CHRISTMAS FRUIT DROP COOKIES

2 cups packed brown sugar
1 cup shortening
1/2 cup buttermilk
2 eggs
3 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups candied cherries, cut in half
2 cups chopped dates
1 1/2 cups chopped pecans
Pecan halves, if desired

Steps:

  • In large bowl, beat brown sugar, shortening, buttermilk and eggs with electric mixer on medium speed until blended, or mix with spoon. Gradually stir in flour, baking soda and salt. Stir in cherries, dates and chopped pecans. Cover and refrigerate 1 hour.
  • Heat oven to 375°F. Grease cookie sheet. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Place a pecan half on each cookie.
  • Bake 8 to 10 minutes or until almost no indentation remains when touched lightly. Immediately remove from cookie sheet to wire rack.

1 cup shortening
1 cup packed brown sugar
½ cup white sugar
3 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 (15.25 ounce) can fruit cocktail, drained
1 cup raisins
1 ½ cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the eggs one at a time, then stir in the vanilla. Sift together the flour, baking soda, baking powder, cinnamon and cloves, stir into the creamed mixture. Carefully fold in the raisins, fruit cocktail and nuts, try not to crush the fruit.
  • Drop by rounded spoonfuls onto the prepared cookie sheets. Bake for 10 to12 minutes in the preheated oven.

This was my Aunt Margaret K. Sims' specialty! She made them by the hundreds for Christmas gifts. A tin of her cookies was always a favorite holiday treat. Aunt M always added flour to everything she baked, even cake mix. So add an extra third to half cup of flour to this mixture, and your cookies will turn out nice and mounded. As is, they spread out quite a bit.

1 cup shortening
2 cups brown sugar
2 eggs
1/2 cup buttermilk or 1/2 cup water
1 1/2 cups coarsely chopped pecans
2 cups candied cherries, cut in half
2 cups cut-up dates
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Cream shortening, sugar, and eggs.
  • Stir in buttermilk or water.
  • Blend dry ingredients, stir into egg mixture.
  • Add fruit and nuts, stir into batter.
  • Chill batter at least 1 hour.
  • Preheat oven to 400 degrees F.
  • Drop dough by teaspoonfuls, 2 inches apart, onto parchment lined baking sheet. Bake 8 to 10 minutes, until almost no print remains when touched.
  • Remove to rack to cool. Cool completely before storing in tins or sealed plastic bins, with wax paper between layers to prevent sticking.

1/2 c sour milk or water
3 1/2 c flour
1 tsp salt
1 tsp soda
1 1/2 c pecans or walnuts
2 c candied cherries

  • 1. Mix shortening, sugar and eggs well; stir in sour milk.
  • 2. Blend next 3 ingredients; add to sugar mixture.

I am probably one of the few people who enjoy fruitcake. This recipe is very similar to that.

1/2 c butter
1 c sugar
2 eggs
1/4 c sour cream
1 1/4 c all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp cloves
1 c quick cooking oats
1 c chopped pecans
1 c finely snipped dates*
1/2 c raisins
1/2 c chopped candied cherries*
candied cherry halves (optional)

Steps:

  • 1. Cream butter, sugar and eggs; blend in sour cream.
  • 2. Stir together flour, baking soda, cinnamon, salt and cloves; add to creamed mixture. Stir in oats, nuts, dates, raisins and cherries.
  • 3. Drop by teaspoonsful 2" apart on lightly greased cookie sheet. Top each cookie with candied cherry half, if desired.
  • 4. Bake at 350°F for 10-12 minutes. Remove from cookie sheet and cool on rack. Makes 5 dozen.
  • 5. NOTE: When I make these, I reduce the amount of dates to 1/2 cup and candied cherries to 1/4 cup.
