oven on the top racks at your oven's lowest heat setting - between 120 and 140 degrees if your oven will go that low. Now let sit and dry. We checked about every hour for 5 hours, then turned oven completely off and let sit inside overnight. - You'll know your leather is ready when it's still a little tacky to the touch but smooth and not clumping back up on your fingers - it should be sticky but firm. Once you think the leather is dry enough, try test peeling it back off the parchment paper. It should peel up freely and easily. If it begins to peel easily like this, stop there since you are ready! - Next, simply roll the parchment paper over itself to form a long roll and slice in even sections with a sharp knife to form each fruit rollup
APPLE-CRANBERRY FRUIT LEATHER
This is a great way to use autumn's abundance of apples. Even fruit that is slightly bruised works well; simply trim the brown portion. Or try ripe pears in place of the apples.

- Preheat oven to 200 degrees. Generously coat two 13-by-9-inch rimmed baking sheets with cooking spray, and line with a Silpat baking mat if desired.
- Working in batches, puree apples, cranberries, apple juice or cider, lemon juice, honey, and sugar in a blender. Pour into a bowl to combine.
- Divide puree between prepared pans. Let stand 1 minute, then drain excess liquid. Smooth with an offset spatula. (The puree should be almost 1/4 inch thick.) Bake, with oven door open slightly, until dry to the touch (but not browned), about 6 hours. Close oven door, turn off oven, and let dry overnight in the oven. (Fruit leather should be stiff, but still pliable.)
- Remove fruit leather from pans. Trim uneven edges, cut into desired size, and roll up if desired.
QUICK FRUIT LEATHER
LOOK MOM, NO PRESERVATIVES!!! You have to watch this very carefully when you are microwaving it, as it will burn very easily. Store at room temperature for up to 1 week.

- Pour fruit puree into microwave-safe bowl and cook on HIGH 8 minutes or until puree is reduced by half.
- Lay a piece of microwave-safe plastic wrap on a 10-inch microwave-safe plate.
- Evenly spread 1/4 cup fruit mixture to a 6-1/2 inch diameter circle.
- Make sure edges are not too thin or they will scorch.
- Elevate plate on top of inverted (upside-down) microwave-safe saucer.
- Microwave at MEDIUM (50% power) about 5 minutes or until leather is no longer sticky in center.
- If more cooking time is needed, cook at MEDIUM in 25 second increments, watching closely so that leather does not burn.

- Let stand at room temperature overnight to dry.
- Repeat with remaining fruit puree.
- Roll up leathers in plastic wrap.

PASSION STRAWBERRY FRUIT LEATHER - DEHYDRATOR ROLL-UPS
Once you know how to plug your dehydrator in, you're limited only by your imagination regarding how many different "recipes" you can come up with for fruit leather. These simple snacks are healthy and often more convenient to eat than fresh fruit. I ziplock a batch and take it with me. Either pureed apples or applesauce makes a great inexpensive texturizer with a rather mild flavor, so I often flesh out whatever the main fruit flavor is with it. This time it's strawberries! (My friend Freya arrived on my doorstep last weekend with a HUUUUGE box of the most beautiful berries I've ever seen, so rather than to lose the last of them to age, I've gone the dehydrating route.)

- Purée chopped strawberries with the applesauce and passionfruit syrup.
- Spray the fruit leather sheet of your dehydrator (the one without holes) with a light coating of non-stick cooking spray.
- Pour the puréed fruit carefully into the tray set into the bottom section of your dehydrator. Dehydrate at full power for up to 8 hours, depending on the power of your machine, checking periodically toward the end of that time to see that there aren't any wet or sticky spots.
- When done, cool for a couple of minutes and carefully slide a butter knife or thin spatula under the leather.
- Cut into 2-4 pieces and roll into cylinders. Store in zip lock baggies.

STRAWBERRY-RHUBARB FRUIT LEATHER
Sweet-tart snack that's great for kids and adults. This makes a big batch, but if I make less, I can't keep it in the house (it disappears!). Do check your oven temperature and be sure to keep the door ajar. Cook time is drying time - not active cooking!

- Line 3 half-sheet pans (11.5" X 16.5", with sides), with freezer paper, shiny-side up. Spray the freezer paper with vegetable oil spray (Pam).
- Clean and hull the strawberries and wash rhubarb.
- Chop rhubarb and place in a 3 or 4 quart sauce pan.
- Add orange juice and cook over medium-low heat, stirring occasionally, until rhubarb is soft.
- Add the chopped berries and cook for another 3 or 4 minutes.
- Remove from heat and stir in the honey and coloring, if using.
- Cool slightly, then puree using a stick blender (or CAREFULLY in batches in a blender or processor), until very smooth.
- Evenly spread about 2 and 1/2 cups of the puree on each prepared pan.
- Shake the pan back and forth gently to make an even thickness from edge to edge; and off-set spatula can also be helpful here.
- Make sure the layer of puree is as even as possible so it will dry evenly.
- Place pans in 150º F oven (I have a commercial oven that will take all three pans at once, but one or two pans can be dried at a time while the third pan waits - you might want to cover it with plastic wrap and chill it).
- Close the oven door, but keep it slightly ajar by placing a folded kitchen towel in the door.
- Let the leather dry for 10 to 12 hours (overnight is ideal), until it is dry but still pliable.
- Pans may need to be shifted in the oven occasionally to dry evenly.
- When the leather is no longer sticky, remove from the oven, peel it off the paper in one large sheet, and turn it over, right back onto the freezer paper it came off of.
- Turn off the oven and return the "flipped" leather to the oven, with door ajar, for another 1 or 2 hours to complete the drying.
- Peel the leather off the paper and place on a large cooling rack and let air dry for 2 to 4 hours.
- Your kitchen's humidity will really determine the drying times.
- Lightly dust with cornstarch, if desired, to reduce any remaining stickiness.
- Cut into serving-sized squares and roll up in plastic.
- You can also roll the whole sheet of leather into one large piece of plastic wrap and store it that way; cut it or "rip" it when ready to eat.
- Store in a cool dry place, or in the fridge or freezer.

PEAR AND PLUM FRUIT LEATHER ROLLUPS

- Preheat the oven to 175 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper; set aside.
- Combine the pears, plums, sugar, cinnamon sticks, lemon juice and 1/3 cup water in a medium saucepan over medium-low heat. Cover and cook at a simmer, stirring occasionally, until the fruit is tender when pierced with a knife, about 15 minutes.
- Remove the cinnamon sticks and transfer the fruit and juices to a blender. Blend on high speed until completely smooth. Carefully pour the puree onto the baking sheets; use a spatula to spread into even rectangles, leaving a 2-inch border on all sides.
- Bake until dried completely, 5 to 6 hours. Let cool completely, 20 to 30 minutes.
- Transfer each dried fruit sheet to a piece of wax paper cut to a slightly larger size. Use scissors to cut the fruit and wax paper into 4-inch-wide strips and roll into cylinders.

Return puree to saucepan, stir in sugar and honey. Cook for an additional 10 minutes or until thick and syrupy. Pour the hot fruit mixture on to prepared pan and spread out into an even layer. Place in the oven to dry for 3 hours. Turn off the oven and allow to sit overnight to dry completely. Cut into 1-inch strips with a pizza cutter and peel away from paper or Silpat sheet. Roll up strips and store in an airtight container for up to 4 weeks.
