SIMPLE FRUIT JUICE GRANITA

This is a very simple treat that can be used with your favorite fruit juices to make many different variations. My favorite variation has banana in it. It brings a bit of creaminess to the icy treat. The small bottles of prepackaged juice in the produce section are the perfect amount of juice for this recipe--just pick a flavor! Don't let the mixture freeze completely before you scrape. The secret is to scrape as it freezes.

½ cup white sugar
½ cup water
1 (15.2 ounce) bottle berry juice blend (such as Bolthouse® Blue Goodness®)

Steps:

  • Mix sugar and water together in a glass, microwave-safe, 8x8-inch dish. Microwave on high for 2 minutes. Mix with a fork until all sugar is dissolved. Stir in juice.
  • Freeze for 1 hour. Scrape mixture with a fork. Return to the freezer in increments of 30 minutes, scraping with a fork to create small granules after each one. The granita is ready when it resembles icy sand, about 3 hours total.

It couldn't be easier to whip up this Italian ice with a crystalline texture. All you need are simple syrup and fresh fruit juice -- try watermelon, grapefruit, or apple.

2 cups fruit juice, strained
1 cup Simple Syrup with Flavoring Ideas

Steps:

  • Combine all ingredients in a deep-sided metal pan, and place in freezer, uncovered, until it is nearly set, at least 4 hours, whisking mixture every hour.
  • Remove mixture from freezer, and scrape surface with the tines of a fork until it is the texture of shaved ice. (Mixture can be frozen overnight without whisking; remove from freezer in the morning, and let sit at room temperature about 10 minutes to allow it to slightly soften before scraping with a fork.) Serve.

3 cups tropical fruit juice blend (such as pineapple-orange-passion fruit)
4 1/2 tablespoons sugar
1 1/2 tablespoons dark rum
1 tablespoon fresh lime juice
3/4 teaspoon vanilla extract

Steps:

  • Stir juice and sugar in large bowl until sugar dissolves. Add rum, lime juice and vanilla. Pour mixture into shallow baking dish. Freeze until mixture is entirely crystallized, stirring frequently and scraping crystals from around edges, about 5 hours. (Can be prepared 2 days ahead. Cover and keep frozen.)
  • Using tines of fork, scrape frozen juice mixture to form small flakes. Spoon granita into goblets and serve.

PLUM GRANITA WITH SUMMER FRUIT

3/4 cup water
1/2 cup sugar
2 whole allspice
1 cinnamon stick
1/2 vanilla bean, split lengthwise
1 1/2 pounds plums, preferably red-fleshed (about 7 large), pitted, cut into 3/4-inch pieces
1 peach, pitted, thinly sliced
1 nectarine, pitted, thinly sliced
1 plum, pitted, thinly sliced

Steps:

  • Combine water, sugar, allspice and cinnamon in heavy small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to boil, stirring until sugar dissolves. Reduce heat and simmer until liquid is reduced to 3/4 cup, about 2 minutes. Cool syrup completely.
  • Puree 1 1/2 pounds plums in processor. Press enough puree through sieve to measure 1 1/2 cups. Strain syrup into puree and blend well. Transfer mixture to 9x5x3-inch glass loaf dish. Freeze plum mixture until flaky crystals form, stirring every 30 minutes, about 4 hours. (Can be made 1 week ahead. Cover; keep frozen.)
  • Spoon granita into 4 glass goblets. Top with peach, nectarine and plum slices and serve immediately.

1/2 cup sugar
1/2 cup water
3 cups 1/2-inch chunks fresh pineapple (about 1), peeled and cored
4 cups chilled passion-fruit nectar or juice
3/4 cup chilled Champagne

Steps:

  • In a saucepan bring sugar and water to a boil, stirring until sugar is dissolved, and cool syrup.
  • In a blender or food processor purée pineapple with 1/4 cup plus
  • 2 tablespoons syrup (reserving remaining syrup for another use). Stir in nectar or juice and Champagne. Pineapple mixture may be made 1 day ahead and chilled, covered.
  • Transfer pineapple mixture to a shallow metal baking pan and freeze, stirring and crushing lumps with a fork every hour, until mixture is firm but not frozen hard, about 3 to 4 hours. Granita may be made 2 days ahead and frozen, covered. Just before serving, scrape granita with a fork to lighten texture.
  • Scoop granita into serving bowls.

This is from Arnott's, a tasty little snack or lunchbox treat. Uses Fruit medley which is a mixture of dried apple, apricot, sultanas & raisins.

Number Of Ingredients 8

1 (250 g) packet arnott's granita biscuits, crushed
1 (375 g) packet mixed fruit (fruit medley)
1 cup desiccated coconut
2 cups rice bubbles
1 (395 g) can sweetened condensed milk
75 g butter, chopped
2 tablespoons golden syrup
1 cup shredded coconut, to roll

Steps:

  • In a bowl, combine biscuits, fruit, desiccated coconut and rice bubbles.
  • In a saucepan add condensed milk, butter and golden syrup and heat over medium heat for a couple of minutes, stirring constantlly, until butter melts then cook, stirring, for a further 3 minutes. Pour onto dry ingredients and stir until combined. Let cool slightly.
  • When mixture cools, roll spoonfuls into balls and toss in shredded coconut until coated. Place onto a tray and refrigerate for 30 minutes or until firm.

(750-milliliter) bottle fruity red wine
5/8 cup sugar, divided
1 cup Cointreau, divided
4 whole cloves
1 cinnamon stick
1/2 lemon, seeded
1/2 orange, seeded
2 unpeeled peaches, pitted and quartered
2 cups red or green grapes, halved
1 pint strawberries, hulled and halved
Fresh mint leaves, for garnish

Steps:

  • Combine the wine, 1/2 cup sugar, 1/2 cup Cointreau and spices in a large saucepan. Squeeze the juice from the lemon and orange halves, then add the juice and squeezed halves to the saucepan. Warm for about 5 minutes over medium heat, stirring to dissolve the sugar. Strain into a bowl and put the mixture in the refrigerator or over an ice bath to chill. Pour the chilled mixture into a shallow baking pan and freeze for at least 1 hour or overnight, until the mixture is frozen. Using a fork or a pair of chopsticks, break up the ice crystals on the bottom and sides of the pan. (This aerates the mixture so the finished granita will melt in your mouth.) Freeze for 3 to 4 hours, until the mixture is frozen but still granular. Meanwhile, combine the peaches, grapes and strawberries in a bowl, add the remaining Cointreau and sugar, and toss. Cover and put the bowl in the freezer for a couple of hours; the fruit will absorb the sugar and liqueur while it freezes. Serve the frozen fruit with the granita, and garnish with mint.

3/4 cup powdered sugar
2 green tea bags
3 very ripe peaches (small)
3 ripe plums (medium)
1 1/2 cups strawberries
3/4 cup orange juice

Steps:

  • 1. boil water add sugar and tea bags stir until sugar dissolved and tea steeps for approx.. 5-7 minutes. remove from heat and cool 2.Peel peaches and plums blend all fruit until pureed, add orange juice and tea mixture and blend until mixed. 3. Place mixture in 9x13 pyrex dish in freezer and stir with fork to break up crystals every 1/2 hour to hour. give yourself at least 3 hours of freezing time.
