Mom's Macaroni & Cheese Casserole image

This is one of my mom's favorites although I don't remember it that well.

Number Of Ingredients 6

8 oz macaroni of choice
1 lb american or cheddar cheese, grated (mom used velveeta)
1/2 green bell pepper, diced
1 small jar diced pimento, strained
1 can(s) cream of mushroom soup
1 small onion, diced

Steps:

  • 1. Preheat oven to 350.
  • 2. Cook macaroni as directed, less 2-3 minutes. When about half done, add pepper and onion. Cook a few more minutes but do not overcook macaroni.
  • 3. Remove from stove. Strain. Add remaining ingredients. Stir well.
  • 4. Put in a greased casserole dish. Bake for 30 minutes, or until cheese is melted and bubbly.
