This is a light and fluffy dessert salad based on pistachio pudding; the pudding is made lighter with the addition of whipped topping. Add an extra can of mandarin oranges, if you like.

I got this at my WW meeting. The nice thing about this is that you can use any combination of pudding and jello and (most) fruits that you want. I've also used frozen no sugar added raspberries, and strawberries and left out the fruit cocktail - this recipe is only limited by your imagination!! Oh - and the best part is it's only 1 point for a whole cup!!

- PLACE pineapple with juice in microwave-safe medium bowl. Microwave on HIGH for 1 minute. Add both flavors gelatin powder and stir for 1 minute or until dissolved. Chill 15 minutes.
- STIR in preserves. Fold in 2 cups whipped topping. Chill for 1 hour or until firm.
- SERVE in small custard cups topped with a dollop of whipped topping.

- 1. In large serving bowl, stir marshmallows, undrained pineapple, and fruit cocktail until mixed well. Cover and refrigerate overnight! (This allows the pineapple juice to soak the marshmallows so they will expand)
- 2. Day 2: Drain any remaing liquid from the bowl using a collander. There shouldn't be much. Return back to bowl and fold in both cartons of coolwhip.
