A delicious loaf of banana bread with no added sugar. This fruit-sweetened banana bread is great for breakfast or a snack, served with butter or your favorite nut butter. Plus, there's a gluten-free and vegan option!

3 large overripe bananas (1 3/4 cup), (mashed)
1/4 cup unsweetened almond milk ((or other milk))
1/4 cup olive oil or melted coconut oil
2 teaspoons vanilla extract
1 egg ((see notes for vegan option))
2 cups spelt or all-purpose whole wheat or white flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2-1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F. Lightly grease a loaf pan with oil or butter/margarine or line with parchment paper.
  • In a large bowl, mash your bananas. Whisk in your milk, oil, vanilla and egg.
  • Add your dry ingredients to the wet mixture and mix all together. Don't overmix. The batter will be thick.
  • Transfer the mixture to your prepared loaf pan. Bake for 45 minutes or until cooked through. The bread should be firm on the outside, yet moist on the inside.
  • Let it cool 5-10 minutes before slicing.

Cooking spray
1 cup raisins
2 large dates, pitted
1 3/4 cups whole-wheat pastry flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg plus 1 large egg yolk
1 teaspoon pure vanilla extract
1/2 teaspoon orange zest
1/2 cup milk
2 small ripe bananas, cut into small chunks

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
  • Put the raisins and dates in a medium bowl, cover with very hot water and let soak until the fruit is very soft, about 25 minutes. Drain, then puree until smooth in a food processor, scraping the bowl frequently.
  • Whisk together the flour, baking powder, cinnamon and salt in a medium bowl.
  • Beat the butter in a large bowl with an electric mixer on medium-high speed until smooth. Add the raisin-date mixture, and beat until incorporated and smooth. Add the egg and egg yolk, vanilla and zest, and beat until incorporated. Lower the mixer speed to medium-low, and add half the flour mixture, then the milk, then the remaining flour mixture, stopping to scrape down the side of the bowl as needed (it's OK if there are some lumps). Fold in the bananas.
  • Pour the batter into the prepared pan, and smooth the top with a spatula or the back of a spoon. Bake until the bread is golden brown and crisp and a toothpick inserted in the center comes out clean, about 1 hour. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

2 c ripe bananas mashed (3-5)
1 stick softened butter
2 large eggs
1/2 c buttermilk
1 c white sugar
1/2 c dark brown sugar packed
2 Tbsp molasses
1 Tbsp pure vanilla extract
2 1/2 c flour
1 tsp salt
1 tsp baking soda
1/2 c chopped pecans toasted

Steps:

  • 1. Preheat oven to 325, ensuring rack is in the middle of the oven. Prepare a large loaf pan by greasing with butter or non stick spray.
  • 2. Measure flour, salt and soda into a medium bowl. Whisk to combine. Set aside.
  • 3. Using a whisk, cream the butter in a large bowl. Add in the sugars, whisking until incorporated. Whisking, add in eggs, vanilla, molasses and buttermilk. Stir in mashed banana.
  • 4. Stir dry ingredients into the wet ingredients. Stir just until thoroughly incorporated. Stir in pecans if using.
  • 5. Pour into greased loaf pan. Bake in center of oven for 90 minutes. Test doneness with a toothpick inserted into center of loaf. If it remains dry, with some crumbs it is done. Let cool 20 minutes on a rack. Run a knife along sides and turn out onto cooling rack to cool to room temperature.

1 1/2 cups wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon herbes de provence
1 teaspoon ginger
2 beaten eggs
3 small bananas, mashed
1/4 cup butter
1/4 cup molasses
1/2 cup unsweetened applesauce
1/2 cup yogurt
1/2 cup water
1/2 cup rolled oats
2 apples, pulp from two juiced apples
1/2 cup walnuts (chopped)
1/2 cup pecans (chopped)
1/4 cup raw pumpkin seeds

Steps:

  • Preheat oven to 375.
  • Butter your (pans). This will make a huge loaf of bread or a small loaf and six muffins.
  • Add oats to yogurt and water. You could substitute 1 cup buttermilk here.
  • Mix the flour, salt, baking soda, ginger, Herbs.
  • Beat the eggs.
  • In another bowl mash the bananas and add to the eggs.
  • Cream the butter with the molasses. Add mixture to eggs/bananas.
  • Dump applesauce, apple pulp, yogurt/oats and nuts to the wet mixture.
  • Mix the wet with the dry as thoroughly as possible.
  • Pour batter into pan(s).
  • Sprinkle pumpkin seeds and a little more Herbs de provence on top.
  • Bake at 375 for 45 minutes to an hour until inserted toothpick comes out clean.

3 bananas, mashed
¼ cup coconut oil, melted
¼ cup honey

Steps:

1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1/2 cup molasses
1/3 cup sugar
1/4 cup shortening, melted
1 tablespoon lemon juice
1 1/2 tablespoons lemon rind, grated
1/3 cup figs or 1/3 cup dates, chopped
1/4 cup citron, sliced
1/2 cup nuts, chopped
2/3 cup milk

Steps:

  • To the sifted dry ingredients add the egg, molasses, sugar, shortening, lemon juice, rind, fruit and nuts. Blend well. Add milk to the flour mixture and stir only until ingredients are blended.
