3 cups half-and-half
1 (14 ounce) can Eagle Brand Condensed Milk (NOT evaporated milk)
1 cup pureed or mashed fresh fruit (strawberries, peaches, bananas, raspberries, etc.)
1 tablespoon vanilla extract
food coloring (optional)

Steps:

  • In ice cream freezer comtainer, combine all inreadients; mix well.
  • Freeze according to manufacturer's instructions.
  • Freeze leftovers.
  • Vanilla Ice Cream: Omit fruit and food coloring.
  • Increase half-and-half to 4 cups.
  • Proceed as above.
  • Mint Chocolate Chip Ice Cream: Omit fruit and vanilla.
  • Increase half-and-half to 4 cups.
  • Add 2 teaspoons peppermint extract and 3/4 cup mini chocolate chips.
  • Proceed as above.

1 (16 ounce) can full fat coconut milk
1/2 cup minus 2 tbs maple syrup or 1/4 cup Agave
4 tablespoons alcohol-free vanilla
1/2 cup rice milk (or other milk substitute)
1 teaspoon guar gum (the original recipe didn't call for this but I think it improves the consistency)
2 ripe bananas (optional)
1/3 cup finely chopped cashews (or other additions) (optional)
cinnamon, to sprinkle on top (optional)

Steps:

  • Combine all ingredients (optionals) in a blender.
  • Blend thoroughly.
  • Add to ice cream maker, following manufacturer�s directions for churning.
  • For soft serve ice cream, eat immediately. For a harder ice cream, transfer to an airtight container and freeze for several hours to a day, depending on degree of hardness desired.

A delightful cool treat that is healthier than regular ice cream but still has a creamy rich flavor. I like to break my over ripe bananas into chucks before freezing them so that they are ready to go when making banana bread or ice cream. The prep time will depend on your food processer, mine only takes about 2 - 4 minutes, bananas should be frozen sold (like over night).

1 banana, frozen
1 tablespoon maple syrup
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1 tablespoon walnut pieces

Steps:

  • Place banana, maple syrup, cinnamon and vanilla extract in a food processor and allow the motor to run until it's smooth and creamy. Stop and break up large clumps with a spatula as needed.
  • Stir in walnut pieces.
  • **Tips: Can easily double.
  • **If you are not going to eat right away put in freezer safe container with a lid being sure to stir every hour or so to keep it from getting too icy.

1 (14 ounce) can sweetened condensed milk
1/2 cup passion fruit juice (about 10 fruits)
1/2 teaspoon pure vanilla extract
1/8 teaspoon fleur de sel
2 cups heavy cream

Steps:

  • In a bowl, combine sweetened condensed milk, passion fruit juice, vanilla and salt. Stir until well mixed and set aside.
  • In a bowl of a stand mixer with the whisk attachment, pour cold heavy cream and process on low speed until stiff peaks form, about 4 minutes. Scoop half the whipped cream into the condensed milk mixture and gently fold.
  • Add condensed milk/whipped cream mixture to the remaining whipped cream. Fold again and pour the mixture into an ice cream tub. Level it out with a spatula, cover and transfer to the freezer for 5-6 hours or until frozen.
