Silken tofu cubes blended with various fruits to create a delicious sweet summer drink. You can add more fresh or frozen fruit, if desired.

Steps:
- Layer tofu, strawberries, and soy milk in a blender; blend. Add ice cubes, 1 cup at a time, while blender is running; blend until smooth.

LIME-TEQUILA SHOOTERS
This is the most authentic way to do tequila shots on the Baja peninsula! The amount of tequila is, of course, up to you.

Steps:
- With a citrus reamer or your thumb, push a little cavity into the center of the lime to make room for the tequila (lime juice will squirt out). Pour tequila into the cavity then suck down tequila and lime juice all in one gulp.
LOBSTER SCALLION SHOOTERS
Steps:
- In a medium saute pan, saute in sesame oil the garlic, shallots, lemongrass, and ginger until slightly browned. Remove from heat and transfer to mixing bowl.
- Fold in the lobster meat, soy sauce, sambal, scallions, mint, and basil. Lay out dumpling wrappers evenly on a flat surface and brush a thin layer of egg on each wrapper. Place a small amount of the mixture in the center of the wrapper. Fold the edges of the wrappers up around the mixture and squeeze the edges to seal the dumpling.
- Deep fry dumplings in 350 degree F peanut oil until golden brown. Serve with Red Curry-Coconut Cream.
- In a small saucepan, add sesame oil and lightly saute the garlic, shallots, ginger, and lemongrass until translucent; do not brown. Add in kaffir lime leaves, cover with rice vinegar and mirin, and continue cooking, until liquid is reduced by half.
- Stir in red curry paste and coconut milk and bring to a boil. Thicken to sauce consistency with cornstarch mixture. Steep in cilantro and add lime juice. Strain through a fine seive.
STRIPED JIGGLY FRUIT SHOOTERS
Steps:
- Sprinkle 1 tablespoon of the gelatin over the strawberry-banana juice and set aside for 5 minutes. Warm in the microwave for 30 seconds or on the stove to dissolve the gelatin and strain the mixture into a small pitcher. Divide among your serving glasses and chill until set, about 30 minutes. Repeat the process with the purple grape juice, pouring it on top of the strawberry-banana jelly, and chill to set. Repeat the process with the orange juice, chill to set, and serve cold.
